- Sprinkle chicken with salt and pepper. In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 5-7 minutes on each side or until a thermometer reads 170°., Meanwhile, in a small saucepan, combine the remaining ingredients. Bring to a boil; cook until liquid is reduced to 1/2 cup. Serve with chicken.

GRILLED RASPBERRY CHICKEN
Raspberry vinaigrette and raspberry jam lend a lovely fruit flavor to this moist chicken dish I created. Because the recipe uses thighs and drumsticks, it's also economical. I make it often.

- Combine 1 cup vinaigrette and 1 tablespoon rosemary in a large resealable plastic bag. Add chicken thighs and drumsticks. Seal bag and turn to coat. Refrigerate for 1 hour.
- Combine remaining rosemary, raspberry jam, 4 1/2 teaspoons vinaigrette, lime juice, soy sauce, and garlic powder in a small bowl.
- Prepare an outdoor grill for indirect medium heat and lightly oil the grate.
- Drain and discard the marinade. Place chicken pieces skin-side down on the grill rack. Grill, covered, over indirect heat for 20 minutes. Flip. Grill, basting occasionally with raspberry jam mixture, until a meat thermometer inserted into the center reads 180 degrees F (80 degrees C), 10 to 20 minutes more.

- Place chicken in a 3-qt. slow cooker. In a small bowl, combine the spreadable fruit, soy sauce, mustard and pepper; pour over chicken. Cover and cook on low for 5-6 hours or until meat is tender., Remove chicken to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring to a boil. - In a large pot, bring to a boil the water, coconut milk, ginger, and rice; cover, and simmer, stirring occasionally, until all liquid is absorbed.
- Meanwhile, in a resealable plastic bag, combine the flour, lemon pepper, and chicken; shake to coat.
- Heat oil in a large skillet over medium heat. Fry chicken strips and rosemary, turning occasionally, until golden brown. Remove chicken pieces from pan, and set aside. EASY RASPBERRY CHICKEN

- Set out a sheet of wax paper on your counter and place chicken breasts on top, leaving some space in between each; top with another sheet of wax paper.
- Using a meat mallet or a rolling pin, bang on the chicken to flatten it- the thinner the chicken is, the faster it will cook.
- Heat oil in a large, deep skillet over medium-high heat.
- Remove wax paper from chicken, season with a tiny bit of salt& pepper if desired, and place chicken into the skillet.
- Cook 5 minutes, lid on, then flip over and cook another 5-7 minutes, lid on,- or until the chicken is cooked all the way through, but is not tough (it should be fork tender and the juices should run clear- not pink).
- The cooking time will vary based on how thin you have pounded your chicken.
- Add raspberry jam and orange juice and stir until jam is melted and is blended.
- Bring to a boil, uncovered, and let boil 1-2 minutes or until just thickened slightly.
- Remove chicken from pan and serve sauce ladled over the top.

- Preheat your oven to 350 degrees. Prepare a 13x9 pan with tinfoil lightly coated with cooking spray. Place chicken, as evenly spaced as possible, in your prepared baking pan and set aside.
- In a medium sized bowl, combine jam, balsamic vinegar, orange juice, Dijon mustard, salt, pepper, sage, thyme, minced shallots or onions and garlic. Set aside.
- Pour jam mixture evenly over top of all of your chicken. Cover with tinfoil and bake for 25 minutes.
- Remove pan from oven. Discard tinfoil. Spoon or baste mixture over chicken to coat again as evenly as possible. Bake uncovered for another 15-20 minutes. Cooking time will depend on the size of your chicken breasts. We even baste one last time before removing chicken from the oven and broil for a minute or two for a beautiful finish on top. Enjoy!
