2-LAYER TRES LECHES CAKE RECIPE BY TASTY

2-Layer Tres Leches Cake Recipe by Tasty image

So, you've been tasked with baking a cake. Think beyond the usual suspects - angel food, carrot cake, even red velvet - and opt for something totally original, like this two-layer tres leches cake. This traditional Mexican dessert is topped with whipped cream and drizzled with a mixture of evaporated, condensed, and coconut milk. It's surprisingly easy, but it looks (and tastes) very impressive.

Time 25m

Yield 8 servings

Number Of Ingredients 15

1 ¾ cups all-purpose flour
1 tablespoon baking powder
¾ teaspoon kosher salt
¼ teaspoon ground cinnamon
6 large eggs
1 ¼ cups granulated sugar
¼ cup whole milk
½ teaspoon vanilla extract
nonstick cooking spray, for greasing
½ cup evaporated milk
½ cup coconut milk
14 oz condensed milk, 1 can
2 cups heavy whipping cream
¼ cup powdered sugar
assorted berry, for serving, optional

Steps:

  • Whisk the flour, baking powder, salt, and cinnamon together in a medium bowl.
  • In a separate large bowl, beat the eggs and sugar together with an electric mixer until light, fluffy, and nearly doubled in size, 6-8 minutes.
  • Using a spatula, gently fold in the flour mixture until just combined (some streaks of flour are okay).
  • Preheat the oven to 350°F (180°C).
  • Combine the milk and vanilla extract in a liquid measuring cup or small bowl, then gently fold into the batter, mixing just to blend.
  • Spray 2 9-inch (23 cm) round cake pans with nonstick cooking spray. Divide the batter between the pans.
  • Bake until the cakes are golden brown around the edges and spring back slightly when pressed in the center, about 20-25 minutes.
  • While the cakes are baking, combine the evaporated milk, coconut milk and condensed milk in a liquid measuring cup or small bowl and whisk to blend.
  • Once the cakes are done, immediately remove the cakes from the pans and invert them onto a wire rack or baking sheet. Cool for 2 minutes. Then, poke the cakes all over with a fork.
  • Return the cakes to the pans. Drizzle the condensed milk mixture over the cakes, letting it soak in. Let sit for 15 minutes.
  • In a medium bowl, whip the heavy cream and powdered sugar with an electric hand mixer until stiff peaks form.
  • Carefully transfer one of the cakes to a cake stand.
  • Spread a layer of the whipped cream over the cake. Place the other cake on top and spread with the remaining whipped cream.
  • Decorate with berries, if desired.
  • Slice and serve.
  • Enjoy!

Categories     Dessert

Time 2h40m

Number Of Ingredients 15

1 cup all-purpose flour
1 1/2 tsp baking powder
5 eggs (separated)
3/4 cup white granulated sugar (divided)
1/3 cup milk (* I use 1%)
1/2 tsp vanilla
1 tsp lime zest
1 tbsp rum (* or 1 tsp rum extract)
200 ml coconut milk (1/2 a 400 ml can of coconut milk) (* I use light)
150 ml sweetened condensed milk (1/2 of a 300 ml can )
1 tsp vanilla
1 tbsp fresh lime juice
unsweetened coconut flakes (* Can use toasted coconut, if desired)
rainbow sprinkles (* I use rainbow jimmies- jimmies are bigger sprinkles)
lime twist

Steps:

  • Preheat oven to 350 degrees F. Spray a 8 x 8-inch can pan with non-stick cooking spray or use Wilton Cake Release (see post)
  • Stir flour with baking powder in a medium bowl.
  • In a separate medium mixing bowl, beat egg whites, using an electric mixer on high, until foamy.
  • Gradually add about a 1/4 of the sugar and continue beating whites until stiff peaks form when beaters are lifted, 2 to 3 minutes. (see directions in post Videos)
  • Using same beaters (no need to wash), in another separate large mixing bowl, beat yolks with remaining sugar until pale yellow, 1 to 2 minutes. Reduce mixer speed to low.
  • Gradually beat in flour mixture, then milk and 1/2 tsp vanilla, until smooth. Blend in lime zest and rum.
  • Stir a third of egg whites into yolk mixture, using a rubber spatula, then carefully fold in remaining egg whites until no streaks remain. Pour into prepared pan.
  • Bake in centre of oven until springy and a skewer inserted into the centre of cake comes out clean, 30 to 35 min. Cool completely on a rack, about 1 hour.
  • Whisk coconut milk with condensed milk, 1 tsp vanilla and lime juice in a small bowl until combined. Poke top of cake all over with a skewer.
  • Pour half of coconut syrup over cake and let stand 5 minutes.
  • Run a knife around edges of cake and invert onto a rimmed serving platter. Poke bottom of cake all over with skewer.
  • Pour remaining syrup all over cake, spooning any excess drippings back onto the cake until it is absorbed, about 5 minutes. Refrigerate until fully chilled before serving, 1 to 2 hours.
  • Sprinkle unsweetened shredded coconut on cake, then rainbow sprinkles/jimmies.
  • Cut cake into 9 pieces, then add a twist of lime to each piece when served. (See post video on how to make a lime twist garnish)

COCONUT-LIME TRES LECHES CAKE

Coconut-Lime Tres Leches Cake image

As someone whose greatest fear in life is dry cake, Tres Leches Cake holds a special place in my heart, as it is impossible not to be dry. While its exact origins are unknown, it is popular all over Latin America, especially in Mexico and Nicaragua, and I fell in love with it through my husband's love of Mexican food. This version has toasted coconut and lime, two flavors that go deliciously with the milky creamy flavors of Tres Leches cake.

