BUTTERY CARAMEL APPLE JAM



Buttery Caramel Apple Jam image

This recipe was inspired by others I had found online. They were very good but seemed to taste more like apple pie, so I changed it to be more like caramel. Hope you enjoy it.

8 half-pint canning jars with lids and rings
8 cups Granny Smith apples - peeled, cored, and chopped
⅓ cup water
1 tablespoon butter
3 cups brown sugar
2 cups white sugar
1 ½ (1.75 ounce) packages powdered fruit pectin
1 tablespoon clear butter flavoring (such as Wilton®)

Steps:

  • Sterilize the jars and lids in boiling water for at least 5 minutes.
  • Bring apples, water, and butter to a boil in a large pot. Reduce heat to low, cover, and simmer until apples are softened, about 8 minutes. Mix in brown sugar, white sugar, pectin powder, and butter flavoring. Bring to a full rolling boil, stirring often. Cook at a boil for 2 minutes without stirring.
  • Pack the apple jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand 8 hours to overnight before use. Store in a cool, dark area; refrigerate opened jars.

This is apple jam - something you can't seem to buy - spiced to resemble the taste of most apple pies. Usually there is enough pectin in the apples to make it jell without adding anything. You can use 1 package of pectin (such as SureJel®), if desired.

6 Granny Smith apples - peeled, cored, and finely chopped
4 cups white sugar
½ cup light brown sugar
1 large lemon, zested and juiced
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
⅛ teaspoon allspice
5 half-pint canning jars with lids and rings

Steps:

  • Combine apples, white sugar, light brown sugar, lemon juice, lemon zest, cinnamon, nutmeg, cloves, and allspice in a pot; bring to a rolling boil. Cook at a boil, stirring occasionally, until fruit is soft and jam gelling point (220 degrees F (104 degrees C) is reached, at least 45 minutes. Put a small amount of jam on a cold plate; freeze for several minutes. If the mixture is gelled, it is ready to process in a canner.

3 pounds Fuji apples
2 cups white sugar
2 tablespoons unsweetened pectin
1 teaspoon ground ginger
½ teaspoon salt
1 tablespoon lemon juice

Steps:

  • Remove stems from apples and discard; wash. Peel and remove cores; reserve. Dice apples.
  • Place apples into a large microwave-safe dish and microwave for 20 minutes, stirring after 10 minutes.
  • At the same time, place peelings and cores into a pot with enough water to barely cover. Boil for 15 to 20 minutes.
  • Remove diced apples from the microwave and mash with a potato masher. Add sugar, pectin, ginger, and salt. Stir.
  • Pour cores, peelings, and liquid apple mixture into a Vitamix® and blend on high speed (8 or 9) until everything is well broken down to a thin applesauce consistency, 2 to 3 minutes.
  • Transfer the apple mixture to a deep skillet and bring to a rolling boil. Reduce heat and let simmer until thickened, 15 to 20 minutes. Remove from heat, mix in lemon juice, and fill jars; clean the rims and seal.
