Nonstick cooking spray
4 cups baked potato chips
1/2 teaspoon cayenne
1 cup lowfat buttermilk
1/2 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 to 2 large Vidalia onions, peeled

Steps:

  • Preheat the oven to 450 degrees F.
  • Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
  • Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.

1 yellow onion - ends trimmed off, peeled, and cut crosswise into 1/2-inch slices
2 egg whites
2 tablespoons milk
1 pinch cayenne pepper, or to taste
3 cups panko bread crumbs, or more if needed
½ cup all-purpose flour
salt and ground black pepper to taste
cooking spray

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Separate onion slices into individual rings.
  • Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
  • Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.
  • Drop flour-coated onion rings into egg white-milk mixture, a few at a time, and toss lightly with tongs until coated. Place rings into panko crumbs and gently shake the bowl to toss the crumbs with the onion rings until rings are coated with crumbs.
  • Transfer coated onion rings to a large baking sheet; spray rings lightly with cooking spray.
  • Bake in the preheated oven until onion rings are tender and crumbs are lightly golden brown, 12 to 15 minutes.

1 cup all-purpose flour
1 tablespoon Emeril's Essence Creole Seasoning
1 1/2 cups Panko*
1/2 cup grated Parmesan
2 onions, sliced
1/2-inch thick and separated into rings
2 large eggs, beaten

Steps:

  • Preheat oven to 400 degrees. Lightly oil a baking sheet or coat with nonstick spray. In a large bowl, combine flour and Emeril's Essence; set aside. In a large bowl, combine Panko and Parmesan; set aside. Working in batches, dredge onion rings in flour mixture, dip into eggs, then dredge in Panko mixture, pressing to coat. Spread onion rings in an even layer on the prepared baking sheet; coat with nonstick spray. Place into oven and bake until golden brown and crispy, about 20-25 minutes. Serve immediately.

3 egg whites
1 cup dry bread crumbs
2 teaspoons dried thyme

  • Cut onions into 1/2-in. slices; separate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain., In a small bowl, beat egg whites until foamy. In another bowl, combine the bread crumbs, thyme, salt, paprika and pepper. Divide the crumb mixture among three large resealable plastic bags. Dip a third of the onions in the egg whites; add a few rings at a time to crumb mixture and shake to coat. These baked onion rings are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these. This is a slight adaptation of a Yahoo Health recipe. I dip mine in ketchup but my husband is a purist who prefers his plain. And while the prep time can be a little long, make it a social time. I talk to everyone in the house while I make these, and then sit back and enjoy how great they smell as they cook!

2 peeled onions
3/4 cup all-purpose flour
2 -3 egg whites
3/4 cup nonfat breadcrumbs or 3/4 cup lowfat breadcrumbs
2 teaspoons italian seasoning
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1/2 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees.
  • Spray a baking sheet with nonstick spray.
  • Slice the onions width wise and then break them apart into rings.
  • Put the flour in 1 bowl, the egg whites into a second, and into the third put the bread crumbs and all the spices (all the rest of the ingredients).