Time 3h15m

Yield 15 servings

Number Of Ingredients 20

Nonstick cooking spray, for the pan
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
1/4 teaspoon ground cinnamon
6 large eggs, separated
1 cup granulated sugar
1/2 cup whole milk
1 teaspoon vanilla extract
Zest of 1 lime
1 cup toasted coconut
One 14-ounce can sweetened condensed milk
One 12-ounce can evaporated milk
1/2 cup whole milk
1 1/2 cups heavy cream
1 tablespoon powdered sugar
1/2 teaspoon ground cinnamon
Pinch kosher salt
1/2 cup toasted coconut
Zest of 1 lime

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease the bottom of a 9-by-13-inch baking pan with cooking spray. Set aside.
  • Whisk together the flour, baking powder, salt and cinnamon in a medium bowl. Set aside.
  • Beat the egg whites in a stand mixer fitted with a whisk attachment on medium speed until foamy, about 1 minute. With the mixer still on, slowly add 1/4 cup granulated sugar. Continue until shiny medium-stiff peaks form, about 2 minutes. Remove the egg whites to a medium bowl and set aside.
  • Add the egg yolks and remaining 3/4 cup granulated sugar to the same bowl of the stand mixer with the same whisk attachment (no need to wash). Beat on medium speed until pale yellow and doubled in volume, 1 to 2 minutes. Add the milk and vanilla, then the lime zest and coconut, beating constantly. Reduce the speed to low and add the flour mixture until just combined.
  • Using a rubber spatula, gently fold the egg white mixture into the batter in 3 additions until the egg whites are no longer visible.
  • Pour the batter into the prepared pan and bake until a tester comes out clean, 18 to 20 minutes. Transfer the pan to a rack and let cool slightly.
  • For the tres leches: Whisk together the sweetened condensed milk, evaporated milk and whole milk in a large measuring cup with a spout. Using a round metal skewer or a fork, poke holes all over the top of the cake, but don't go all the way down to the bottom (this will help the cake absorb the milk!). Pour the milk all over the cake very slowly and a little at a time (this will help distribute the milk throughout the cake). When all of the milk has been poured into the cake and absorbed, cover and refrigerate 2 to 3 hours, preferably overnight.
  • For the topping: Combine the heavy cream, powdered sugar, cinnamon and salt in a stand mixer fitted with the whisk attachment. Beat on medium-high speed until soft peaks form, 1 to 2 minutes. Dollop, then spread over the top of the cake. Sprinkle with the coconut, then then the lime zest. Cut into 15 rectangles. Serve immediately or store in the refrigerator.

COCONUT TRES LECHES CAKE

Coconut Tres Leches Cake image

Tres Leches Cake, popularized in many Latin countries, is one of my favorite cakes; sweet, super moist and rich, but not heavy. It's typically made with a yellow or white cake that gets soaked with three types of milk: evaporated milk, sweetened condensed milk and whole milk or cream, and topped with fluffy whipped cream. I wanted to make a non-dairy version, so I went with a blend of almond and coconut milk and topped it with coconut whipped topping. It gives this cake a tasty and unique flavor twist. I also opted for a box cake mix for the batter to save time. I hope you love it as much as I do!

Time 11h35m

Yield 10 to 12 servings

Number Of Ingredients 7

One 16.25-ounce box dairy-free white cake mix, such as Duncan Hines
2 cups full-fat almond milk
Two 7.4-ounce cans sweetened condensed coconut milk
One 13.5-ounce can coconut milk, well shaken
1 teaspoon vanilla extract
One 9-ounce container frozen non-dairy coconut whipped cream, thawed
1 cup sweetened coconut flakes, toasted (see Cook's Note)

Steps:

  • Bake the cake in a 9-by-13-inch baking dish, following the package instructions. Let cool for 30 minutes.
  • In a large bowl, whisk together the almond milk, sweetened condensed coconut milk, coconut milk and vanilla.
  • Poke holes all over the cake. Pour the milk mixture over the top, a little at a time, letting it soak, so that the liquid doesn't overflow. Cover and let soak in the refrigerator for at least 10 or up to 24 hours. (The cake should have absorbed all of the liquid, and there should be no liquid pooled on the top or sides.)
  • Spread the whipped cream evenly over the cake, then sprinkle the toasted coconut all over the top. Serve chilled or at room temperature.

EASY TRES LECHES CAKE

Easy Tres Leches Cake image

I wanted to make a simple, quick Tres Leches cake for my family. Too many recipes I'd found called for fruit, or meringue, or coconut -- which detracts from the rich milk flavor.

Provided by Debtex

Categories     Dessert

Time 45m

Yield 1 cake, 15-18 serving(s)

Number Of Ingredients 7

1 (18 1/4 ounce) box white cake mix
4 large eggs
1 1/4 cups water
1 cup heavy cream
1 (12 ounce) can evaporated milk
1 (14 ounce) can sweetened condensed milk
whipped cream

Steps:

  • Preheat over to 350º.
  • Grease or "pam" 9x12 baking pan.
  • Beat eggs in a large bowl.
  • Add water and cake mix and beat 3 minutes.
  • Pour batter into pan.
  • Bake for 30 minutes, or until cake has lost its jiggly center and springs back when touched.
  • Let cool to room temperature.
  • Mix the 3 milks.
  • Poke cake full of holes. A chopstick works great for this. Don't skimp on the holes; that's what allows the cake to absorb the milks.
  • Pour the milk mixture over the cake slowly, until it's absorbed the liquid.
  • Refrigerate until ready to serve.
  • Serve as desired. If you're serving company, you might cover the cake with whipped cream and fruit; you might just drizzle heavy cream over each serving; you might puree a carton of frozen strawberries and use that as a base to serve slices on.
