Frozen fruit cups are a classic, refreshing snack with loads of fruit suspended in an icy slush. With oranges, pineapple, peaches and bananas.

1/2 cup water
1/2 cup granulated sugar
1 cup 7-Up
6 ounces canned frozen orange juice concentrate (thawed)
8 ounces canned frozen lemonade concentrate (thawed)
8 ounces package frozen strawberries (about 2 cups, thawed and chopped)
8 ounces canned fruit cocktail (drained)
20 ounces crushed pineapple (drained)
15 ounces peaches (drained and chopped)
30 ounces mandarin oranges (drained)
2 bananas (peeled and cut in small pieces)

Steps:

  • In a large bowl, stir together water and sugar until sugar is dissolved. Add the remaining ingredients and stir well.
  • Divide mixture into small plastic cups and freeze for about 6 hours. Remove from the freezer about 20 - 30 minutes before serving.

4 cups frozen peaches, thawed and chopped into large chunks
2 cans mandarin oranges, drained
2 cans crushed pineapple, drained
1 can fruit cocktail, drained
6 medium firm bananas, chopped into chunks
1 small can frozen pineapple-orange juice concentrate, thawed
1/3 cup lemon juice

Steps:

  • Combine the peaches, oranges, pineapple, fruit cocktail, bananas, juice concentrate and lemon juice in a bowl and mix until combined. Place in small disposable plastic cups and cover with plastic wrap or foil. Freeze until firm. Remove from the freezer 45 minutes to 1 hour before serving to thaw.

  • In a large bowl, combine all ingredients. Pour into foil-lined muffin cups or individual plastic beverage glasses. Freeze until solid. When ready to serve, thaw for 30-45 minutes before serving.

It is very safe to say that I am addicted to making fruit cups. We eat them every morning for breakfast, and I am constantly trying new combinations of fruit. This is my latest- my favorite so far.

16 ounces frozen sweetened strawberries, thawed
12 ounces pineapple-orange juice concentrate, thawed
2 (20 ounce) cans crushed pineapple, undrained
2 (11 ounce) cans mandarin oranges, undrained
6 bananas, diced (yellow but not too ripe)
1/3 cup lemon juice (bottled is fine)
16 ounces frozen blueberries

Steps:

  • Combine all ingredients in a very large bowl.
  • Freeze in 1-cup increments.
  • Thaw slightly before serving, to a slushy consistency.

2 tablespoons lemon juice
¾ cup white sugar
⅛ teaspoon salt
1 (8 ounce) can crushed pineapple, with juice
¼ cup chopped maraschino cherries
3 bananas, peeled and diced
¼ cup chopped pecans

Steps:

  • In a large bowl, stir together the sour cream, lemon juice, sugar and salt until blended. Fold in the pineapple, cherries, bananas and pecans. Pour into paper lined muffin tins. Freeze until set, then transfer to resealable freezer bags for storage.

1 package (8 ounces) cream cheese, softened
1/2 cup sugar
1 jar (10 ounces) maraschino cherries, drained
1 can (11 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1/2 cup chopped pecans
1 carton (8 ounces) frozen whipped topping, thawed
Fresh mint, optional

Steps:

  • In a large bowl, beat the cream cheese and sugar until fluffy. Halve 9 cherries; chop the remaining cherries. Set aside halved cherries and 18 orange segments for garnish. Add the pineapple, pecans and chopped cherries to cream cheese mixture. Fold in whipped topping and remaining oranges. , Line muffin cups with paper or foil liners. Spoon fruit mixture into cups; garnish with reserved cherries and oranges. Freeze until firm. Remove from the freezer 10 minutes before serving. Top with mint if desired.
