This recipe comes from my Weight Watchers Magazine, November/December 2008. This issue has several "make ahead recipes" for easy Holiday planning. "Make 4 hours ahead."

6 tablespoons sugar
1 1/2 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon salt
6 pears, cut into 1-inch chunds
1/3 cup raisins
1 tablespoon lemon juice
6 amaretto cookies, coarsely crushed
6 low-fat ginger snaps, coarsely crushed
1 1/2 tablespoons light butter, melted (the stick kind)

Steps:

  • Preheat the oven to 450 degrees. Lightly spray a 9 x 13-inch baking dish with nonstick spray.
  • To make the filling, combine the sugar, flour, cinnamon, allspice and salt in a large bowl. Add the pears, raisins and lemon juice; toss to mix well.
  • Spoon into the baking dish. Sprinkle with the cookies and drizzle with the melted butter.
  • Bake until the pears are tender and the filling is bubbling, 35-40 minutes.
  • Cool slightly and serve warm or let stand at room temperature up to 4 hours.

ORIGINALLY a pear crumble pie, I shortened this to a crumble when I often was too short of time to make a pie crust. I've also found canned pears work as well as fresh, so that makes it even easier to prepare. -Kezia Sullivan, Sackets Harbor, New York

3 medium pears, peeled and sliced
2 teaspoons lemon juice
3 tablespoons sugar
3 tablespoons old-fashioned oats
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
Dash ground nutmeg
1 tablespoon cold butter
2 tablespoons chopped nuts

Steps:

  • Place pear slices in a greased 1-qt. baking dish. Sprinkle with lemon juice. In a large bowl, combine the sugar, oats, flour, cinnamon, ginger and nutmeg. , Cut in butter until crumbly; add nuts. Sprinkle over pears. Bake at 350° for 25-30 minutes or until bubbly.
