CORNISH PASTIES

Cornish Pasties image

Simple and delicious Cornish Pasties made with a shortcrust dough and filled with seasoned steak, potatoes, rutabaga and onion.

Provided by Lauren Allen

Categories     Main Course

Time 1h30m

Number Of Ingredients 15

2 cups flour
1/2 teaspoon salt
4 Tablespoons butter (, chilled and cut into cubes)
4 Tablespoons shortening (, or lard)
6-8 Tablespoons ice water
1 lb beef sirloin steak ((or skirt, rump steak))
1 cup Yukon gold potatoes ((about 1 medium size potato), cut into small 1/4 inch cubes.)
3/4 cup rutabaga (, peeled and cut into small 1/4 inch cubes )
1/2 cup yellow onion ((about 1/2 small onion), diced )
1 teaspoon thyme
1/2 teaspoon rosemary
1 teaspoon garlic powder
salt and pepper (, to taste)
Sliver of butter to place on top of filling before closing
Eggwash: 1 egg, lightly beaten with 1 Tablespoon water.

Steps:

  • Make the shortcrust dough: Add flour and salt to a mixing bowl. Cut in shortening and butter until well combined. Stir in 5 Tbsp of water then add 1-3 more tablespoons as needed till dough binds together and is not dry. Be careful not to over mix.
  • Divide the dough into two balls and form each into a log. Wrap them in plastic wrap and place chill in the refrigerator for 20 minutes.
  • Prepare the filling: Cut the steak into bite size cubes, and chop the potatoes, rutabaga, onion. Add steak, vegetables, thyme, rosemary, garlic powder, salt, and pepper to a bowl and toss.
  • Preheat the oven to 350 degrees F.
  • Roll the Dough: Take one dough disk out of the fridge, leaving the other to continue to chill while you make the first four pasties. Cut the log into 4 equal pieces. Place one piece at a time on a large piece of parchment paper sprinkled lightly with flour. Roll the dough into a thin circle about 7-8 inches across. Don't worry if your circle isn't perfect as you will be folding and crimping the edges.
  • Add filling: Place a heaping spoonful of filling into the center of the dough. Cut off a sliver of butter and place it on top of the filling.
  • Fold and seal edges: Lightly moisten the edges of the pastry dough with a little bit of water (use a pastry brush or your finger). Gently lift the dough on one side and bring it over the filling, laying it on top of the dough on the other side. If the dough punctures at all, use any extra dough to patch the hole. Squeeze the edges of the half circle of dough, pressing them firmly together.
  • Crimp the edges of the dough: Push down on the edge of the pasty and using your index finger and thumb twist the edge of the pastry over to form a crimp.Repeat this process along the entire edge. Tuck the end corners underneath. Lay the cornish pasty on the baking sheet and repeat with remaining dough. When you've crimped all four pasties, remove the remaining dough from the fridge and repeat process.
  • Add egg wash: Lightly prick the top of each pasty with a fork (2-3 times) for air to escape. Mix egg and water in shallow dish for the egg wash and use a pastry brush to apply a thin layer on top of each pasty.
  • Bake at 350ºF for 40-50 minutes or until golden. Allow to cool for 10 minutes before eating.

EASY PANTRY PASTIES

Easy Pantry Pasties image

Another Pantry Challenge recipe - I was craving pasties, but also had leftover commercially prepared pie crusts from the holidays to use up. So I figured out what else I had in my pantry and freezer, and here's what I came up with! They were very tasty, if I say so, myself. :) If you use curry powder, they're like samosas... without, they're like pasties. Both ways are delicious!

Provided by Julesong

Categories     Savory Pies

Time 50m

Yield 8 meat pies, 8 serving(s)

Number Of Ingredients 11

3/4 cup diced frozen carrots or 3/4 cup peas and carrots
1 teaspoon butter
1 lb lean ground beef
1/4 cup diced yellow onions or 2 tablespoons minced dried onion
1 clove garlic, minced
1 (16 ounce) can whole white small potatoes, drained and cut into 1/4 inch cubes or 1 1/4 cups cubed cooked potatoes
1 cup shredded sharp cheddar cheese
1/2 cup shredded monterey jack cheese
1/2-1 teaspoon curry powder (optional)
salt and pepper, to taste
4 pie crusts, from store (2 pkgs)

Steps:

