SIMPLE TURKEY CHILI
This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

Steps:
- Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
- Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

- Heat oil in large skillet. Add pepper, onion, celery, carrot and garlic and saute over medium high heat until soft but not brown.
- Add remaining ingredients.
- Cover and simmer 15 minutes, stirring occasionally.
- Serve hot in soup bowls. Garnish with chips and sour cream. Enjoy!

- Heat vegetable oil in a large pot over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the onion; cook and stir until the onion is tender, about 5 minutes.
- Add the chicken broth, tomatoes, black beans, kidney beans, refried beans, garlic, chili powder, paprika, oregano, cumin, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes. Sprinkle each bowl with a teaspoon of Cheddar cheese, if desired.

EASY TURKEY NO-BEAN CHILI
This is a great recipe I came up with using just stuff we had on hand. You can eat it straight out of a bowl with cheese, onions and sour cream. Or you can top turkey hot dogs to make filling chili dogs. My husband loved it left over on hamburger buns - a la' sloppy joes! Keeps well, and freezes too.

- Heat the oil in a large pot or dutch oven (3 qts or larger) over medium/high heat.
- Add the onions and garlic and cook until onion begin to become translucent.
- Add the ground turkey and throroughly brown.

CHUNKY TURKEY VEGETABLE CHILI (CROCK POT)
This is a combination (and adaptation) of 2 kinds of chilis from Easy Home Cooking's All New Slow Cooker cookbook. It's not a very liquidy chili and it sticks to your ribs. The ground turkey helps make it a little more healthy too. This recipe is very forgiving, so you may adjust the heating time to high (for a shorter period) or a combination of high and low.
