CHEESY TUNA NOODLE CASSEROLE

This was a favorite in my home growing up and now it's a favorite of my family as well. I double the recipe these days for my husband and three children. For a change of pace I add canned chopped green chilies and 1/8 teaspoon cayenne, use pasta shells or spirals, or top the casserole with sliced American or cheddar cheese instead of breadcrumbs.

1 (12 ounce) package egg noodles
2 tablespoons vegetable oil
¼ cup chopped onion
¼ cup chopped green bell pepper
¼ cup red bell pepper, chopped
1 (11 ounce) can condensed cream of Cheddar cheese soup
1 (5 ounce) can tuna, drained
¼ cup milk
¼ teaspoon salt
ground black pepper to taste
¼ cup Italian seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil; place noodles in water and bring to boil again. Cook until al dente; drain well.
  • While noodles are cooking saute in a medium size saucepan vegetable oil, onion, green and red bell peppers. Saute until tender.
  • Pour soup, tuna, milk, salt and black pepper into the saucepan. Mix well over medium-low heat.
  • Fold the noodles into the saucepan.
  • Pour entire mixture into a 2 quart casserole. Sprinkle bread crumbs over the mixture. Bake 20 to 30 minutes or until the top is crisp and golden brown.

3 cup dried wide egg noodles
0.25 cup butter
1 cup chopped red sweet pepper
1 cup chopped celery (2 stalks)
0.25 cup chopped onion
0.25 cup all-purpose flour
1 - 2 tablespoon Dijon-style mustard
0.5 teaspoon salt
0.25 teaspoon ground black pepper
2.25 cup milk
1 12 ounce can chunk white tuna (water pack), drained and broken into chunks; two 5-ounce pouches chunk light tuna in water, drained; or two 6-ounce cans skinless, boneless salmon, drained
1 cup cubed cheddar cheese
0.5 cup panko (Japanese-style bread crumbs) or soft bread crumbs
0.25 cup freshly grated Parmesan cheese (1 ounce)
1 tablespoon snipped fresh parsley
1 tablespoon butter, melted

Steps:

  • Lightly grease a 2-quart rectangular baking dish; set aside. In a large saucepan cook noodles according to package directions; drain. Return noodles to pan.
  • Meanwhile, for sauce, in a medium saucepan heat 1/4 cup butter over medium heat until melted. Add sweet pepper, celery, and onion; cook for 8 to 10 minutes or until tender, stirring occasionally. Stir in flour, mustard, salt, and black pepper. Gradually stir in milk. Cook and stir until slightly thickened and bubbly.
  • Gently fold sauce, tuna, and cheddar cheese into cooked noodles. Transfer noodle mixture to the prepared baking dish. In a small bowl stir together panko, Parmesan cheese, and parsley; stir in melted butter. Sprinkle crumb mixture over noodle mixture. (To serve today, omit Step 4. Continue as directed in Step 5, except bake, uncovered, for 25 to 30 minutes.)
  • Cover baking dish with plastic wrap, then with foil. Freeze for up to 1 month. To serve, thaw in the refrigerator overnight (casserole may still be a bit icy).
  • Preheat oven to 375°F. Bake, uncovered, for 65 to 75 minutes or until heated through. Let stand for 5 minutes before serving.

2 cups green peas (cooked)
1 1/2 cups shredded sharp cheddar cheese
2 (6-ounce) cans tuna (drained and flaked)
1/2 cup milk
1/2 teaspoon salt (or to taste)
Freshly ground black pepper (to taste)
1 cup soft breadcrumbs
2 tablespoons butter (melted)

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Spray a 2 1/2- to 3-quart casserole dish with cooking spray.
  • Combine the noodles, soup, peas, cheese, tuna, and milk. Add salt and freshly ground black pepper. Spoon into the prepared baking dish.
  • In a small bowl, toss the breadcrumbs with the melted butter and sprinkle over the top of the casserole.
  • Bake for 15 to 20 minutes until hot and bubbly and the breadcrumbs are browned.

1 tablespoon vegetable oil
1 (10.75 ounce) can condensed cream of mushroom soup
1 (15 ounce) can mixed vegetables, drained
1 (5 ounce) can tuna, drained
2 cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add 1 tablespoon oil to the water to prevent sticking. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
  • In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese. 1 tablespoon olive oil
1 tablespoon salt
1 (8 ounce) package processed cheese food (such as Velveeta®), cut into cubes
3 (5 ounce) cans chunk light tuna in water, drained
1 (15 ounce) can peas, drained
2 (10.75 ounce) cans condensed cream of celery soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 teaspoon ground black pepper
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain noodles and return to the pot. Pour olive oil and salt over the drained noodles; stir.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Put processed cheese food cubes into a large, microwave-safe bowl. Steps:

  • Place spiralized zucchini (zoodles) into a pot and cover with well salted water; bring to a boil. Boil for 3 to 4 minutes, then empty into a colander to drain. Let drain for 2 to 3 hours, occasionally pressing out as much moisture as you can.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a 9x13-inch glass casserole with cooking spray and add drained zoodles.
