8 ounces cream cheese, softened
1/2 cup sour cream
2 1/2 ounces dried beef
4 ounces green chilies, chopped
1 1/2 tablespoons instant dried onion
2 teaspoons chives, chopped
1/2 cup pecans, chopped

Steps:

  • Rinse and pat dry dried beef. Chop coarsely and set aside.
  • In large mixing bowl, blend together well the cream cheese and sour cream.
  • Stir in the beef, green chiles (and juice), onion and chives.
  • Pour into 1 quart greased baking dish.
  • Sprinkle with pecans.
  • Bake in preheated 350ºF oven approximately 20 minutes or until puffed and bubbly around the edges.

1 -8 ounce cream cheese, softened
1/2 cup sour cream
1 (2 1/2 ounce) jar dried beef
1 (4 ounce) can chopped green chilies
1 1/2 tablespoons dried instant minced onion
2 teaspoons chopped chives
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°F.
  • Rinse dried beef and pat dry. Chop coarsely.
  • In large mixing bowl, combine the cream cheese and sour cream until smooth and creamy.
  • Gently stir in the chopped beef, chilies (do no drain), onion and chives.
  • Place in 1 quart greased baking dish. Top with chopped pecans.
  • Bake for 20 minutes or until puffed and bubbling around edges.
  • Serve with crackers of your choice, we like Triscuit, Wheat Thins, Tortilla chips.

1 (8 ounce) package cream cheese, softened
1 (15 ounce) can chili without beans
1 (10 ounce) can diced tomatoes with green chile peppers, drained

Steps:

  • In a medium, microwave safe bowl, mix cream cheese, chili without beans and diced tomatoes with green chile peppers.
  • Microwave cream cheese mixture on high 1 minute. Remove from microwave, stir and repeat until the mixture is hot and thoroughly blended.

A simple and very tasty recipe for chili. I have seen many recipies come close to this one and everytime the recipie is not followed to the exact ingredient it falls short of this perfect balance. Great for Tailgating!

2 lbs ground sirloin
1 (8 ounce) can tomato sauce
2 cups water
3 tablespoons olive oil
1 1/2 cups chopped onions
8 large garlic cloves, chopped
1/4 cup taco seasoning
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
3 cups vegetable broth
2 (16 ounce) cans kidney beans (drained)

Steps:

  • Heat olive oil in saucepan over medium heat. Add onions and garlic. Saute about 8 minutes or until onions are translucent. Add sirloin and cook until brown, breaking up meat with a spatula as it cooks. Add taco seasoning, basil, oregano, and thyme. Stir 2 minutes. Mix in tomato sauce, broth and tomato paste. Simmer until thickened stirring occasionally to prevent sticking, about 1 and a half hours. Mix in beans. Simmer for 5 minutes. Season to taste with salt and pepper.

The success of this dip will depend on the quality of chili you use so make certain to use a good-quality canned chili or use homemade, for extra heat use extra spricy chili.

1 (8 ounce) package cream cheese, softened
1 (3 ounce) package cream cheese, softened
1 jalapeno pepper, seeded and finely chopped (optional)
1 (15 ounce) can chili, with ground beef (spicy or mild or use homemade)
5 green onions, chopped
1 (4 ounce) can green chilies, drained (or to taste)
1 1/2 cups shredded cheddar cheese (can use more)

Steps:

  • Set oven to 350 degrees (set oven rack to bottom position).
  • Grease a 9-inch pie plate.
  • Mix both packages cream cheese with jalapeno pepper (if using) then spread on the bottom of the pie plate.
  • Spread the chili over the cream cheese, then sprinkle green onions, then green chilies.
  • Bake for about 20 minutes or until hot (if you are baking this cold out of the fridge the baking time will be longer).
  • Sprinkle the grated cheese on top then return to oven for about 5 minutes to melt cheese.
