- Preheat oven to 425 degrees
- Add potatoes, onions, and spices to a glass casserole dish
- Pour on olive oil to coat well (I used the full 1/4 cup)
- Toss to combine
- Bake at 425 degrees for 50 - 60 minutes, checking to stir and flip every 15 - 20 minutes

GARLICKY MASHED POTATOES WITH CARAMELIZED ONIONS
Caramelized onions and roasted garlic add deep flavor to buttery mashed potatoes.

Steps:
- Preheat the oven to 350 degrees F.
- Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.
- Heat the oil in a large skillet set over medium heat. Add the onions and cook, stirring occasionally and lowering the heat if the onions begin to burn, until golden, about 30 minutes.
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Add the onions. Mash the potatoes and onions with the milk and butter using a fork or potato masher. Stir in the roasted garlic and 2 teaspoons salt; season with pepper.

Steps:
- Cook potatoes until fork tender (about 30 min).
- While potatoes are cooking, heat olive oil in a medium skillet over medium heat.
- Add garlic and onions, cook, stirring frequently until soft and golden (about 10 min).
- Drain potatoes, reserve 1/4 cup liquid.
- Cool potatoes until you can handle them to slip off the skins.
- Cut potatoes into quarters and return to the saucepan.
- Add 1/4 cup potato water, milk, salt & pepper.
- Heat mixture until heated through (about 5 min).
- Mash potato mixture until smooth.
- Stir in onion/garlic & thyme.
- Spoon potatoes into a serving dish; drizzle with butter and serve.

- Preheat oven to 450 degrees F (230 degrees C).
- Combine potatoes and onion in a roasting pan; cover with canola oil and olive oil. Add garlic, onion soup mix, rosemary, and black pepper and stir until potatoes and onion are evenly coated. Cover roasting pan with aluminum foil.

- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. - Place potatoes, unpeeled, in a saucepan with water to cover and salt.
- Cook potatoes until tender, about 20 minutes. Drain and let cool. When cool enough to handle, peel them. Cut potatoes into 1/4-inch slices.
- Heat oil in a nonstick skillet large enough to hold potatoes in one layer. When oil is quite hot, add potatoes. Cook over high heat, shaking skillet and stirring gently, until lightly browned. Turn potatoes with a spatula. Cook for a few minutes more until light brown.
- Drain excess fat from skillet and add onion. Cook a few minutes until onion is lightly browned. Add butter, garlic, salt and pepper. Toss and blend well. Sprinkle with parsley and serve immediately.

- Preheat oven to 350 degrees.
- Use a sharp knife to puncture potatoes several times.
- Microwave potatoes on high for 13 to 14 minutes, or until they are tender when poked with a knife or fork (microwave oven cooking times vary).
- Cube the potatoes into small bite sized pieces.
- Put the cubed potatoes into a large ziplock (re-sealable) plastic bag.
- In a small bowl, mix oil and soup mixes.
- Mix until lumps are dissolved.
