CHEESY COUNTRY HAM DIP

Ingredients

One 10-ounce package sliced country ham, such as Smithfield
Two 8-ounce blocks cream cheese, at room temperature
1 cup shredded extra-sharp Cheddar
1 cup sour cream
1 teaspoon garlic powder
1 large shallot, grated (about 1/3 cup)
Freshly ground black pepper
1 cup pecans, chopped
1 tablespoon unsalted butter, melted
1 teaspoon Worcestershire sauce
Butter crackers, corn tortilla chips (not too thin) and sliced celery, for serving

Steps:

Preheat the oven to 350 degrees F.
Place the ham slices on a microwave-safe dish lined with paper towels. Cover the ham with a damp paper towel and microwave on low heat until the ham is slightly crisp on the edges and the fat is absorbed in the paper towels, 2 to 3 minutes.
Remove the ham from the microwave and discard the paper towels. Using two forks, shred the ham into small bite-size pieces. Place the ham into a large mixing bowl.
Add the cream cheese, Cheddar, sour cream, garlic powder, shallot and 1 teaspoon black pepper to the mixing bowl and stir to combine. Spread the ham and cheese mixture into a 9-inch pie plate. Set aside.
In a small mixing bowl, combine the pecans, butter and Worcestershire sauce. Sprinkle the seasoned pecans over the ham and cheese dip.
Bake the dip until hot and bubbly around the edges, 25 to 30 minutes. Serve warm with butter crackers, corn tortilla and celery.

Simple, but flavorful, spread that is great with crackers or celery. Any dipping mustard made with turmeric as the spice factor will work. This addition put the recipe over the top.

1 (8 ounce) package cream cheese, softened
2 ½ ounces sliced ham, chopped
2 green onions, chopped
2 tablespoons prepared English mustard with turmeric

Steps:

Beat cream cheese, ham, green onions, and English mustard together in a bowl. Cover bowl with plastic wrap and refrigerate 8 hours to overnight.

Great party dip! The recipe listed below is doubled. I usually make it doubled since we like it so much. Can be served with pork rinds for low carb. I serve it (when not on low carb) with Wheat Thins.

Ingredients

2 (8 ounce) packages Philadelphia Cream Cheese, room temperature
2 (5 ounce) cans canned flake ham (Hormel Chunky not deviled, like canned tuna, and chicken)
1/2 cup Hellmann's mayonnaise
1/4-1/2 cup sour cream (to thin)
4 -5 green onions, chopped, tops and all (more or less to your taste)
5 -6 dashes louisiana hot sauce, to taste
1 dash Accent seasoning (optional)

Steps:

Mix the cream cheese, ham and mayonnaise with mixer.
Add the chopped Onions, Louisiana Hot Sauce and Sour Cream by hand to thin to the right consistency.
Chill until set, several hours.
When set this can be rolled into a ball, or a half moon, and rolled/topped with chopped nuts if you want to fancy it up a bit.
But we don't usually wait for that.

2/3 cup mayonnaise
1-1/2 cups diced fully cooked ham
1 cup shredded Swiss cheese
1 tablespoon finely chopped green pepper
1 tablespoon spicy brown mustard
3/4 cup rye cracker crumbs
2 tablespoons butter, melted
Rye crackers

Steps:

In a small bowl, beat cream cheese and mayonnaise until smooth. Stir in the ham, cheese, green pepper and mustard. Spread into an ungreased 9-in. pie plate., Toss the cracker crumb and butter; sprinkle over cream cheese mixture. Bake, uncovered, at 400° for 12-15 minutes or until heated through. Serve with crackers.

Here's how easy it is: Spread the cream cheese on a piece of ham and wrap it around green onions or dill pickles. I've never tried sweet pickles, I wonder how those would be?
You could then cut these ham and cream cheese roll-ups into bite sized pieces and stick a toothpick in there to serve on a platter, or leave them rolled up with part of the onion hanging out, like you see pictured above.
Note that if your ham is a bit moist, you may need to dab it with a paper towel so the cream cheese won't slide all over and will spread more easily.

Melt the butter in a medium skillet over medium heat. Stir in the onions and continue cooking, stirring occasionally, until onions are soft and golden.
Add the remaining ingredients and, with the heat still on low, continue stirring until everything is well combined.
