CARBONARA PASTA BAKE
All the robust richness of pasta carbonara baked into a 13x9 casserole dish. Bacon and Parmesan cheese are the hero flavors in this hearty pasta that goes beyond the basic red-sauce bake.

Steps:
- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package.
- Meanwhile, in large bowl mix ricotta cheese, 1 1/4 cups of the Parmesan cheese, the mozzarella cheese, whipping cream, eggs, chives, parsley, garlic, salt and pepper. Beat with whisk until smooth. Add cooked pasta, bacon and frozen peas. Pour pasta mixture into baking dish.
- Cover baking dish with foil. Bake 20 minutes.
- Meanwhile, in 8-inch skillet, heat butter over medium heat. Add bread crumbs; stir to coat. Cook and stir 2 to 3 minutes or until lightly browned. Transfer to small bowl; cool 10 minutes. Stir in remaining 1/4 cup Parmesan cheese; set aside.
- Uncover baking dish; bake 5 to 10 minutes or until heated through. Let stand 10 minutes. Sprinkle bread crumb mixture on top, and serve.

EASY BACON PASTA BAKE (USING POTATO BAKE SAUCE)
I rarely have leftover pasta to make pasta bakes, so this recipe is an easy way to make an easy-to-prep meal using store bought potato scallop sauce and uncooked pasta. You can adjust the amount of bacon you use, I just find it an easy flavouring to throw into the dish. This pasta bake can be very rich and although I serve it as a main in my household (its a bacony treat for us) so serve with lots of fresh tomato or as a side to barbecued meats.

Steps:
- Preheat oven to 180C. In a large baking dish pour in 2 cans of potato bake sauce. Add the milk and a quarter of the water. Stir well.
- Mix in the pasta, bacon and half the grated cheese.
- Place a sheet of tinfoil over the top of the mixture and press the sides down until covered and foil is kept in place.
- Bake in oven for 30 minutes then stir mixture from bottom to top. You can add more water at this point but add in small amounts until you're satisfied there is enough liquid for pasta to soak up. Return to oven and continue baking for another 15 minutes until last step.
- For the last 15 minutes add grated cheese to top and bake uncovered until topping is golden and crisp. Serve with fresh tomatoes and salad.
BACON POTATO BAKE

- Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Drain; cool for 10 minutes., In a small bowl, combine the flour, eggs, sour cream, 1 tablespoon butter and salt. Spoon over potatoes and toss to coat. Place half of the potato mixture in a greased 13x9-in. baking dish; top with half of the cheese. Repeat layers., Toss bread crumbs with remaining butter; sprinkle over the top. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 160° and potatoes are tender. Sprinkle with bacon.

- Heat oven to 425°F. Prick potatoes with fork; place in 1-gallon resealable food-storage plastic bag. Add oil and kosher salt; seal bag and turn to coat potatoes. Place potatoes on cookie sheet. Bake 1 hour or until tender. Cool.
- Reduce oven temperature to 350°F. Cut thin slice off top of each potato; discard. Scoop pulp into large bowl, leaving shells intact. Add cream cheese, butter and milk to pulp in bowl; mash with potato masher or electric mixer on low speed. Stir in cheese, bacon, onions, table salt and pepper. Spoon into potato shells. Return to cookie sheet.
- Bake 30 minutes or until thoroughly heated.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, melt butter in a saucepan over medium heat. Add cream cheese and ranch dressing mix; whisk until smooth. Slowly whisk in milk. Stir in Monterey Jack cheese; cook until cheese has melted and sauce has thickened, 5 to 10 minutes. Crumble 6 slices bacon and stir into sauce.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return potatoes to pot.
- Meanwhile, arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and crumble.

- #1 First peel the potatoes and dice them, and slice up the carrots and onion. #2 Heat the olive oil in a large pan over medium-high heat. Add the onion, carrots and basil and let them soften. At this point add a pinch of salt & pepper too. #3 Add the diced bacon and cook for about 3-4 minutes, until the bacon is golden.
- #4 Add the potatoes and cook for 3-4 minutes. #5 Add the vegetable broth and bring to the boil then simmer slowly.
- #6 When the potatoes have softened, mash them with a fork, then add the white wine and bring to the boil then let it simmer. The potatoes don't need to be mashed 100%, but just roughly. #7 In another pot cook the pasta with a pinch of salt. #8 Add the pasta once it's al dente into your pan containing all the other ingredients. Mix well. Tip: Save one glass of the water you used to cook the pasta in. #9 Add the glass of pasta water and parmesan cheese and mix everything together. This will create an amazing cream. Pasta is ready!
