I have dreams of someday opening a Bed and Breakfast. I have collected some great breakfast dishes preparing for that someday. Some I have eaten at B&B's around the country. This particular recipe came from a B&B in Northern Vermont that we visited in the fall of 2001 when the colors were in full bloom.

4 slice white sandwich bread
1 medium onion, chopped
1 c fresh mushrooms, sliced
2 Tbsp butter,unsalted
1 c cooked ham, chopped
1 c cheddar cheese, shredded
1 c swiss cheese, shredded
1 Tbsp all purpose flour
1 1/4 c milk
6 large eggs, beaten
1 Tbsp dry mustard, i prefer coleman's
1/4 tsp garlic powder with parsley
parsley for garnish

Steps:

  • 1. Place bread slices in the bottom of a lightly greased 8 inch square baking dish; set aside.
  • 2. Saute` onion and mushrooms in butter until tender; spoon evenly over bread. Top with ham.
  • 3. Combine cheeses and flour; sprinkle over ham.
  • 4. Combine milk, eggs, dry mustard and garlic powder; pour over cheese. Cover and chill 8 hours.
  • 5. Remove from refrigerator and let stand for 30 minutes. Bake at 375-degrees for 35 minutes or until set.
  • 6. Let stand for 10 minutes before serving. Garnish with parsley.

4 cups French bread, day-old and cubed
2 cups cheddar cheese, shredded
10 eggs, lightly beaten
4 cups milk (1 quart)
1 teaspoon mustard powder
1 teaspoon salt
1/4 teaspoon onion powder
fresh ground pepper, to taste
8 -10 slices bacon, fried crispy and crumbled
1/2 cup mushroom, sliced
1/2 cup tomatoes, peeled and chopped

Steps:

  • Generously butter 9x13-inch baking dish.
  • Arrange bread cubes in dish and sprinkle with cheese.
  • Beat together next 5 ingredients with pepper to taste and pour evenly over bread and cheese.
  • Sprinkle with bacon,mushrooms,and tomatoes.
  • Cover and chill at least 12 but up to 24 hours.
  • Preheat oven to 325°F.
  • Bake casserole uncovered until set, about 1 hour (tent with foil if top begins to over brown).

1 pound bacon strips, chopped
1 cup chopped sweet onion
1/2 large sweet red pepper, chopped
1/2 large green pepper, chopped
9 large eggs, lightly beaten
1-1/2 cups whole-milk ricotta cheese
4 cups frozen riced cauliflower, thawed
2 cups shredded cheddar cheese
1 cup shredded Swiss cheese
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan. , Add onion and chopped peppers to drippings; cook and stir over medium-high heat until tender, 6-8 minutes. In a large bowl, whisk eggs and ricotta. Stir in riced cauliflower, shredded cheeses, bacon, onion mixture, pepper and salt. Pour into a greased 13x9-in. baking dish. Bake, uncovered, until a knife inserted near the center comes out clean, 40-45 minutes. Let stand 10 minutes before serving., Freeze option: Cool baked casserole completely; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 medium onion, chopped
1 medium green bell pepper, chopped
6 eggs
1 cup milk
1 tablespoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups shredded mozzarella cheese
1 cup crumbled feta
2 plum tomatoes, sliced
1 tablespoon oil
1 (20 ounce) package shredded hash browns

Steps:

  • Cook sausage on medium heat 5 min, until brown and crumbly. Add onion and bell pepper. Cook 5 min until tender.
  • Beat eggs in large bowl. Add milk, seasonings, and cheese. Mix well.
  • Pour oil in large skillet, coat bottom. Spread hash browns on bottom and up sides of pan. Pour egg mix on top. Cover and cook on medium 10-15 min, until eggs are set.

1 1/4 cups milk
4 large eggs, beaten
1 tablespoon prepared mustard
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Place bread slices in bottom of a lightly greased 8-inch square baking dish; set aside.
  • Saute onion and mushrooms in butter until tender; spoon evenly over bread.
  • Top with ham.
  • Combine cheeses and flour; sprinkle over ham.
  • Combine milk and next 4 ingredients; pour over cheese.
  • Cover and chill 8 hours.
  • Remove from refrigerator, and let stand at room temperature 30 minutes.
  • Bake at 375 degrees for 35 minutes or until set.
  • Let stand 10 minutes before serving.