  • Preheat oven to 350 degrees F.
  • Thaw and partially cook the carrots by microwaving them on high, together with the butter, for 90 seconds; set aside.
  • In a non-stick skillet over medium heat, brown the ground beef; when the meat is about halfway cooked, add the onion, garlic, and carrots, and sauté until beef is completely browned, about a total of 7 to 10 minutes; drain drippings, if any.
  • In a bowl, combine the beef mixture, cubed potato, and cheeses (and curry powder, if using), then season to taste with salt and pepper; stir well.
  • Place one of the pie crusts on a lightly-floured board, then mentally imagine the crust divided into 4 equal pieces: place about 1/2 to 3/4 cup of the cooked meat mixture in each equal quarter of the crust- make sure to leave about a 1/4 inch aisle beside each mound of mixture (the aisle should basically be the lines which divided the crust into 4 equal pieces, plus the outside edge).
  • Moisten the uncovered"aisles" and outside edge portions of the crust with water or milk, then place another crust over the top of it all and carefully press it down onto the exposed bottom crust areas (the"aisles" and outside edge), making sure that the mounds of meat are covered by crust.
  • Cut the 4 pasties away from each other down the middle aisles; using a fork, press the edges all around each pastie to make sure edges adhere.
  • Repeat the assembly process with the remaining crusts and meat filling.
  • Place the pasties on a lightly pan-sprayed non-stick baking sheet (4 should fit per large baking sheet, you might need to cook in two batches) and bake at 350 degrees F until crusts are golden brown, about 30 minutes.

BEEF PASTIES

Beef pasties image

Make these traditional beef pasties for a comforting lunch. Encased in shortcrust pastry, they're filled with chunks of beef, swede, carrot, potato and onion

Provided by Karenza Mason

Categories     Lunch, Snack

Time 1h45m

Number Of Ingredients 8

2 x 320g packs shortcrust or puff pastry or 640g homemade pastry
250g white potatoes
1 onion
250g swede
250g beef skirt
40g butter
plain flour, for dusting
1 egg, beaten

Steps:

  • Heat the oven to 200C/180C fan/gas 6. If using shop-bought pastry, take it out of the fridge to reach room temperature while you prepare the vegetables and meat.
  • Peel and roughly chop the potatoes, onion and swede into ¼cm cubes. Trim the beef of any fat or sinew, then cut into small strips and chunks. Season well and divide both the meat and vegetables into six equally sized portions.
  • Roll the pastry into a log and cut into six equal pieces. Knead and lightly stretch or roll each piece into 20cm-wide circles. Layer on the beef and veg, slightly to one side. Keep harder textures like swede in the middle, followed by potato then beef towards the edges. This will prevent anything piercing the dough when crimping.
  • Add two knobs of the butter per pasty and a light sprinkling of flour to thicken the gravy inside and prevent soggy bottoms. Lightly wet your fingertips and dampen the edges of each pasty, then gently fold one end over the filling to enclose it. Keeping your fingers slightly damp, crimp the edges.
  • Put the pasties on a baking tray covered with a sheet of baking parchment, then cut two small slits into the top of each. Brush with beaten egg and cook for 10-15 mins. When starting to brown, turn the oven down to 180C/160C fan/gas 4 and cook for further 45 mins until golden. Leave to cool for at least 10 mins before serving.

GREAT GRANDMA JOHNS' PASTIES

Great Grandma Johns' Pasties image

This recipe originated in Cornwall England, and was adapted by my Great Grandmother Johns. It was originally made for the coal miners and wrapped in butcher paper. The hard pastry shell would keep the juicy contents fresh until the miners were ready to eat. My Grandma would serve with relishes and Coca Cola. If you want to make these more quickly, you can use refrigerated pie crusts instead of the pastry recipe.

Provided by JJohns

Categories     Main Dish Recipes     Savory Pie Recipes     Pasty Recipes

Time 1h30m

Yield 4

Number Of Ingredients 10

1 ½ cups all-purpose flour
¼ teaspoon salt
½ cup shortening
¼ cup cold water
¾ pound boneless beef sirloin, cubed
1 medium onion, sliced
2 medium potatoes, peeled and thinly sliced
1 teaspoon dried parsley
salt and ground black pepper to taste
¼ cup water, or as needed

Steps:

  • In a medium bowl, stir together the flour and 1/4 teaspoon of salt. Cut in butter with a fork or pastry blender until the mixture resembles bread crumbs. Stir in cold water with a fork until the mixture is able to come together in a ball. Knead a couple of times then divide pastry into two pieces. Pastry may be refrigerated for later use at this time.
  • Preheat the oven to 400 degrees F (200 degrees C). On a lightly floured surface, roll out each half of the pastry into a 10-inch circle.
  • Place half of the potato slices in a line down the center of each circle, leaving at least 1 inch at each end uncovered. Arrange onion slices over the potatoes, and season with salt, pepper and some of the dried parsley. Place half of the beef cubes over each onion layer, then season again with salt, pepper and dried parsley. Fold the edges over the pastry over the filling, and tuck in the ends.
  • Transfer the two pastries to a greased baking sheet, and cut a few slits in the top of each one for ventilation.
  • Bake for 45 minutes in the preheated oven. Remove from the oven, and reduce heat to 350 degrees F (175 degrees C). Spoon 1 teaspoon of water into each slit on the tops of the pasties. Return to the oven, and bake for an additional 15 minutes, or until golden brown. Serve whole, or cut into halves.
