EASY PICANTE PIZZA
Quick,and delicious, these zesty "pizzas" use flour tortillas for the crust. They're a great solution for busy nights, but they're so good, you'll want to make them all the time. Easy for kids to help with. Try with pepperoni, or veggies too!

- 1. Preheat oven to 450^. Place tortillas onto 2 baking sheets covered with foil-spray foil with cooking spray- the spray tortillas with the cooking spray on both sides. Bake for 5 minutes or until the tortillas are golden. Spread about 1/4 cup picante sauce onto each tortilla to within 1/2 inch of the edge. Top with the chicken, cheese and onions. Bake for 5 minutes or until the cheese is melted. --- This is a great way to prepare your nacho pizza too. Tortillas make a great crust for all you pizza snack concoctions!! Enjoy!!

Hot pepper sauce and a jalapeno pepper give this snappy sauce just the right amount of zip. It makes a great dip for tortilla chips or a tangy sauce for tacos and fajitas. - For sauce: Combine all sauce ingredients with 1/2 cup water in a medium bowl; set aside for flavors to develop while making crust. Freeze remaining paste .
- For crusts: Combine 2 cups of flour with the dry yeast, sugar and salt. Add the water and oil and mix until well blended (about 1 minute). Gradually add enough remaining flour slowly, until a soft, sticky dough ball is formed.
- Knead for about 4 minutes, on a floured surface, until dough is smooth and elastic. Add more flour, if needed. (If using RapidRise® Yeast, let dough rest, covered, for 10 minutes.)
- Divide dough in half. Pat each half (with floured hands) into a 12-inch greased pizza pan OR roll dough to fit pans.
- For pizzas: Preheat oven to 425 degrees F. Top crusts with sauce, pepperoni and cheese.
- Bake for 18 to 20 minutes until crusts are browned and cheese is bubbly. For best results, rotate pizza pans between top and bottom oven racks halfway through baking.

- Make the base: Put the flour into a large bowl, then stir in the yeast and salt. Make a well, pour in 200ml warm water and the olive oil and bring together with a wooden spoon until you have a soft, fairly wet dough. Turn onto a lightly floured surface and knead for 5 mins until smooth. Cover with a tea towel and set aside. You can leave the dough to rise if you like, but it's not essential for a thin crust.
- Make the sauce: Mix the passata, basil and crushed garlic together, then season to taste. Leave to stand at room temperature while you get on with shaping the base.
- Roll out the dough: if you've let the dough rise, give it a quick knead, then split into two balls. On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin. The dough needs to be very thin as it will rise in the oven. Lift the rounds onto two floured baking sheets.
- Top and bake: heat the oven to 240C/220C fan/gas 8. Put another baking sheet or an upturned baking tray in the oven on the top shelf. Smooth sauce over bases with the back of a spoon. Scatter with cheese and tomatoes, drizzle with olive oil and season. Put one pizza, still on its baking sheet, on top of the preheated sheet or tray. Bake for 8-10 mins until crisp. Serve with a little more olive oil, and basil leaves if using. Repeat step for remaining pizza.

EASY CHICKEN PICANTE
Another chicken recipe that is easy has a little kick to it. I have used chicken thighs and topped with sour cream and green onions.

Steps:
- Mix the salsa, mustard and lime juice in a large bowl or ziploc bag.
- Add the chicken, turning to coat with the marinade. Let it marinate in refrigerator at least 30 minutes.
- Melt butter in a large skillet over medium heat until foamy.
- Drain chicken saving the marinade. Add chicken to skillet in a single layer. Cook 10-15 minutes till the chicken is a light brown on both sides. Add the reserved marinade to skillet and cook 5-10 minutes or until chicken is done.
- Remove chicken to a serving platter; keep warm. Boil marinade in skillet over high heat 1 minutes; pour over chicken. Top with sour cream and chopped green onions.
