HAM AND NOODLE CASSEROLE
This is one of my favorite ways to use leftover ham.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

Steps:
- In 3-quart saucepan, heat broth and water to boiling. Add noodles; return to boiling. Reduce heat to medium-low; cook 8 to 10 minutes or until noodles are tender and most of liquid is absorbed, stirring occasionally (do not drain).
- Meanwhile, cook vegetables as directed on box.
- Gently stir vegetables in cheese sauce and ham into noodle mixture. Cook over medium-low heat 3 to 4 minutes or until hot, stirring occasionally.

- Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
- Cook egg noodles just until al dente, according to package instructions. Drain.
- While the noodles are cooking, place mustard, ham, condensed soup, and optional frozen green beans in a large bowl.
- Pour the drained, cooked, hot noodles over the rest of the ingredients in the bowl and stir to combine.
- Transfer noodle mixture to prepared baking dish. Top with grated cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil, return to the oven (uncovered) for 20-25 more minutes, or until cheese is melted and casserole is heated through.

- Cook noodles according to package directions. Meanwhile, in a saucepan, melt 1 tablespoon butter; stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted., Drain noodles. Add the noodles, ham and peas to cheese sauce. Need a simple casserole sure to please the kids? I served this to friends who later left for Kenya...their girls were pining for it overseas, and you can bet I served it to them again when they returned to the States for a visit!
