True Belgian Waffles image

It was on a visit to my husband's relatives in Europe that I was given this Belgian waffle recipe. These homemade waffles are great with any kind of topping: blueberries, strawberries, raspberries, fried apples, powdered sugar or whipped topping. -Rose Delemeester, St. Charles, Michigan

Yield 10 waffles (about 4-1/2 inches).

Number Of Ingredients 8

2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups whole milk
1 cup butter, melted
1 teaspoon vanilla extract
Sliced fresh strawberries or syrup

Steps:

  • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve with strawberries or syrup.

1 (.25 ounce) package active dry yeast
¼ cup warm milk (110 degrees F/45 degrees C)
3 egg yolks
2 ¾ cups warm milk (110 degrees F/45 degrees C)
¾ cup butter, melted and cooled to lukewarm
½ cup white sugar
1 ½ teaspoons salt
2 teaspoons vanilla extract
4 cups all-purpose flour
3 egg whites

Steps:

  • In a small bowl, dissolve yeast in 1/4 cup warm milk. Let stand until creamy, about 10 minutes.
  • In a large bowl, whisk together the egg yolks, 1/4 cup of the warm milk and the melted butter. Stir in the yeast mixture, sugar, salt and vanilla. Stir in the remaining 2 1/2 cups milk alternately with the flour, ending with the flour. Beat the egg whites until they form soft peaks; fold into the batter. Cover the bowl tightly with plastic wrap. Let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat the waffle iron. Brush with oil and spoon about 1/2 cup (or as recommended by manufacturer) onto center of iron. Close the lid and bake until it stops steaming and the waffle is golden brown. Serve immediately or keep warm in 200 degree oven.

  • Oil the waffle maker.
  • Sift the dry ingredients together in a large bowl.
  • In separate bowl, separate egg whites and beat until stiff peaks form.

¼ cup vegetable oil
1 tablespoon white sugar

I had Belgian waffles in the Hotel where we were staying and they were so good. I found out that the Hotel used a mix and I tried various recipes to try to get a match. I combined a few recipes to get this one and I think it is very close to the original.

1/2 cup flour
1/4 cup wheat flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
2 tablespoons apple cider vinegar
1/4 cup melted butter (1/2 stick)
1 1/2 teaspoons vanilla
2 large eggs

Steps:

  • Mix all the ingredients in a large mixing bowl with a wire whisk until most lumps are gone.
  • Set waffle iron dial to 5-1/2.
  • Pour in scant 1/4 cup of batter (or the amount your waffle iron will hold) and cook according to waffle grill instructions.
  • Remove from grill onto plate and spread butter over top and maple syrup.

  • In a large glass measuring cup or bowl, gently whisk together the milk, oil, egg, and vanilla until smooth and combine. Pour the wet ingredients (egg mixture) into the flour mixture and stir together with a wooden spoon or silicone spatula, until just combined. The mixture will appear thick and lumpy, this is normal; don’t over-mix the batter.
  • Once the waffle iron has preheated, using a pastry brush, coat the inside (top and bottom) of the iron with oil. Pour enough batter into the waffle iron to just cover the waffle grid. Close the iron and cook the waffle as per the manufacturer’s instructions, about 3-5 minutes, until golden brown.
  • To prevent the waffles from getting soggy, toss them— one at a time— back and forth between your hands a few times to help release any steam. Continue on with the rest of the batter until done.
