Steps:
- Simply mix the pumpkin and the spice cake mix together with electric mixer until well combined. (At this point you may also want to throw in some nuts or raisins, if you like.).
- Spoon into paper lined small muffin/cupcake tins, 2/3 full. (The batter is very thick and doesn't "settle", so you may wish to smooth the tops if you care what the finished product looks like!).
- Bake at 350* 18-22 minutes or until a knife comes out clean.
EASY 2-INGREDIENT PUMPKIN MUFFINS
I got this recipe from a Weight Watcher's meeting, and found these very tasty. This recipe is low in fat and calories. I also tried 1 box of cake mix with a cherry lite pie topping - very tasty. My kids loved both muffins. (for Weight Watchers: each muffin is only 2 points.)

- In a large bowl, use a spatula to fold together pumpkin and dry cake mix. Then I like to use an electric mixer to make sure that the batter is fluffy and completely combined. It will be thick!
