EASY CHICKEN ENCHILADA SOUP

Pressure cooker or slow cooker! Super easy set-it-and-forget-it meal, with all the enchilada taste in a soup. Garnish with cilantro, avocado, red onion, shredded cheese, sour cream, and tortilla strips or chips.

Ingredients

2 pounds skinless, boneless chicken breast halves
2 (14 ounce) cans black beans, rinsed and drained
2 cups chicken stock
1 (15 ounce) can whole kernel corn, drained
1 (14 ounce) can fire-roasted diced tomatoes, with juice
1 (10 ounce) can enchilada sauce
1 (4 ounce) can diced green chiles
1 white onion, diced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon ground cumin

Steps:

Combine chicken breasts, black beans, chicken stock, corn, tomatoes, enchilada sauce, green chiles, onion, garlic, salt, and cumin in a multi-functional pressure cooker. Close and lock the lid. Select Stew mode and cook on high pressure according to manufacturer's instructions; set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove chicken, shred it with 2 forks, and return it to the soup.

Here is a quick & easy soup you are sure to enjoy, it is from my friend Beverly in Iowa, it is made in the crock pot. Not complicated and quite tasty. Give it a try real soon. All you need to add are tortilla chips and a hearty appetite.

1 can(s) cream of chicken soup
1 can(s) chicken
1 can(s) green chilies
1 can(s) chicken broth
1 can(s) enchilada sauce
2 cup(s) cheddar cheese
1 package(s) 8 oz. cream cheese
1 - bag tortilla chips

Steps:

Add all ingredients to crockpot. Stir to mix, and heat through till hot. Follow manufactures directions. Serve with tortilla chips. About 1 1/2 to 2 hours.

1 pound skinless, boneless chicken breast halves
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can diced tomatoes including juice
1 (14.5 ounce) can chicken broth
1 (10 ounce) can enchilada sauce
1 (4 ounce) can diced green chiles
1 white onion, chopped
¼ cup chopped fresh cilantro
2 bay leaves
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon salt
¼ teaspoon ground black pepper, or to taste

Steps:

Rinse and pat dry the chicken breasts, then place into the bottom of a slow cooker. Add the corn, tomatoes, chicken broth, enchilada sauce, green chiles, onion, cilantro, bay leaves, garlic, cumin, chili powder, salt, and black pepper.
Cook on Low for 6 hours. Transfer the chicken to a large plate, then shred the meat with two forks. Return the chicken to the slow cooker and continue cooking for 30 minutes to 1 hour.

Place the chicken thighs in the bottom of a 5 quart or larger slow cooker. Sprinkle with salt and pepper.
To the slow cooker, add the garlic, onion, diced chipotle peppers, adobo sauce, diced tomatoes, cumin, coriander, green chilis, drained black beans, and drained Mexicorn. Pour 3 cups of the chicken stock over the top. Cover and slow cook on high for 2 hours or low for 6 hours, until the chicken is cooked through.
With a fork, remove the chicken thighs from the soup, then shred. Return the chicken to the soup, and add additional chicken stock to the slow cooker if it seems too thick. Recover the slow cooker and cook on high to rewarm for a few minutes as needed. Serve hot with desired toppings.
