1 slice of your favorite kind of bread
1 tablespoon butter
1 egg
Salt and freshly ground black pepper

Steps:

  • With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
  • Heat a skillet over medium-low heat and melt in the butter. When the butter is all spread out, place the slice of bread in the skillet and crack the egg straight into the center of the hole.
  • Cook until the egg sets a bit on the bottom, 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side.
  • Move the toast around in the skillet, soaking up all of the glorious butter. Let it cook until the yolk feels soft. Here's the key: golden brown toast, white (not browned/burned) whites, soft unbroken yolk. Perfect.

Steps:

  • With a spoon, press down on the center of the bread to form a pocket.
  • Line the edges of the bread with butter, and crack an egg into the pocket.
  • Line the edges of the bread with shredded cheese.
  • Sprinkle on salt and pepper, and bake at 400°F (204°C) for 10-15 min. 10 min will have a runny yolk whereas 15 min will have a firmer yolk.
  • Enjoy!

1 slice bread
1 egg

Steps:

  • Melt the bacon grease in a non-stick pan over low heat.
  • Cut a 1 1/2 to 2-inch hole from the center of the bread slice; lay in the hot skillet. When the side facing down is lightly toasted, about 2 minutes, flip and crack the egg into the hole; season with salt and pepper. Continue to cook until the egg is cooked and mostly firm. Flip again and cook 1 minute more to assure doneness on both sides. Serve immediately.

2 (1/2-inch) slices sourdough or French bread
1 tablespoon unsalted butter
1 large egg
2 slices Canadian bacon
1/3 cup shredded Swiss cheese
1 teaspoon honey mustard

Steps:

  • Cut a 2 1/2-inch hole from the center of one slice of the bread. Melt butter in a medium nonstick skillet over medium-low heat. When it foams, place the cut slice of bread and the round in skillet and toast lightly, about 1 minute.
  • Crack the egg into the hole and season with salt and pepper, and cook until golden brown, about 2 minutes.
  • Flip the egg bread, sprinkle half of the cheese on bread and top with ham. Spread mustard on second piece of bread and close sandwich. Cook until well browned and bottom part of cheese begins to melt, about 1 minute more. Flip whole sandwich and cook until all cheese is melted, about 2 to 3 minutes more. Serve.

Because more butter is added to the pan at the same time as the eggs, it melts slowly into the eggs while you stir them, leaving you with a creamy mix that ends up even creamier when cheese is melted in at the very end.

1 slice bread
1/4 cup shredded cheese (Cheddar, Monterey Jack or a blend)

Steps:

  • Crack the eggs into a bowl and sprinkle generously with salt and pepper. Beat with a fork until evenly yellow. Leave the bowl next to the stove while you make the toast.
  • In a small nonstick skillet, melt a thin slice of the butter over medium-low heat. Swipe the bread in the melted butter to soak it all up. Let sit until golden brown, 2 to 3 minutes. Add another thin slice of butter to the pan then flip the bread, swiping it in the newly melted butter until it's all soaked up. Turn the heat to the lowest setting and let the bread sit until lightly browned, 1 to 2 minutes. Transfer to a plate.
  • Add the remaining butter and the eggs and cook, stirring gently and constantly with a wooden spoon, until the butter melts and the eggs are half wet and half solid, 15 to 45 seconds. Turn off the heat, add the cheese and continue stirring until the mixture is creamy but no longer wet, about 30 to 45 seconds. Scrape onto the toast right away and enjoy.

Asparagus, Fontina, and Dijon Mustard: Divide 4 teaspoons Dijon mustard, 8 stalks blanched asparagus, cut into 1-inch lengths, and 1 1/2 cups grated fontina cheese among toasts.
Ham and Gruyere: Divide 4 ounces thinly sliced ham and 1 1/2 cups grated Gruyere cheese among toasts.
Tomato, Cheddar, and Canadian Bacon: Divide 2 chopped plum tomatoes, 4 ounces diced Canadian bacon, and 1 1/2 cups grated cheddar cheese among toasts.

Steps:

  • Preheat oven to 425 degrees. Spread 1/2 tablespoon softened butter over one side of each of 4 slices (1 inch thick) hearty white bread. Place each piece of bread, buttered side down, on a baking sheet.
  • Using your fingers, create a well in the center of the bread, being careful not to tear it.
  • Break 1 large egg into each well, keeping the yolk intact; cover bread with desired topping, and sprinkle with salt and pepper.
  • Bake until the cheese has melted and the egg is set but slightly runny when pierced with the tip of a paring knife, 15 to 20 minutes. Check the toasts frequently because eggs set quickly.

Steps:

2 plum tomatoes, chopped
4 ounces Canadian bacon, diced

Steps:

  • Preheat oven to 425 degrees. Using a 3-inch biscuit cutter or your fingers, make a hole in the center of 4 slices of bread. Butter one side of the remaining 4 slices.
  • Place the 4 buttered slices, buttered side down, on a baking sheet. Top with the slices with holes in the center. Break 1 egg into each hole, keeping the yolk intact. Cover with tomatoes, bacon, and cheese. Season with salt and pepper.
  • Bake until cheese has melted, and the egg is set but slightly runny, about 15 minutes. Be sure to check frequently, as the eggs set quickly.
