This is an easy week night throw it together in a hurry meal. Loved by kids and aduls alike. You can vary the spiciness by using hot/mild or regular Rotel

1 (14 ounce) box macaroni shells and cheese
1/2 lb ground beef
1 -2 tablespoon taco seasoning
1 teaspoon minced garlic
1/2 teaspoon cumin
1 -2 tablespoon TABASCO® brand Chipotle Pepper Sauce (optional)
1/4 cup water
1 (10 ounce) can Rotel tomatoes & chilies
1 (14 ounce) can black beans (drained and rinsed)
1 cup frozen corn kernels, thawed or 1 cup canned corn

Steps:

  • boil pasta shells according to package directions.
  • brown ground beef in large saucepan or skillet with minced garlic and cumin.
  • Drain fat.
  • mix taco seasoning and water and pour over meat, stir well over medium/low.
  • add rotel, beans, corn and Tabasco to pan and continue to cook over medium until all ingredients heated through.
  • add pasta shells to pan and stir.
  • pour cheese sauce from package over all and stir over medium until heated through.
  • Serve with additional Tabasco to taste.

This Mexican-inspired dish features ingredients loved in all cultures: cheese, pasta and corn!

2 1/3 cups uncooked elbow macaroni or cavatappi pasta (8 ounces)
1 cup Old El Paso™ salsa (any variety)
1 1/2 cups milk
1 can (14.75 ounces) cream-style corn
1 can (11 ounces) whole kernel corn with red and green peppers
1 loaf (8 oz. box) VELVEETA™ Original Cheese, cubed

Steps:

  • Mix all ingredients except cheese in 12-inch nonstick skillet. Heat to boiling, stirring occasionally; reduce heat.
  • Cover and simmer 10 to 14 minutes, stirring frequently, until macaroni is tender. Stir in cheese until melted.

  • Fill a large stockpot or dutch oven halfway with water, add in a large pinch of salt, and bring to a boil. Add in elbow macaroni and cook until just under al dente, according to package directions. Do not fully cook or overcook the macaroni pasta, it'll finish cooking through completely in the oven. Once just under al dente, drain the pasta.
  • While the pasta boils, use a wooden spoon to mix the half and half, heavy cream, half of the cheddar cheese, half of the Colby jack cheese, all of the mozzarella cheese, all of the American cheese, and all of the cream cheese in a large mixing bowl.
  • Add smoked paprika, garlic powder, onion powder, mustard powder, and some kosher salt and pepper, stirring well and tasting the mixture to ensure there is a good flavor. Do not add too much salt, since the cheese is pretty salty and will add its saltiness as it bakes. Once satisfied with the seasoning, mix the eggs in until well incorporated with a wooden spoon.

  • Preheat oven to 375 degrees. Grease a square casserole dish (8x8 or 9x9) with nonstick spray.
  • Boil pasta according to package directions but stop cooking one minute earlier than suggested (for Horizon cook 9 minutes). Pasta will finish cooking in the sauce. Drain pasta and put it in a large mixing bowl. Add the frozen corn and toss while the pasta is still hot, which will defrost it. Stir in the beans and chiles as well and set aside.
  • Return the pasta pot to the stove and melt one tablespoon of butter over medium-low heat. Add the onions and cook, stirring occasionally, until softened and just starting to lightly brown, 5-7 minutes. Add milk and remaining two tablespoons of butter and turn heat up to medium. Stir milk until the butter melts then turn off the heat and whisk in the cheese packet and two tablespoons of sour cream.
  • Pour sauce over pasta then add half of the shredded cheese and stir everything until well combined. Pour pasta mixture into the greased casserole dish and sprinkle with the remaining cheese. Bake in preheated 375 degree oven for 20-25 minutes, until cheese is melted and pasta is bubbling around the edges
