2 tbsp olive oil
1/4 cup onion chopped finely (optional)
1 1/2 cups uncooked white rice
2 cups water (or chicken broth -I normally do 1 or 2 cups broth)
1 cups chunky salsa
1 tsp garlic salt
1 tsp cumin

Steps:

  • Saute onion in oil over medium heat. Cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth, salsa, garlic salt and cumin.
  • Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
  • I double this recipe to make a lot of rice. You do the work once and have enough to last my family 2-3 meals.
  • I let rice cool and then freeze in freezer bags, that way I only have to mess up the kitchen once for a few extra meals.

2 tomatoes (, stemmed and quartered)
1/2 yellow onion (, peeled and quartered)
2 cloves garlic (, peeled)
1 teaspoon kosher salt
1 tablespoon canola oil
1 cup uncooked long grain white rice
1 1/2 cups chicken broth

Steps:

  • Place the tomato, onion, garlic and salt in a blender or food processor and blend until smooth, then set aside.
  • Add the oil to a large skillet over medium heat. When the oil is hot, add the rice and cook for about 5 minutes or until golden brown, stirring constantly so it doesn't burn. Add the tomato mixture to the skillet (be careful, it will sizzle and splatter) and cook for 2 minutes while stirring. Add the chicken broth, stir, and cover with a ild. Reduce to a simmer and cook for about 30 minutes or until the liquid is totally absorbed. Fluff with a fork to stir in the tomato bits that have risen to the top. Serve warm.

Cook a pot of rice using chicken broth, tomato sauce, and a few seasonings to make this quick and easy Spanish Rice. It's the perfect base for rice bowls or a delicious side dish to your favorite Mexican entrees!

1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 cup white rice
1 cup (APPROXIMATELY) chicken broth or stock (see NOTES below)
1 cup (APPROXIMATELY) tomato sauce or puree (see NOTES below)
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 cup diced fresh tomatoes (seeded & drained (optional))

Steps:

  • In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
  • Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. Stir well, reduce heat to low, place lid on pot, and cook at a gentle simmer for 20 minutes (or whatever amount of time is directed on your bag of rice; see NOTES below). If rice is not quite tender or liquid is not absorbed after 20 minutes, replace lid and cook for 2 to 4 minutes longer. Remove from heat, leave covered, and allow to rest for a few minutes. Fluff rice with a fork and serve.

My family loves a variety of ethnic foods, but this is one of their favorites. My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.

This recipe has been told to me by my girlfriends MIL from Mexico. I had to measure the ingredients. Never before have they been measured, always a 'handful of this and equal parts of this' until it looked right. I hope you enjoy it. It has become a family favorite in our home. I am always asked to make it!

2 tablespoons olive oil
1 ½ cups long-grain rice
3 cups water
2 roma (plum) tomatoes, chopped
1 cup chopped onion
¾ cup chopped fresh cilantro, or more to taste
1 tablespoon tomato bouillon with chicken flavoring (such as Knorr®), or more to taste

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
  • Mix water, tomatoes, onion, cilantro, and bouillon into rice. Bring to a boil. Turn off heat and cover pot tightly with a lid. Leave pot covered on hot burner until rice has absorbed all the liquid, about 20 minutes. Adjust seasonings as needed.

5 slices of bacon, diced.
1/2 c chopped onion.
1/2 c chopped green pepper.
1 clove garlic, minced.
1 c regular long grain rice, uncooked
1 can(s) (10 3/4 oz.) condensed tomato soup
1 soup can of water
1 c salsa, mild or to your liking

Steps:

  • 1. In a 10" skillet, over medium heat, cook bacon till lightly browned.
  • 2. Stir in onion, green pepper and garlic.
  • 3. Cook until tender, stirring occasionally.
  • 4. Stir in rice; cook until rice is slightly browned, stirring often.
  • 5. Stir in soup, water, salsa; mix well.
  • 6. Over high heat, heat to boiling.
  • 7. Reduce heat to low and cover. Simmer for 25 minutes, stirring occasionally. Until rice is tender.
