We make a lot of French dips and always have leftover roast beef. Here's how I put it to good use. For these pies, use any vegetables you like. They're extra awesome drenched in cheese sauce. -Jennie Weber, Palmer, Alaska

1 package (15 ounces) refrigerated beef roast au jus
1 tablespoon canola oil
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1 garlic clove, minced
2 sheets refrigerated pie crust
1 cup shredded Mexican cheese blend
Salsa con queso dip, optional

Steps:

  • Preheat oven to 425°. Drain beef, reserving 1/4 cup juices; shred meat with 2 forks. In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender, 1-2 minutes. Add garlic; cook 30 seconds longer. Remove from heat; stir in beef and reserved juices., Unroll 1 pie crust; cut in half. Layer 1/4 cup shredded cheese and about 1/3 cup beef mixture over each crust half to within 1/2 in. of edge. Fold crusts over filling; press edges with a fork to seal. Place on a greased baking sheet. Repeat with remaining crust and filling., Bake until golden brown, 15-18 minutes. If desired, serve with queso dip. Freeze option: Freeze cooled pies in a freezer container. To use, reheat pies on a greased baking sheet in a preheated 350° oven until heated through.

1 1/2 pounds Ground Beef
1 cup onion (chopped)
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon thyme (ground)
1/2 teaspoon oregano
1/2 teaspoon paprika
2 pie crusts (see note)
1 cup cheddar cheese (grated)
1 egg
1 teaspoon water

Steps:

  • In a medium frying pan on medium heat, add the Ground Beef and spices.
  • When the Ground Beef is almost browned, about 8 minutes, add the onion.
  • Cook until the Ground Beef is completely cooked through (160ºF) and the onoions are translucent.
  • Preheat the oven to 400ºF.
  • Cut circles out of the pie crust, they should be about 4-6 inches in diameter. You should get 12-14 circles. You can use a large cookie butter or biscuit cutter or just trace a drinking glass if you don't have a cutter.
  • Divide the Ground Beef and cheese up evenly between the circles.
  • Fold the circles in half and press the edges together gently. Crimp them firmly with a fork.
  • Whisk the egg and water together. Brush it onto each beef hand pie.
  • Place the beef hand pies on a lined or greased sheet tray.
  • Bake for 20-25 minutes, until the tops are golden brown.
  • Serve with fresh cut veggies to make it a completely hand-held meal.

1 large onion, diced and chopped
½ green pepper, diced and chopped
1 ¼ cups ground beef mince, fully defrosted
1 teaspoon sweet basil leaves, dried
½ teaspoon chili flakes
1 teaspoon cinnamon
½ teaspoon salt
2 teaspoons dried mixed herbs
1 tablespoon beef seasoning
1 lb puff pastry, fully thawed
2 eggs
2 teaspoons soy sauce
1 teaspoon garlic, crushed

Steps:

  • Preheat the oven to 200°C.
  • Combine the onion, green pepper, spices, and soy sauce together in a medium bowl. Add the mince and the egg to the other bowl and mix well until all the ingredients are well-combined.
  • Roll out the thawed puff pastry until it measures approximately 33 x 27 cm. Once this is done, cut the puff pastry into 4 equal pieces (approximately 8cm in size).
  • Fill each piece of puff pastry with approximately 55g of the mince mixture. Spread the mixture generously onto the puff pastry, making sure to leave enough space around the edges for folding.
  • Dab some water around the edges of the puff pastry and fold to make a "pie shape". Use a fork to help you seal the edges, if necessary. Brush the top of the pies with a beaten egg. Make slight incisions on the top of each hand pie to allow the steam to escape.
  • Bake for 20-25 minutes, or until the crust is golden-brown and crispy.
  • Serve alongside tomato sauce.

2 cups apple pie filling, or as needed
3 tablespoons ground cinnamon, or more to taste
½ teaspoon ground allspice
1 large egg
1 tablespoon water
2 (9 inch) refrigerated pie crusts, at room temperature
1 teaspoon white sugar, or to taste
salt to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with nonstick foil.
  • Mix apple pie filling, 3 tablespoons cinnamon, and allspice in a bowl until well combined. Lightly whisk egg and water together in a small bowl.
  • Gently unroll each pie crust and cut into quarters; you will have 8 pieces of dough. Put 4 pieces on the prepared baking sheet. Spoon about 1/4 cup filling onto the centers of those pieces, leaving 1/4 inch around the edges uncovered. Cover each filled quarter with a top crust and press the edges together to seal. 3/4 pound bulk pork sausage
1 medium onion, chopped
1/3 cup chopped green onions
1 garlic clove, minced
2 tablespoons minced fresh parsley
1 tablespoon water
2 teaspoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 tubes (12 ounces each) buttermilk biscuits

Steps:

  • In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Add onions and garlic; cook until tender. Stir in parsley, water, flour, baking powder, salt and pepper. Heat through. Cover and refrigerate for at least 1 hour. , On a floured surface, pat 10 biscuits into 4-in. circles. Top each with about 1/3 cup of the meat mixture. 8 oz cream cheese, softened
2 pie crusts
1 egg
1 tablespoon water, plus extra for crimping

Steps:

  • Preheat oven to 400°F (200°C).
  • Place the pie crust on a cutting board, and cut out circle shapes using the top of a coffee cup. Collect scrap pieces, and roll out again to stamp out more shapes, making 12-14 circles total.
  • Fill half the circles with a tablespoon of the cream cheese, followed by a heaping teaspoon of jam.
  • Using your finger, lightly wet the edges of the cut rounds with water.
  • Cover the tops with the remaining circles, pressing the two dough halves together. Crimp edges with a fork to seal.
  • In a bowl, beat the egg with water. Brush the tops of the pies with the egg wash.
  • Use a small, sharp knife to cut a ventilation hole, or slit into the top of the pies.
  • Arrange the pies on a parchment paper-lined baking sheet.
  • Bake for 15-20 minutes until golden brown. Allow to cool completely before serving.
