1 pound ground beef
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup (Regular or Healthy Request®)
1/2 cup salsa
1/2 cup water
6 flour tortillas (6-inch), cut into 1-inch pieces
1/2 cup shredded Cheddar cheese

Steps:

  • Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat. Pour off any fat.
  • Stir the soup, salsa, water and tortillas in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes. Stir the beef mixture. Top with the cheese.
  • Creamy Mexican Fiesta: Stir in 1/2 cup sour cream with the soup.
  • Ranchero Style: Use corn tortillas instead of flour tortillas and shredded Mexican cheese blend instead of Cheddar.
  • Serving Suggestion: Serve with a mixed green salad with Italian salad dressing and corn-on-the cob. For dessert serve with a store bought flan.

2 cups water
1 cup converted rice
1 (1 ounce) package taco seasoning
1 cup shredded Mexican cheese blend
1 cup shredded lettuce

Steps:

  • Heat a large skillet over medium heat; cook and stir beef and onion until beef is browned, about 5 minutes. Drain. Stir tomatoes, water, rice, and taco seasoning into beef mixture and bring to a boil. Reduce heat to medium-low, cover, and simmer until rice is tender, about 25 minutes. Top with Mexican cheese blend and lettuce before serving.

4 corn tortillas (6 inch), torn into bite-size pieces
8 ounces lean ground beef (93% lean)
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1/4 cup frozen whole kernel corn
3/4 cup undrained Ranch Style® Beans
1/2 cup shredded reduced fat Mexican cheese blend
2 tablespoons sliced green onions
Sour cream, optional

Steps:

  • 1. Spray large skillet with cooking spray. Heat over medium-high heat. Place tortilla pieces in skillet. Cook 4 minutes or until lightly browned. Remove from skillet.
  • 2. Cook ground beef in skillet until no longer pink; drain. Stir in drained tomatoes, corn and beans. Bring to a boil. Simmer 2 minutes or until hot. Add tortilla pieces and stir to coat.
  • 3. Sprinkle with cheese and green onions. Cover. Let stand 5 minutes or until cheese is melted. Serve with sour cream, if desired.

Steps:

  • In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Stir in hot water, sauce mix (from Hamburger Helper box) and beans. Heat to boiling, stirring occasionally. Stir in uncooked rice (from Hamburger Helper box).
