How to Make Crispy Baked Buffalo Chicken Hot Wings image

Spicy with a kick of vinegar, these crispy baked buffalo chicken hot wings will leave the plate in no time. To serve, make sure you have lots of blue cheese dip (store-bought or the dip below) and celery. Easily double, triple, or quadruple for a crowd.

1 pound chicken wings, separated at joints, tips discarded
4 tablespoons unsalted butter
1/3 cup hot pepper hot sauce (suggested brand: Frank's Red Hot)
1/2 teaspoon garlic powder
Salt
Celery, for serving
1/2 cup sour cream
1/2 cup mayonnaise
6 ounces crumbled blue cheese
1 tablespoon minced parsley
Salt and fresh ground pepper

Steps:

  • Heat oven to 400 degrees F. Set a wire rack inside a large rimmed baking sheet.
  • Season wings with salt. Spread out in one layer on wire rack. Bake until cooked through and crispy, 35 to 45 minutes.
  • Melt butter in a saucepan over medium heat. Remove saucepan from the heat, and then stir in hot sauce and garlic powder. Season with salt, to taste.
  • Toss the baked chicken wings in the sauce and serve with celery and blue cheese dip.
  • Stir mayonnaise, sour cream, blue cheese, and parsley together in a bowl. Season with salt and pepper, to taste.

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

Everyone loves buffalo wings, but getting out a big pot of fryer oil is often the reason we don't get to enjoy them as often as we should. With this secret technique, you can enjoy crispy, crunchy buffalo wings just about anytime - without any fry oil! The best part is this blue cheese dressing is perfect for everything from pizza to salad, and wings.

2 lb chicken wings, cut at the joints
1 teaspoon baking soda
½ teaspoon granulated garlic
½ teaspoon salt
1 tablespoon grapeseed oil
black pepper
2 cups water, 100%
1 tablespoon salt, 1%
1 teaspoon sugar
1 teaspoon black peppercorn
5 cloves garlic, crushed
1 cup Frank's Red Hot® Sauce
4 tablespoons butter
3 oz blue cheese
2 tablespoons Kewpie Mayo
½ cup yogurt
1 bunch chives, sliced
1 tablespoon dill, dried or fresh
water, (to consistency)
salt
black pepper

Steps:

  • Whisk brine together and allow to dissolve.
  • Submerge wings and refrigerate for 12 hours.
  • Remove from brine and pat dry before using
  • Toss wings with salt, pepper, garlic powder, and baking soda. Coat with oil.
  • Place on a wire rack (very important for air flow)
  • Bake at 450F for 18-25 minutes until golden brown and crispy.
  • For the dressing, combine all and adjust consistency with water. Season to taste.
  • Toss with warmed hotsauce & butter.
  • Devour!

Especially from the clean up crew! lol I have changed this recipe to include instructions on fresh OR frozen wings. Please let me know what you think. Update: This weekend made these again! Seasoned with garlic powder and cajun seasoning and grilled them starting with a preheated grill set to high. Oiled grill racks and seared each side of the chicken, then cooked over low to perfectly done and brown, crispy perfection. Removed from grill and tossed in sauce! Again, no messy pan to clean! :)

5 lbs chicken wings
2 tablespoons cajun seasoning, Tony Cachere's is really good
1 tablespoon garlic powder
12 ounces Frank's red hot sauce
1/2 cup butter or 1/2 cup margarine
2 tablespoons apple cider vinegar
celery rib (optional)
ranch dressing (optional)

Steps:

  • IF USING FROZEN WINGS: I buy IQF - individually quick frozen- chicken wings that come in a bag and have already been separated into two sections and tips removed. If using FROZEN wings DO NOT THAW just rinse chicken in a large strainer to remove any ice crystals.
  • IF USING FRESH/THAWED NOT FROZEN WINGS: Rinse chicken wings and follow directions starting at #3) BUT you may need to reduce your cooking time. I have not done them this way so I dont know how long they will take. Please watch them so they dont burn and do let me know how long they take to cook. Thanks!
  • Pat wings dry with some paper towels. They do not have to be perfectly dry-just get most of the water off.
  • Place wings in a large disposable foil roasting pan that has been sprayed or oiled well. I also take some foil and very loosely crumple it into balls and fill the pan so the wings can sit on the top of those and everything can drain off.
  • Season wings with cajun seasoning and garlic powder. Toss to coat.
  • Bake at 375°F until browned -about 30-40 minutes, using tongs flip each wing piece so that the browned side is down. Bake another 30 minutes or until chicken is browned and crispy all over. If you prefer them nice and crispy make sure to use a pan with a rack so that any liquid and grease can drain off.
  • Sauce: In microwave safe bowl, combine hot sauce, butter, vinegar and more garlic powder if desired.
  • Heat for about 2 minutes of until butter is melted and sauce is hot.
  • To Serve: Depending on the formailty of your party- lol- if you are having hot wings it isnt too formal is it?- you can serve directly from the foil pan OR place wings on a platter.
  • I like my wings to stay crispy after they are drenched in the sauce SO I serve them with the sauce on the side and allow guests to place the wings in a bowl and add sauce as desired. Some have them swimming and others- like me- dip each wing just before it is eaten. The crispiest!
  • Update: This weekend made these again! Seasoned with garlic powder and cajun seasoning and grilled them starting with a preheated grill set to high.
