KENTUCKY DERBY EGGS
Steps:
- 1. Preheat oven to 350 degrees.
- 2. Cook onion in butter until tender. Blend in flour and add milk. Cook until thick. Add cheese and stir until melted.
- 3. In a 10 x 6 inch baking dish, layer half the eggs, cheese sauce, potato chips and bacon. Repeat layers. Bake 30 minutes.

- Place eggs in a single layer in a saucepan and fill with water to cover by 2”. Bring eggs to a boil, cover, reduce to simmer and cook for 1 minute more. Remove pot from heat and let sit for 13 minutes. Remove eggs to a bowl and rinse under cold running water for 1 minute.
- Crack egg shells and carefully peel under cold running water. Slice the eggs in half and remove yolks, setting aside.
- In separate bowl, mash yolks with fork. Add mayonnaise, vinegar, mustard, salt and pepper. Mix well.
- To serve: lay egg whites out on a plate and scoop or pipe the yolk mixture into the hole in the egg whites. Sprinkle with paprika and serve.
