A lovely summer cake that requires no cooking. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

2 cups graham cracker crumbs
½ cup melted butter
2 cups confectioners' sugar
2 eggs
1 cup butter, softened
6 bananas, peeled and halved lengthwise
1 (20 ounce) can crushed pineapple, drained
1 quart fresh strawberries, halved
1 (16 ounce) package frozen whipped topping, thawed
1 cup chopped walnuts

Steps:

  • Combine cracker crumbs and melted butter or margarine thoroughly and press into bottom of 9x12 inch baking pan. Chill in freezer for at least 15 minutes.
  • In the medium bowl of an electric mixer combine confectioners sugar, eggs, and softened butter or margarine; beat at medium speed for 20 minutes. (This step is important, so don't try to save time).
  • Spread buttercream mixture evenly over chilled crust. Place bananas, cut side down, evenly on top of buttercream and spoon crushed pineapple evenly over top of bananas. Distribute strawberries over pineapple and spread the whipped topping evenly all over. Sprinkle with walnuts and refrigerate for at least 3 hours or overnight before serving.

An easy, layered dessert recipe that is perfect for summer! This banana split cake with pudding, fruit and nuts will be the hit of your picnic.

20 ounces crushed pineapple ((1 can))
1 box yellow cake mix ((dry mix only))
1 cup pineapple juice
3 large eggs
½ cup canola oil
12 ounces cream cheese ((softened))
3.5 ounces instant cheesecake pudding ((1 small box))
5.1 ounces instant banana cream pudding ((1 large box))
2 cups milk
4-5 ripe bananas ((thinly sliced))
16 ounces frozen whipped topping ((thawed))
16 ounces maraschino cherries ((drained and dried))
½ cup chopped walnuts
¼ cup chocolate syrup

Steps:

  • Spray an 11x15 baking pan with cooking spray. Preheat the oven to 350º F.
  • In the bowl of a stand mixer, beat together the cake mix, pineapple juice (if you didn't get exactly 1 cup of pineapple juice from draining the pineapple, add water to make 1 cup), eggs and oil.
  • Beat on medium speed for 2 minutes, scraping the sides of the bowl as needed.
  • Pour the batter into the prepared pan and bake for 15-18 minutes or until the center of the cake springs back when you touch it.
  • Allow the cake to cool completely on a wire rack.
  • In a small bowl, use a hand mixer to cream the cream cheese until it is smooth. Set aside.
  • In another bowl, mix together the pudding mixes and milk until smooth.
  • Add the cream cheese by heaping spoonfuls and mix into the pudding using a hand mixer. Continue until all of the cream cheese is mixed in.
  • Spread the pudding mixture over the cooled cake.
  • Place sliced bananas all over the top of the pudding layer.
  • Sprinkle the drained crushed pineapple from step 1 over the bananas.
  • Spread the whipped topping over the pineapple.
  • Top with drained and dried maraschino cherries, nuts and chocolate sauce, or decorate as desired!
  • Cover the cake and store in the refrigerator. It is best to let this cake set for at least 4 hours before serving, if not overnight. This allows the layers to settle.

1 cup margarine, melted
1 (20 ounce) can crushed pineapple, drained
6 bananas
1 (8 ounce) package cream cheese
2 cups confectioners' sugar
1 (12 ounce) container frozen whipped topping, thawed
¼ cup chopped walnuts
8 maraschino cherries

Steps:

  • Combine the crushed vanilla wafers and melted margarine. Pat into the bottom of one 9x13 inch pan.
  • Beat the cream cheese and confectioners' sugar together until light and fluffy. Spread over the top of the vanilla wafer crust. Spoon crushed pineapple over the cream cheese layer. Then layer sliced bananas over the pineapple. Cover with the non-dairy whipped topping and sprinkle top with chopped walnuts and maraschino cherries.
  • Chill for at least 4 hours before serving.

A banana Split of any kind will always bring out the kid in all of us....if you don't believe me try this one.....I promise you, you will be smacking your lips for more! 1 stick oleo
2 c graham cracker crumbs
1 lb of powdered sugar
2 eggs
2 stick oleo, softened
5 bananas
1 large can of crushed pineapple, drained
1 large container non-dairy whipped topping
1 c chopped nuts
1 c chopped maraschino cherries

Steps:

  • 1. Melt 1 stick of oleo in 9x13 inch pan.
  • 2. Add cracker crumbs.
  • 3. Mix and pat over bottom of pan.
  • 4. Mix sugar, eggs, and 2 sticks of oleo. Beat 15 minutes.
  • 5. Pour over crust.
  • 6. Slice bananas and arrange on top of filling.
  • 7. Top with pineapple.
  • 8. Spread non-dairy whipped topping on top of pineapple.
  • 9. Sprinkle with nuts and cherries.
  • 10. Cover and refrigerate over night.
  • 11. Enjoy this yummy treat!

1 pint strawberry ice cream
1 pint chocolate ice cream
1 pint vanilla ice cream
4 medium bananas, divided
1 tablespoon lemon juice
1 cup heavy whipping cream
1 tablespoon white sugar
½ teaspoon vanilla extract
2 tablespoons chopped walnuts
10 maraschino cherries
1 (16 ounce) can chocolate syrup

Steps:

  • Place strawberry ice cream in a refrigerator for about 30 minutes to soften slightly.
  • Slice strawberry ice cream and place in the bottom of a 9x13-inch pan. Freeze until firm, about 45 minutes.
  • Meanwhile, place chocolate ice cream in refrigerator to soften, about 30 minutes.
  • Slice chocolate ice cream and spread over strawberry. Freeze until firm, about 45 minutes.
  • Meanwhile, soften vanilla ice cream in a refrigerator for about 30 minutes.
  • Mash 3 bananas with lemon juice in a large bowl; stir in vanilla ice cream. Spread banana mixture evenly over the chocolate layer. Cover and freeze for at least 3 hours.
  • Mix whipping cream, sugar, and vanilla extract together in a bowl with an electric mixer at medium speed until soft peaks form.
  • Place whipped cream in a decorator bag fitted with a large, 1/2-inch writing tube. Invert ice cream cake from the pan onto a chilled platter. Slice remaining banana on top of cake. Pipe large dollops of whipped cream on top of the banana slices. Sprinkle with chopped walnuts and garnish with cherries. Serve with chocolate syrup.

I don't remember where I got this recipe several years ago but is really a quick and delicious dessert.

1 can(s) (20 oz) crushed pinapple, undrained
2 or 3 - bananas, diced
1 - small box jello instant vanilla pudding
1 cup(s) whipped topping, thawed
1 package(s) (10 oz) round angel food cake
1 pint(s) strawberries, diced (save a few whole ones for garnish on the top of the cake)
1 pint(s) strawberry glaze

Steps:

  • In a medium bowl, mix the pineapple, with juice, diced bananas and the dry puddng mix.
  • Gently fold in the whipped topping.
  • In a separate bowl, mix the diced strawberries and the strawberry glaze. Stir well to combine.
  • Cut the cake horizontally into three layers.
  • Place the bottom layer, cut side up, on your serving plate. Top with 1/3 of the pudding mixture Spoon some of the strawberry mixture on top of the pudding mixture.
  • Cover with the middle cake layer and and the pudding mixture then the strawberry mixture.
  • Place the top layer on the top and spread remaining pudding mixture and then the strawberry mixture.
  • Refrigerate for at least one hour before serving.
  • Just before serving, place the remaining strawberries on the top of the cake for garnish.
  • Store any remaining cake in the refrigerator.
