1 tablespoon butter or margarine
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 medium green bell pepper, cut into small bite-size strips
1 box Hamburger Helper™ four cheese lasagna
1 1/2 cups hot water
1 can (14 1/2 oz) diced tomatoes, undrained
1 can (4 oz) mushroom stems and pieces, drained
1/4 cup grated Parmesan cheese

Steps:

  • In 10-inch skillet, melt butter over medium heat. Cook chicken and bell pepper in butter, stirring occasionally, until outside of chicken turns white.
  • Stir in uncooked pasta and sauce mix (from Hamburger Helper box), water, tomatoes and mushrooms. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 10 minutes, stirring occasionally, until pasta is tender. Remove from heat; sprinkle with cheese.
  • Cover; let stand 5 minutes (sauce will thicken as it stands).

A 'back to basics' version of the classic Chicken Cacciatore. Chicken meat simmered with garlic, onion, green bell pepper, tomatoes, beans and oregano. This recipe can easily be doubled. Serve over cooked noodles or rice, if desired.

⅓ cup chopped onion
1 clove garlic, chopped
⅓ cup chopped green bell pepper
¾ pound chicken meat, cooked and cubed
½ cup whole peeled tomatoes
½ cup green beans
¼ teaspoon dried oregano

Steps:

  • In a large skillet, saute onion, garlic and bell pepper until soft. Add chicken, then stir in tomatoes, beans and oregano.
  • Reduce heat to medium low and simmer for 8 to 10 minutes, stirring constantly. Remove from heat and serve hot.

5 to 6 chicken thighs
Kosher salt and black pepper, to taste
1/2 cup flour, for dredging
1/4 cup olive oil
1 to 2 large red bell peppers, chopped or sliced
1 onion, sliced
2 cloves garlic, minced
1 quart (4 cups) spaghetti/marinara sauce
1/2 cup mozzarella cheese, optional
Fresh basil, for garnish

Steps:

  • Sprinkle each chicken thigh with salt and pepper then dredge in flour. Heat oil over medium-high heat in a large skillet and cook for about 4 to 5 minutes on each side or until chicken is golden-brown (it doesn't need to be completely cooked through). Transfer chicken to a plate and set aside. In the same skillet, sauté peppers, onion, and garlic until onions become soft and transparent. Reduce heat and slowly add marinara/spaghetti sauce to the skillet. Add chicken back to the skillet and bring sauce to a simmer over medium-low heat. Simmer for about 25 minutes or until chicken thighs are cooked through. Before serving, top with mozzarella (optional) and fresh basil.

This is one of the easiest, quickest recipes I've found for chicken cacciatore. I don't remember where I got it, but it makes a great week-night meal served over noodles, with a salad on the side.

1/4 cup Italian dressing
1 medium onion, sliced
1 medium green bell pepper, sliced
1 1/2 lbs boneless skinless chicken breast halves, cut into bite-sized chunks
2 teaspoons italian seasoning
2 teaspoons sugar
1 (14 1/2 ounce) can stewed tomatoes

Steps:

  • In a large skillet, heat italian dressing. Add onion, bell pepper, and chicken. Mix well to combine, and cook over moderate heat for approximately 6 minutes, stirring occasionally.
  • In a small bowl, combine italian seasoning, sugar, and undrained stewed tomatoes. Spoon this over the chicken evenly, and lower heat so chicken is just simmering. Simmer for about 12-14 minutes, stirring occasionally. When chicken is fork-tender, it is ready to be served over hot noodles.

3 tablespoons all-purpose flour
1-1/2 teaspoons Italian seasoning
6 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons olive oil, divided
1/2 cup chopped onion
1/2 pound sliced fresh mushrooms
1 cup sliced zucchini
2 cans (14-1/2 ounces each) Italian stewed tomatoes
1 can (6 ounces) tomato paste
1 teaspoon salt
8 ounces uncooked spaghetti

Steps:

  • In a large resealable plastic bag, combine flour and Italian seasoning. Add chicken, a few at a time; seal and shake to coat. In a large nonstick skillet coated with cooking spray, cook chicken in 1 teaspoon oil for 4-5 minutes on each side or until browned. Remove chicken from skillet and keep warm. , In same skillet, cook onion in remaining oil for 2 minutes. Add mushrooms and zucchini; cook until onion is tender. Stir in the tomatoes, tomato paste and salt. Bring to a boil. , Return chicken to skillet. Reduce heat; cover and simmer 10-14 minutes or until a thermometer reads 160°. Cook pasta according to package directions; drain. Serve chicken mixture with spaghetti.

3 (8 ounce) bone-in chicken legs with skin
⅔ cup all-purpose flour
¼ cup olive oil
1 medium green bell pepper, cut into 2-inch pieces
½ small onion, sliced
4 cloves garlic, sliced, or more to taste
½ teaspoon dried oregano
¼ teaspoon red pepper flakes
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (32 ounce) jar roasted red pepper and garlic tomato sauce
1 ½ cups water, or as needed

Steps:

  • Dip chicken pieces in flour and shake off excess.
  • Heat oil in a 10-inch skillet over medium-high heat. Add chicken and brown well, 4 to 5 minutes per side. Remove chicken from the pan and set aside. Drain most of the oil from the skillet, leaving about 1/8 inch.
  • Add bell pepper, onion, garlic, oregano, pepper flakes, salt, and pepper to the skillet. Sauté, stirring constantly, for 2 minutes. Pour in spaghetti sauce and add enough water to thin mixture just a little; sauce will thicken as it cooks. Stir well and add chicken to the sauce. Spoon sauce over chicken to coat and bring to a simmer.
  • Cover, lower heat, and cook, turning chicken and scraping the bottom of the pan often, until chicken is no longer pink at the bone and the juices run clear, about 40 minutes.
