HOLIDAY BEEF BRISKET
When I was a child, my mom would make her Holiday Beef Brisket on Jewish holidays and other special occasions. Everyone gathered around the table to enjoy the tender slices of meat alongside nicely browned carrots and potatoes. Those heart-warming meals evoked camaraderie and love for our family.

Steps:
- Place onions in a greased shallow roasting pan; top with brisket. Combine the ketchup, paprika and garlic powder; spread over brisket. Dissolve bouillon in hot water; pour into pan. Cover and bake at 325° for 1-1/2 hours. , Add the potatoes, carrots and celery. Cover and bake 1-1/4 to 1-1/2 hours longer or until meat and vegetables are tender., Remove brisket to a serving platter; let stand for 10 minutes. Thinly slice meat across the grain. Serve with vegetables.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Season the brisket on all sides with salt and pepper, and place in a glass baking dish. Cover with a layer of sliced onions. In a medium bowl, mix together the beer, chili sauce, and brown sugar. Pour over the roast. Cover the dish tightly with aluminum foil.
- Bake for 3 hours in the preheated oven. Remove the aluminum foil, and bake for an additional 30 minutes. Let the brisket rest and cool slightly before slicing and returning to the dish. Reheat in the oven with the sauce spooned over the sliced meat.

EASY BRISKET FOR HOLIDAYS OR ANYDAY!
This has been in my family for many years. I usually double the hot sauce because I like a bit of bite. It always turns out incredible and makes delicious leftovers. In fact I often use the leftovers for Shepherd's pie. Freezes well too. It will work in the slow cooker to perfection. An all-round winner. Enjoy!

Steps:
- Mix salt, pepper and paprika together and rub on brisket, putting more on fat side. Spread sliced onions on bottom of roasting pan and toss with garlic and oil. Put brisket on top of mixture, fat side up. Let marinate over night or continue on to sauce.
- Sauce: Mix beef stock and ketchup together then stir in the rest of the ingredients. Pour over and around brisket in the roasting pan. Cover and bake at 325 degrees for about 5 hours, turning the brisket over 1/2 way through cooking. You know it is done when the center of the roast takes a gentle knife slice very easily.
- Remove from oven and let sit for 10-15 minutes covered. Remove to a cutting board. When slicing, go against the grain of the meat so that the meat does not shred. Ladle sauce with onions over slices of brisket. Enjoy!

EASY BRISKET
I got this recipe from the Texas Beef Council. This recipe is quite delicious for its simplicity. I have made this brisket between 4-5 pounds also. But, did not change the ingredients. Just the cooking time. We also enjoy making sandwiches from the leftover Brisket. A roll, slaw and pickle on the sandwich is wonderful.

Steps:
- Preheat oven to 300°F.
- Combine Chili sauce, coke and soup mix in a bowl to make a sauce.
- Place Brisket in heavy foil baking pan. Or, use your own pan and foil line same.
- Pour sauce mix over Brisket.
- Cover with foil and seal edges around baking pan.
- Bake for 1 hour PER POUND (3-4 hrs for 3.5lb brisket).
- Let sit in oven for 1 hour more with oven off. Do not open oven.
- Carve in thin slices against the grain and serve pan juices over brisket and on the side as an extra sauce.
- Sauce will be thin.
