2 lbs whole baby potatoes (cut in half )
2 small yellow onions (cut into chunks)
1 can diced tomatoes
1 teaspoon salt
1 teaspoon minced garlic
1 teaspoon Italian Seasoning
1 cup chicken broth

Steps:

  • Add everything into the crock pot.
  • Cover and cook on low for 6-8 hours or cook on high for 304 hours. (until potatoes and onions are tender).
  • Serve immediately while warm and enjoy!

1 12 oz package smoked sausage (cut into bite sized pieces)
2 lbs Yukon Gold potatoes (or red bliss potatoes, 8 small, peeled or unpeeled)
3 cloves garlic (minced)
2 medium onions (sliced)
1 red bell pepper (seeded and sliced)
1 green bell pepper (seeded and sliced)
1 tsp salt
1/2 tsp oregano
1 tsp basil
3 tsp fresh thyme (sprigs, or 1/2 tsp dried)
1/2 cup chicken broth
1/4 cup white wine (optional)

Steps:

  • Scrub potatoes well and cut into 2" pieces. Place potatoes into slow cooker and add garlic, sliced onions and bell peppers. Season with salt, oregano, basil and thyme. Add chicken broth and wine (if not using wine, replace with ¼ cup additional chicken broth). Stir ingredients to distribute seasonings.
  • Add smoked sausage to top of vegetables. Cover and cook 4 hours (high) or 8 hours (low) then turn off heat.
  • Dish potatoes and sausage into individual bowls and spoon broth over sausage and vegetables. Serve and enjoy!

1 pound sweet Italian sausages
1 pound hot Italian sausages
2 green bell peppers, sliced
1 red bell pepper, sliced
1 large sweet onion (such as Vidalia®), sliced
1 (24 ounce) jar pasta sauce
1 (16 ounce) package elbow macaroni

Steps:

  • Place the sweet and hot sausages, green and red peppers, onion, and pasta sauce in a slow cooker. Add about 1/2 a jar of water. Cook on Low for 6 to 8 hours, or on High for 3 to 4 hours.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still firm, about 8 minutes. Drain well.
  • Slice the cooked sausages, then return to the slow cooker. Allow to rest for 10 minutes before serving the sausage, peppers, and onion over the macaroni.

A friend gave me a recipe that required roasting in the oven, but I could never get it right. Instead I experimented with it in the crockpot and it is SOOOO good! Easy, hearty, cheap, and comfort food at its best!

Spicy sausage, pepper and onions. Takes very little prep time and is great for potlucks. Inexpensive and makes alot. Very delicious kids and adults both liked it is very filling. I first took it to a church game night that was just supposed to be snack food but knew I would want something a little more filling than chips had several requests for the recipe. Which made me have to think because when I first made it I used what I had in the house. This is what I remember using. I used Bar-S brand polish sausage which is just a cheap sausage a pack of 3 lbs is about $4 ( found in with the hot dogs in the refrigerated section lunch meats and stuff). Could be used as an entree ( just serve it on a whole bun) snack or starter for a party I think.

1 large green pepper, chopped (large dice)
1/2 cup frozen chopped red pepper (large dice)
1 large onion, chopped (large dice)
1 1/4 cups spicy barbecue sauce (Stubb's is the one I used)
1 cup water
1/4 cup ketchup
1/8 cup mustard
16 hot dog buns

Steps:

  • Cut each sausage into bite size pieces (fourths or fifths is what I did).
  • Put the peppers, onion, bar-b-que sauce, ketchup, mustard and water in a bowl. Stir together. Pour half of the sauce in a crock pot.
  • Add sausages stir
  • Add rest of sauce.
  • Cook on high at least 3 hrs (longer it cooks the thicker the sauce gets and the better it tastes) stirring about once a hour.
  • Cut hot dog buns in half
  • Serve mixture on buns and enjoy.

3 lbs red potatoes
2 lbs smoked sausage
8 ounces cream cheese (softened)
10 1/2 ounces cream of celery soup
1 ounce dry ranch dressing mix

Steps:

  • Spray slow cooker with Pam.
  • Cut potatoes into wedges or whatever size pieces your family likes. You can leave the skins off or on (we like them on)throw them in the pot.
  • Cut sausage into 1/4" slices and throw them into the pot.
  • In a bowl blend softened cream chees, cream of celery soup and envelope of dry ranch dressing mix. Pour over Potatoes and sausage.

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

  • Lightly coat a 6-quart or larger slow cooker with nonstick spray. Heat a large skillet over medium high. Add 1/2 tablespoon oil. Once the oil is hot, add half of the sausages in a single layer (do not crowd the pan or the sausages will not brown properly). Cook for 1 to 2 minutes on all four sides, or until the outsides are golden brown (the sausages do not need to be cooked all the way through.) Transfer to the slow cooker. Add the next 1/2 tablespoon olive oil and repeat with remaining sausages.
  • Increase the heat slightly. Add the final 1/2 tablespoon oil, then the onions, 1 tablespoon water, salt, and pepper. Cook until the onions are starting to brown and become tender, 5 to 6 minutes. Add the garlic and red pepper flakes and cook 1 additional minute, then add the wine. Let cook until the wine evaporates, scraping up any bits that have stuck on to the bottom of the pan. Transfer the onions and any pan juices to the slow cooker with the sausages.
  • Add the bell peppers and crushed tomatoes to the slow cooker. Cover and cook for 5 to 6 hours on low or 2 to 3 hours on high, or until sausages are cooked through and tender. (I prefer and recommend the low, long cooking time, as it makes the sausages more tender, but high works if you are in a hurry.) Serve over pasta or inside rolls with provolone cheese on top.
