EASY BEEF QUESO DIP



Easy Beef Queso Dip image

Perfect for Tex-Mex entertaining, this Beef Queso Dip is packed with seasoned beef, onions, chiles, and a homemade queso dip! Plus, it's all made in one skillet and is always a hit!

Number Of Ingredients 15

1 tablespoon olive oil
8 ounces ground beef
1/2 teaspoon ground cumin
1 tablespoon taco seasoning (homemade)
1 cup red onion, divided
1 (4 ounce) can green chiles
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup whole milk
1 cup grated monterey jack cheese
1 cup grated pepper jack cheese
Diced tomatoes, garnish
Fresh cilantro, garnish
Tomatillo salsa, garnish (optional)
Tortilla chips, for serving

Steps:

  • In a large skillet or medium pot, add olive oil and ground beef over medium heat. Cook for 3-4 minutes until beef is browned, breaking it up as it cooks. Add onions, green chiles, cumin, and taco seasoning. Continue to cook for 2-3 minutes until onions soften. Remove 1/4 of the beef mixture and set aside as a topping for the queso.
  • Add all-purpose flour to the skillet and cook for 1-2 minutes until the mixture forms a thick roux.
  • Slowly whisk in the chicken stock and use the liquid to scrape up any bits. Whisk well to combine. Then whisk in milk slowly. Continue to cook for a few minutes until mixture thickens.
  • Turn heat down to low and add cheese. Stir until cheese is just melted. Don't boil the mixture once the cheese is added or it will break down.
  • Remove queso from the heat and transfer to serving bowl. Garnish with beef, onions, tomato, cilantro, and salsa. Serve immediately.
  • Leftover queso can be reheated in the microwave in 30 second bursts, stirring in between cooking.

1 lb lean (at least 80%) ground beef
1 cup diced onions
1 package (1 oz) Old El Paso™ original taco seasoning mix
1/4 teaspoon ground red pepper (cayenne)
1 can (4.5 oz) Old El Paso™ chopped green chiles
8 oz Kraft™ Velveeta™ original prepared cheese product, cut in 1/2-inch cubes (from 16-oz package)
2 cups shredded pepper Jack cheese (8 oz) or Monterey Jack (8 oz)
1/2 cup milk
1/4 cup diced tomato
2 tablespoons sliced green onions
2 tablespoons chopped fresh cilantro leaves
Tortilla chips, as desired

Steps:

  • In 10-inch cast-iron or nonstick skillet, cook beef and onions over medium-high heat 6 to 8 minutes, stirring occasionally, until beef is brown; drain. Decrease heat to medium. Stir in taco seasoning mix, red pepper and chiles. Cook 1 to 2 minutes longer or until slightly thickened. Remove from heat; spread beef mixture into even layer.
  • Meanwhile, in large microwavable bowl, mix cheeses and milk. Microwave uncovered on High 4 minutes; stir, then microwave in 30-second intervals until cheese melts and mixture is easily stirred smooth. Pour over beef mixture in skillet. Top with tomato, green onions and cilantro. Serve with tortilla chips.

Easy Beef Queso image

Make this cheesy recipe for the love of queso, and for the love of beef and cheese. Game day (or any snacking occasion) deserves this queso. Game on!

Number Of Ingredients 14

1 pound Certified Angus Beef ® ground beef, 90% lean
1 tablespoon canola or light olive oil
1 medium onion, diced
4 cloves garlic, minced
1 tablespoon cumin powder
2 teaspoons chili powder
2 teaspoons kosher salt
1 (4-ounce) can diced green chilies, choose hot or mild
1 (10-ounce) can Rotel fire roasted tomatoes and green chilies
1 (12 ounce) can evaporated milk, unsweetened
1 cup (4-ounces) freshly grated cheddar cheese
2 cups (8 ounces) freshly grated jack cheese
2 teaspoons cornstarch
3 tablespoons sour cream

Steps:

  • Heat a large high sided skillet over medium high heat. Add oil and brown the beef until no pink remains, breaking up while browning. Turn off heat and with a slotted spoon, transfer beef to a clean bowl; set aside.
  • Set same pan over medium heat. Add onion and garlic; sear until onions are translucent, 2 to 3 minutes. Stir in cumin, chili powder, salt, green chilies, fire-roasted tomatoes and reserved ground beef. Simmer 3 to 4 minutes, evaporating liquid from the tomatoes and chiles. When ingredients become dry and begin to brown stir in evaporated milk and bring to a low boil. Reduce heat to low and simmer.
  • In a large mixing bowl toss grated cheese with the cornstarch to evenly coat.
  • Turn the heat off of pan, stir in the cheese 1 handful at a time, melting completely before stirring in more.
  • Stir in sour cream, garnish and serve.

½ red onion, chopped
4 cloves minced garlic
1 (1 ounce) packet taco seasoning
1 (14 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 processed cheese food (such as Velveeta®), cubed
1 (8 ounce) package cream cheese, cut into cubes
4 ounces Gouda cheese
1 jalapeno pepper, seeded and minced
¼ cup chopped fresh cilantro
¼ cup half-and-half, or more as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine ground beef, red onion, and garlic in a skillet and cook over medium-high heat until beef is browned and crumbly, about 5 minutes.
  • Drain any excess liquid from the skillet. Season with taco seasoning and mix well.
  • Add cooked ground beef, diced tomatoes, Velveeta cheese, cream cheese, Gouda, jalapeno, and cilantro to an oven-safe dish.
  • Drizzle some of the half-and-half on top (don't use all of it, save some to adjust for thickness later).
  • Bake uncovered in the preheated oven for 20 minutes. Remove from oven to stir and adjust thickness with half-and-half as needed. Return to the oven and continue to cook until cheese is bubbly, about 15 more minutes.
