EASTER EGG SANDWICH



Easter Egg Sandwich image

I made lots of Easter eggs this year! I was going to make scrambled eggs and they were all hard-boiled, so this was the result!!

Number Of Ingredients 7

2 - hardboiled eggs, sliced
4 slice(s) bread, lightly toasted
2 slice(s) provolone cheese (or any cheese)
- all-purpose seasoning (i used chef prudhomme's no salt seasoning
- salt to taste
- whole grain mustard (optional)
- butter/cooking spray or oil for pan

Steps:

  • Heat butter, spray or a bit of oil in a cast iron skillet on medium/high. Lightly toast the bread.
  • On one slice of toast, spread mustard (if using), then arrange the sliced egg, sprinkle with seasoning and salt. Cover with cheese. Top with last slice of toast.
  • Place both sandwiches in buttered skillet. Heat for a few minutes until cheese starts to droop, flip sandwiches. Cook until toast is slightly browned.

12 whole Hard Boiled Eggs
1/2 c. Mayonnaise
3 tbsp. Grainy Dijon Mustard
Salt And Pepper, to taste
Several Dashes Worcestershire Sauce
Leftover Baked Ham, Sliced
Kaiser Rolls Or Other Bread
Extra Mayonnaise And Dijon, For Spreading
Swiss Cheese Or Other Cheese Slices
Thinly Sliced Red Onion
Avocado Slices
Sliced Tomatoes
Lettuce, Spinach, Or Arugula

Steps:

  • Make egg salad by chopping the hard boiled eggs and mixing in a bowl with mayonnaise, Dijon, salt and pepper, Worcestershire (and you can also add chopped pickles, hot sauce, etc.) Taste and adjust seasonings.Halve the rolls and spread one half with Dijon, the other half with mayonnaise. Sprinkle the mayonnaise-spread half with salt and pepper. Lay cheese and ham on the mustard half; lay avocado, onion slices, tomato slices, egg salad, and lettuce on the other half. Bring the two halves together and chow down!Variation: Add bacon! Yes, I said it.

4 cups biscuit/baking mix
1 cup shredded cheddar cheese
1 cup finely chopped fully cooked ham
1 teaspoon coarsely ground pepper, divided
1 cup 2% milk
3 tablespoons butter, melted
EGGS:
8 large eggs
1/2 cup 2% milk
1/4 teaspoon coarsely ground pepper
1/8 teaspoon salt
2 tablespoons butter
1 cup shredded cheddar cheese
Optional toppings: Salsa, sliced tomato, red onion and avocado

Steps:

  • Preheat oven to 425°. In a large bowl, combine biscuit mix, cheese, ham and 1/2 teaspoon pepper. Add milk; mix just until moistened., Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 1-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 in. apart on an ungreased baking sheet. Brush with melted butter; sprinkle with remaining pepper. Bake 12-14 minutes or until golden brown., Meanwhile, for eggs, in a bowl, whisk eggs, milk, pepper and salt. In a large nonstick skillet, heat butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Stir in cheese; remove from heat., Split warm biscuits in half. Layer bottoms with egg mixture and toppings as desired. Replace tops.

  • Meanwhile, cut each pita in half and open the pockets. Blend mango chutney with yogourt until well combined. Spread an equal amount of yogourt mixture inside each halved pita and line with sliced cucumber. Divide the egg mixture evenly between pockets. Serve immediately.
