ONE-SKILLET CHEESY BEEF AND MACARONI
This is total comfort food; a one dish recipe, with even the pasta cooking in the same skillet.

Steps:
- Heat a very large skillet (for this full recipe, it should be a deep 12-inch pan) over medium high heat and brown the beef, stirring until no pink remains, about 5 minutes. Drain the beef and set aside.
- Wipe out the skillet, add the oil, and heat it over medium heat. Add the peppers, carrots, onion and garlic and sauté until almost tender, about 5 minutes.
- Add the ground beef back to the skillet, as well as the basil, oregano, tomatoes with their juice, water, Worcestershire sauce, and chili powder if using. Season with salt and pepper, turn the heat to high, and bring to a simmer. Add the pasta, stir and cover. Lower the heat to medium and simmer covered, stirring occasionally, until the pasta is tender, and most of the liquid is absorbed, 8 to 10 minutes. Taste and season again if needed.
- Sprinkle the cheese over the casserole then cover for just 1 more minute until the cheese is melty, and serve. Serve this right out of the pan.

- Heat oil in a large skillet over medium-high heat. Add ground beef and break apart with a spoon or spatula. Add onion, seasoned salt, black pepper and Worcestershire sauce. Cook, stirring often until beef is browned and onions are translucent. (About 5 minutes). Drain and return to skillet.
- Add pasta and chicken stock. Cook, stirring occasionally until just cooked. (About 8 minutes.)
- *There will still be a lot of liquid in the pan. This is normal!
- Add cream cheese or Neufchatel in chunks and stir until completely melted and incorporated.
- Remove from heat. Let stand 5 minutes and add salt and pepper as needed.

- Bring 1-1/2 qt. (6 cups) water to boil in large saucepan. Stir in Macaroni; cook 7 to 10 min. or until tender, stirring occasionally.
- Meanwhile, brown meat in large skillet on medium heat; drain. Add Cheese Sauce Mix and all remaining ingredients except macaroni; mix well. Simmer on medium-low heat 5 min. or butter is completely melted and meat mixture is heated through, stirring occasionally.
- Drain macaroni. Add to ingredients in skillet; mix lightly.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 11x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain. Transfer to a bowl, add processed cheese cubes, and let stand until cheese partially melts.
- Place ground beef in a skillet over medium heat, break meat apart with a spatula, and sprinkle with garlic powder, onion powder, salt, and black pepper. Cook and stir until beef is browned and crumbly, about 10 minutes. Drain excess grease.
- Stir Cheddar cheese soup, sour cream, Parmesan cheese, and onion together in a bowl; gently fold macaroni and processed cheese mixture into soup mixture. Stir in milk until thoroughly combined. Mix ground beef into macaroni mixture and spread into prepared baking dish. Top casserole with slices of American cheese and sprinkle cracker crumbs on top. Cover casserole with aluminum foil.
