- In a large skillet, cook the sausage, onion and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the cream cheese, mushrooms, Parmesan cheese, water and oregano. Cook and stir until cheese is melted. , Cut bread in half horizontally; hollow out top and bottom, leaving a 3/4-in. shell (save removed bread for another use). , Place bread bottom on a baking sheet. Sprinkle with half of the mozzarella cheese; top with sausage mixture and remaining cheese. Replace bread top. Bake at 375° for 15 minutes or until cheese is melted.

SPICY EGG SANDWICH WITH SAUSAGE AND PICKLED PEPPERS
A sausage patty topped with feta, cilantro, sweet, piquant pickled peppers, and a sunny-side-up egg make for a hearty sandwich that's perfect for brunch, lunch, or dinner. You can find Peppadew peppers at olive bars at most large supermarkets, or check the condiment aisle, where they're sold jarred.

Steps:
- Using damp hands, form sausage into two 1/4"-thick patties.
- Heat a large cast-iron skillet over medium-high until hot. Cook patties until golden brown on bottom side, about 2 minutes. Turn and continue to cook until other side is browned and cooked through, 2-3 minutes more. Transfer to a plate. Wipe out skillet.
- Heat butter over medium in same skillet until melted. Cook eggs, undisturbed, until whites are set, edges are golden, and yolks are still runny, 4-5 minutes. Season with salt and red pepper flakes (if using). Remove pan from heat.
- Spread harissa on 2 muffin halves. Top with feta, patties, eggs, peppers, and cilantro. Spread mayonnaise on remaining muffin halves, then close up sandwiches.
FRIED PICKLED JALAPENOS
Steps:
- Serving suggestions: sour cream and shredded iceberg or Romaine lettuce
- Combine the cheeses in a small bowl. Using a paring knife, make an incision the length of each jalapeno (don't cut the peppers in half). Remove the seeds then carefully fill each pepper with cheese. Dip the stuffed peppers in buttermilk then roll them in flour. (If you prefer a thicker crust, repeat the process.)
- Fill a large frying pan with about 3 inches of oil and heat over medium-high until a thermometer registers a temperature of 350 degrees F. (The oil temperature can also be tested by dripping a little water into the oil. If the oil sizzles immediately, the oil is hot enough.)
- Working in batches, fry the peppers, turning them once or twice, until they are crisp and golden. Drain the peppers on paper towels. Let them cool for about 10 minutes then serve them on a bed of shredded lettuce topped with sour cream.
JALAPENO PICKLED EGGS
This recipe comes from cooks.com. It was submitted by Jo. My husband loves the jalapeno picked eggs we can buy at a local store. They are expensive though so I wanted to see if I could make some up. I couldn't find a recipe like we were looking for here but I did find this one online. He said they are really good. I cut the original recipe in half and added more garlic. We didn't add the hot sauce and he said they didn't need it, they were plenty hot enough without so it is up to how hot you like stuff. Time does not including egg cooking or the marinating for 1 week.

- Put peeled eggs in a 2 1/2 quart jar.
- We used a clean leftover dill pickle jar.
- If you use more eggs you will need a bigger jar.
- Boil all ingredients (except eggs, of course) for 15 minutes.
- Pour hot mixture over eggs until eggs are covered.
- Add hot water to jar to fill if needed.
- Marinate in refrigerator for 1 week before using.
- The original recipe had a note that said for a stronger flavor, poke hole in the eggs with a toothpick before marinating.
- We didn't do that so I can't attest to it's results.
ITALIAN SAUSAGE HOAGIES
Soooooo yummy. I'm posting this for ZWT 2006 (Italian region) This is a very hearty sandwich but so tasty that if i'm hungry, even having the small appetite that I do, I can down one and a half of these buggers. Guys and kids love these. This is also easy to double if you have more people to feed.

- To prepare the onion-pepper mixture, slice the peppers into long strips about 1/2 inch thick and thinly slice the onions.
- Sauté both together in a heavy pan in a few tablespoons of olive oil until they are soft and onions are beginning to turn golden brown.
- Make a garlic butter by mashing together about two cloves of roasted garlic (if you don't want to roast it yourself, jars of roasted garlic can be found at most grocery stores these days) with 4 tablespoons of olive oil.
- Grill or pan fry the sausages until cooked through (it helps to preboil them for about 5 minutes; it cuts down on the grease and grilling/frying time); slice the buns and grill lightly once the sausages are ready; alternatively, the buns can be lightly browned in either a toaster or a hot lightly oiled pan.
- Brush the buns with the garlic butter, carefully put 1/4 cup mozzarella on one side of each bun and place in each bun a sausage and a good amount of the pepper-onion mixture and serve hot.
