Recipe video above. Here's a speedy main course size salad that's filled with all my favourite vegetables. I like this because it's filled, colourful, interesting enough to serve to friends, but quick enough for a fast lunch, filling enough for dinner.

3 cups store bought roast chicken (, shredded (Note 1))
12 cups cos / romaine lettuce (2 medium, 1 giant) (, chopped into bite size pieces (or other leafy greens))
1 cup corn kernels ((can, drained - about 2/3 can))
1/2 red onion (, finely sliced)
300g/ 10oz cherry or grape tomatoes ((or 2 normal tomatoes chopped))
2 cucumbers (, halved lengthwise then sliced 1cm / 1/3" (or 1 long English/telegraph cucumber))
2 avocados (, cut into bite size chunks (or 1 giant one))
150g/ 5oz bacon (, cooked until crisp then chopped (optional))
2 1/2 tbsp cider vinegar ((Note 2))
6 tbsp extra virgin olive oil
1 garlic clove (, minced using garlic press (~1 tsp))
1 tsp Dijon Mustard ((or any smooth, non spicy mustard, optional))
2 tsp dried mixed herbs ((Note 3 for subs))
1 tsp sugar (, optional (Note 4))
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Dressing: Place ingredients in a jar, shake, set aside for at least 10 minutes to let flavours meld.
  • Salad: Place all ingredients except bacon in a big bowl. Drizzle over most of the Dressing, then toss well.
  • Transfer to serving bowl, drizzle with remaining Dressing. Sprinkle with bacon. Serve immediately!

PORK AND GINGER POT STICKERS

2 cups chopped napa cabbage
1/2 tablespoon salt
1/2 pound ground pork (Don't get lean pork, the fat is good for juicy and flavorful dumplings)
2 tablespoons minced ginger
1 1/2 tablespoons minced garlic
2 tablespoons thin soy sauce
3 tablespoons sesame oil
1 egg
1 to 2 cups chicken stock or water
4 cups all-purpose flour
1/2 teaspoon salt
1 1/2 to 1 3/4 cups boiling water
1/3 cup thin soy sauce
1/3 cup rice wine vinegar
1/3 cup sliced scallions
1 teaspoon sesame oil
1 tablespoon sambal

Steps:

  • Sprinkle cabbage with the 1/2 tablespoon of salt and let stand for 30 minutes. Place the cabbage on a clean dishtowel or cheesecloth and squeeze out any water. The dryer the cabbage the better. In a large bowl thoroughly mix the cabbage with all of the other ingredients, except the chicken stock. Cook a tester to check the seasoning.;
  • GUEST CHEF: MING'S MOM (IRIS LEE TSAI) .
  • In a stainless steel bowl mix flour and salt. Slowly add hot water to flour in 1/4 cup increments. Mix with chopsticks until a ball is formed and the dough is not too hot to handle. On a floured surface, knead dough until it becomes a smooth, elastic ball. Place back in bowl and cover with a damp cloth. Allow to rest for at least 1 hour. Working on a floured surface with floured hands, roll out dough to form a long 'noodle', 1-inch in diameter. Cut 1/2-inch pieces and turn them over so the cut sides are facing up. Flatten with your palm and roll out thin using a rolling pin. The dumpling wrapper should end up about 3 inches in diameter.
  • MAKING THE DUMPLINGS: Place a small mound of filling in the middle of the wrapper. (Be very careful not to touch the edges with the filling as this will impede proper sealing of the dumplings. Nothing is worse than dumplings breaking during cooking.) Fold the wrapper in half to form a half moon shape. Starting on one end fold/pinch the wrapper tightly together. Proceed with this fold/pinch method until the dumpling is completely sealed. There will be approximately 10 to 14 folds per dumpling. Rest the dumplings with the folded edges straight up.
  • COOKING THE DUMPLINGS: In a hot saute pan coated well with oil, place pot stickers flat side down and cook until the bottom is browned. Have pan cover ready and add 1 cup of chicken stock, cover immediately. Be careful, the liquid will splatter! The stock will steam the pot stickers. Check them in 5 minutes as more stock may be needed. The trick here is that once the dumplings are firm and fully cooked the stock will evaporate and the bottoms will crisp-up again.
  • Combine all and serve in a small bowl.
  • PLATING: Serve pot stickers on a large platter lined with lettuce with a bowl of dipping sauce on the side.

6 split or 3 whole skinless boneless chicken breasts
3/8 cup of Western Dressing. Could use Catalina or French
2T minced onion
1 cup mayo
4 or5 t sugar
1 1/2 T vinegar
1/2 cup diced celary
3 hard boiled eggs
1 can chow mien noodles
1/2 t mustard
1/2 t salt
pepper to taste

Steps:

  • Cook the chicken in oven at 350 degrees for about 30 minutes. Check in 20 minutes. Marinate chicken over night in the dressing. Cube the chicken Mix mayo, mustard, sugar, salt, pepper and vinegar together. Add chicken and all other ingredients except noodles. Add noodles when served so they don't get soggy.

1 (20-oz) package of SeaPak Popcorn Shrimp
1 (12-oz) package broccoli coleslaw mix
1 (11-oz) Mandarin orange segments, drained
1 (8-oz) can sliced water chestnuts, drained
1 tablespoon sesame seeds, toasted
½ cup prepared sesame ginger salad dressing

Steps:

  • Prepare the shrimp according to package directions and keep warm. Place slaw mix, oranges, water chestnuts and sesame seeds in a medium bowl. Pour dressing over mixture and toss to coat. Spoon slaw mixture on a serving platter and arrange shrimp on top of salad. I got this recipe off a NISHIKI Premium Grade Rice bag (Sushi Rice). It sounded so yummy and I didn't want to lose it! Really Simple too!

3 cups cooked sushi rice, Cooled (Nishiki is really good)
3/4 cup celery, Thinly Sliced
1/2 lb small shrimp, Shelled and Cooked
1/4 cup green onion, Chopped (And Tops)
1/4 cup seasoned rice vinegar (Marukan Gourmet)
5 large butter lettuce leaves (Or other lettuce)
1 medium avocado
toasted sesame seeds, For garnish
wasabi powder, Prepared (paste)

Steps:

  • Combine rice, celery shrimp, green onions & tops and vinegar. Refrigerate until ready to serve.
  • To serve, arrage a lettuce leaf on each 5 individual serving plates. Top with about 3/4 cup rice mixture. Remove peel and seed from avocado. Thinly slice avocado and divide among the 5 plates.
  • Sprinkle lightly with toasted sesame seeds and serve with Hime Japanese Horseradish Powder (Wasabi), prepared, if desired. Makes 4-5 servings.
