EASY PEASY ROASTED ROOT VEGETABLES



Easy Peasy Roasted Root Vegetables image

Delicious roasted parsnips, carrots, red onions and sweet potatoes - all roasted on one tray. Maximum taste, minimum fuss, healthy and frugal... and only one tray to wash makes my Easy Peasy Roasted Root Vegetables the best SIDE dish! Perfect with roast meats, fish or nut roast.

Number Of Ingredients 7

400 g sweet potatoes (cut into large chunks (leave the skin on!))
400 g parsnips (peeled and cut into large chunks)
400 g carrots (cut into large chunks (leave the skin on!))
3 tablespoons olive oil
4 sprigs thyme (and/or rosemary) (roughly chopped)
Salt and pepper to taste (see note)
2 small red onions (each one peeled and cut into 8 wedges)

Steps:

  • Pre-heat your oven to 220C / 200C fan / gas mark 7 / 425F.
  • Place the chopped sweet potatoes, parsnips and carrots on a large roasting tray. Drizzle over the olive oil and scatter with the salt, pepper and herbs.
  • Toss thoroughly to get the veggies well-coated in the oil and seasonings, then spread the veggies out so they are well spaced. (Too close and the veggies will steam and go soggy rather than roast and go crispy and caramelised - which is what you want!)
  • Roast for 20 minutes in your pre-heated oven, then turn the veggies and add in the red onion wedges. Take care to ensure the veggies are well spaced out again.
  • Roast for a further 20 minutes, or until the veggies are cooked all the way through and have a nice amount of caramelisation on the edges.
  • Serve as a side dish to roasted meats, fish or nut roast.

Easy One Tray Roasted Onions and Root Vegetables image

An easily pre-prepared Christmas vegetable side dish - or for any large festive or celebration gathering throughout the year - using vegetables in season. These roast away without hardly any attention & can be peeled & chopped up to 2 days before cooking & stored in a ziplock bag with the juice of one lemon squeezed over them. Use whatever root vegetables you have in season or that are available - this combination of vegetables is the one that works best for me. Adding garlic works well too, but be careful it does not overpower the flavour of the meal!

1 lb baby carrots, cleaned & trimmed
1 lb parsnip, trimmed & halved
2 lbs small floury potatoes, cubed
4 small red onions, peeled & quartered
4 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon rock salt or 1 teaspoon coarse sea salt
freshy ground black pepper
1 tablespoon fresh thyme leave
fresh parsley
1 lemon, juice of

Steps:

  • If pre-preparing the vegetables, clean, peel,trim them all EXCEPT the potatoes. Place in a ziplock bag & squeeze in the juice of one lemon. Add the balsamic vinegar & olive oil and seal tightly - store in the refrigerator for up to 2 days. On the day, add your potatoes to the bag & coat thoroughly.
  • For cooking on the same day, follow the above instructions but ADD the potatoes along with the other vegetables, cut them into small even-size pieces. Make sure the vegetables are thoroughly coated in oil & vinegar and leave to one side whilst the oven heats up.
  • Preheat oven to 200 C, 400 F or gas 6.
  • Put all the vegetables into a large roasting tray & tip in the oil & vinegar from the bag. Sprinkle generously with the thyme leaves, salt & freshly ground black pepper.
  • Make a tent of aluminium foil over the vegetables & seal tightly.
  • Roast for 30 minutes & then uncover and roast for a further 30 minutes. Give the vegetables a good stir half way through & just before serving.
  • Tip the vegetables onto a platter and serve immediately, garnishing with fresh parsley & a sprig of fresh thyme.

5 cups cauliflower florets
5 cups broccoli florets
1 pound fresh asparagus, trimmed and halved
4 medium carrots, cut into matchsticks
1 medium red bell pepper, cut into matchsticks
1 medium red onion, sliced and separated into rings
½ cup olive oil
3 tablespoons lemon juice
3 cloves garlic, minced
1 tablespoon dried rosemary, crushed
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cauliflower, broccoli, asparagus, carrots, bell pepper, and onion in a large bowl.
  • Whisk olive oil, lemon juice, garlic, rosemary, salt, and pepper together in a small bowl until blended. Drizzle over vegetables and toss to coat. Transfer to 2 rimmed baking sheets.
  • Roast in the preheated oven, tossing occasionally, until tender, 20 to 25 minutes.

4 tbsp olive or vegetable oil
6 medium carrots, ends trimmed
6 small parsnips, ends trimmed
4 small onions
1 small swede, cut into thick wedges
large knob of butter, to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Pour 3 tbsp of the oil into a roasting tin, scatter and roll the vegetables in the oil and season with salt and pepper. Drizzle with the remaining oil. Can be prepared to this stage up to an hour ahead.
  • Roast the vegetables for 45-55 mins until tender and golden brown. Brush with butter before serving.

1 broccoli head, cut into florets
2 sweet potatoes, peeled and diced
2 red peppers, cut into chunks
2 courgettes, diced
1 red onion, cut into thin wedges
200g cherry tomatoes
3 garlic cloves, crushed
3 tbsp olive oil

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the broccoli, sweet potatoes, red peppers, courgettes, onion, garlic and tomatoes into a bowl and add the olive oil along with plenty of salt and pepper. Toss well, then tip onto a large baking tray or two smaller trays, ensuring everything is in an even layer.
  • Put in the oven and roast for 35-40 mins, tossing halfway, until cooked through and lightly caramelised.

8 zucchini, peeled and chopped
1 eggplant, peeled and diced
8 carrots, diced
16 cherry tomatoes
2 red onions, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ cup olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
2 bay leaves, crushed
1 teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon grated lemon zest
salt and pepper to taste

Steps:

  • In a large bowl mix the zucchini, eggplant, carrots, tomatoes, onions and peppers with the oil, rosemary, thyme, bay leaves, oregano, garlic, lemon juice, lemon zest, salt and pepper. Cover and chill for at least 2 hours, and preferably overnight.
  • Preheat oven to 400 degrees F (200 degrees C).
  • On a large roasting pan, roast the vegetables, uncovered, for 20 minutes, or until the tomatoes have split and the edges of some of the vegetables are starting to crisp. Remove from the oven and stir before returning to the oven for another 20 minutes. At this time reduce heat to 200 degrees F (95 degrees C) and continue cooking until vegetables are tender, turning every 20 minutes.

1kg mixed roots - we used carrots, parsnips and swede - cut into batons and halved
220g new potatoes , halved
3 garlic cloves , skin left on
4 rosemary sprigs
4 thyme sprigs
2 tbsp olive oil
50g pack mixed snacking nuts or seeds
45g vegetarian feta
2 tbsp olive oil
1 small pack parsley , finely chopped
1 lemon , juiced

Steps:

  • Heat oven to 200C/180C fan/gas 5. Tip the roots, potatoes and garlic cloves into a large roasting tin. Nestle the herbs in amongst them, then drizzle with olive oil and toss, so everything is well coated. Season and roast for 50 mins, or until all the vegetables are tender.
  • Squeeze the roasted garlic out of its skin and blitz with the rest of the dressing ingredients. Alternatively, you can whisk these together in a small bowl. Toss the roots in the dressing, scatter over the nuts, feta and serve.

1 garlic bulb, halved
