2 packages (16 ounces each) miniature smoked sausage links
1 cup packed brown sugar
1/2 cup ketchup
1/4 cup prepared horseradish

Steps:

  • Place sausages in a 3-qt. slow cooker. Combine the brown sugar, ketchup and horseradish; pour over sausages. Cover and cook on low for 4 hours.

This smoked egg recipe is incredibly easy. I learned it from a neighbor and it is a fun way to use up the extra space in your smoker grill. The eggs turn a lovely brown color and have a consistency similar to boiled eggs. The insides have a tinted brown color, too. Reduce cook time if you prefer a softer boiled egg.

6 fresh raw eggs in the shell
salt and ground black pepper to taste

Steps:

  • Preheat a smoker grill to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
  • Place whole eggs directly on the grate of the preheated smoker. Cook, without turning, for 2 hours, maintaining an even temperature.
  • Transfer eggs to a plate and allow to cool completely before peeling. Season with salt and pepper.

2 (14 ounce) packages little smoked sausages
1 ½ cups distilled white vinegar
½ cup water
1 teaspoon pickling salt
1 teaspoon pickling spice, or more to taste
1 teaspoon whole mustard seeds
1 teaspoon celery seeds
1 teaspoon dill seeds
1 small onion, thickly sliced
1 clove garlic, minced, or to taste
20 whole black peppercorns
2 tablespoons pickled banana pepper rings

Steps:

  • Place the sausages into a saucepan, cover with water, and bring to a boil. Reduce heat to medium-low and simmer for 20 minutes, poking sausages with a sharp fork to release fat. Drain and rinse the sausages.
  • Place the sausages into a 1-quart glass canning jar.
  • Pour white vinegar and water into a saucepan, and stir in the pickling salt, pickling spice, mustard seeds, celery seeds, dill seeds, onion slices, garlic, black peppercorns, and banana pepper rings.
  • Bring to a boil over medium heat and cook for 5 minutes, stirring often.
  • Pour the vinegar mixture over the sausages in the jar; cap the jar, and refrigerate at least 3 days before serving.

Smoky Sweet Potatoes With Eggs and Almonds image

Slow-roasting sweet potatoes in coconut oil and spices gives them a rich flavor and delicately crisp texture on their exterior while they turn velvety within. Don't be tempted to take them out of the oven early. As Steven D., a reader, wrote in the notes of the recipe upon which this one is based: "The potatoes are soft after a half hour or so, but then the crusts harden in the second half hour, giving them the delicious texture that makes the dish unique." Adding fried eggs, a smoky yogurt sauce and crunchy almonds turns a sweet potato side dish into a satisfying, meatless meal. And if you don't have coconut oil on hand, you can use olive or another cooking oil, though the potatoes won't have the same texture.

3 tablespoons coconut oil
2 pounds sweet potatoes, peeled or unpeeled, and cut into 1/2-inch chunks
3/4 teaspoon fine sea or table salt, plus more as needed
3/4 teaspoon garam masala, Baharat, curry powder or another spice mix
1/2 teaspoon smoked paprika, plus more as needed
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper, plus more as needed
3 to 5 thyme sprigs
1/2 cup plain Greek yogurt
1 small garlic clove, finely grated, passed through a press or minced
Eggs, for frying, as many as you like
1/2 cup chopped Marcona or salted, roasted almonds
Soft herbs, such as parsley, mint or cilantro, for serving

Steps:

  • Heat oven to 350 degrees. Melt 2 tablespoons coconut oil in a small saucepan over low heat or in the microwave. In a large bowl, toss together sweet potatoes, melted coconut oil, salt, spice mix, smoked paprika, cumin, black pepper and thyme.
  • Spread the potatoes in an even layer on a large rimmed baking sheet.
  • Roast, stirring and flipping the potatoes occasionally, until soft and caramelized, about 1 hour.
  • As the potatoes roast, place yogurt in a small bowl. Stir in garlic, a large pinch or two of smoked paprika, and salt and black pepper to taste.
  • In a large skillet, add remaining 1 tablespoon of coconut oil over medium-high heat and let it heat up for 20 to 30 seconds. Crack eggs into skillet and season with salt. Cook until the whites have set with crispy edges and the yolks are still runny, about 2 to 3 minutes (or cook the eggs for a few minutes longer for a medium or firm yolk, if you prefer).
  • To serve, spoon sweet potatoes onto individual plates and top with yogurt sauce and almonds. Place eggs on top, and sprinkle with paprika and herbs. Serve immediately.

Baked Eggs With Crème Fraîche and Smoked Salmon image

Runny-yolked eggs baked in individual ramekins or custard cups make for a very elegant brunch or light supper. These are bathed in a shallot-steeped crème fraîche and topped with smoked salmon for an especially rich result. Serve them with toast, croissants or crusty bread - something to mop up the last bits of yolk and cream at the bottom of the ramekins. You won't want to leave behind a single drop.

2 tablespoons unsalted butter, plus more for greasing the ramekins
2/3 cup thinly sliced shallot (2 to 3 shallots)
1/2 teaspoon fine sea salt
3/4 cup heavy cream
1/3 cup crème fraîche
1 tablespoon chopped fresh dill, plus more for serving
1/2 teaspoon finely grated lemon zest
12 large eggs, at room temperature
Freshly ground black pepper
4 ounces smoked salmon

Steps:

  • Heat oven to 400 degrees, and brush six 8-ounce ramekins or ovenproof custard cups with butter. Place the ramekins or cups on a rimmed baking sheet.
  • Melt 2 tablespoons butter in a medium skillet over medium heat. Stir in shallots and 1/4 teaspoon salt, and cook until very soft, 7 to 10 minutes, reducing heat if necessary to prevent browning.
  • Stir in 6 tablespoons cream, the crème fraîche, dill, lemon zest and remaining 1/4 teaspoon. Remove from heat. Divide mixture among the ramekins.
  • Crack 2 eggs into each ramekin and float 1 tablespoon of cream on top of each, then sprinkle tops with salt and pepper. Bake until egg whites are just set, and yolk is still runny, 12 to 16 minutes. (The eggs will look slightly puffed at the sides of the ramekins, but still jiggly in the center and that's O.K. The eggs will continue to cook once out of the oven.) Remove from oven and transfer ramekins onto individual plates for serving.
  • To serve, top each ramekin with some of the smoked salmon and a little more dill. Serve warm.
