Easy Fried Rice image

This easy fried rice recipe really captures the flavor of fried rice served in restaurants. Use leftover chicken for a satisfying meal that's easy to put together. -Lori Schweer, Mapleton, Minnesota

2 large eggs, beaten
1/4 teaspoon salt
3 tablespoons vegetable oil, divided
4 cups cooked rice
1-1/2 cups frozen stir-fry vegetable blend
1/2 cup sliced green onions
1 garlic clove, minced
1 cup diced cooked chicken
3 tablespoons soy sauce
1 tablespoon chicken broth
1/2 teaspoon pepper
1/4 teaspoon ground ginger
4 bacon strips, cooked and crumbled

Steps:

  • Combine eggs and salt. In a large skillet or wok over medium heat, scramble eggs in 1 teaspoon oil, breaking into small pieces. Remove from skillet and set aside. , Add remaining 2 tablespoons plus 2 teaspoons oil to skillet. Stir-fry rice over medium-high heat for 5 minutes. Add vegetables, onions and garlic; stir-fry for 5 minutes. Add chicken; stir-fry until heated through, 3-5 minutes. Combine soy sauce, broth, pepper and ginger. Add to rice; stir to coat. Add bacon and eggs; heat through.

This is the best fried rice according to my husband. The recipe is from a friend who was a caterer/restaurateur; all around a great cook. I added a cooked chicken breast to make is a perfect whole meal,

Number Of Ingredients 12

2 cups cooked long-grain rice (cold)
4 slices bacon, cut crosswise into 1-inch pieces
1 tablespoon oil
1 onion, finely chopped
4 green onions, thinly sliced
2 stalks celery, finely chopped
4 mushrooms, finely chopped
1/4 cup green pepper, finely chopped
2 garlic cloves, crushed
1 egg, lightly beaten
2 tablespoons soya sauce
salt & freshly ground black pepper

Steps:

  • In a large, deep skillet, cook the bacon over medium heat, stirring occasionally, until crisp, about 15 minutes. Drain on a paper towel-lined plate and discard some of the bacon fat; keep 1 tablespoon of bacon drippings.
  • Return the skillet to the stove and turn the heat to medium high. Add 1 tablespoon of oil to the bacon fat.
  • Add the onion, the celery, 1/2 of the green onions and cook for 4 minutes. Add the garlic, green pepper and mushrooms.
  • Cook another 3 minutes.
  • Add the cooked rice, soya sauce and stir to coat.
  • Stir together.
  • Push rice mixture on edge of pan and add beaten egg in the center. Let the egg set for 1 to 2 minutes, then scramble them with a fork and cook for 2 minutes more. Stir the eggs into the rice, breaking them up into small pieces. Turn off the heat.
  • Add the bacon; season to taste with salt and pepper.
  • Transfer the fried rice to a serving platter and sprinkle with remaining chopped green onions.
  • Tip: This serves 4 if it is served with another dish or 2 if it is the main dish.
  • A great way to use leftover rice.
  • It can be made ahead of time and frozen.
