SOUTH-OF-THE-BORDER STUFFED PEPPERS
Our Test Kitchen staff put a zesty twist on a dinnertime staple with this colorful main course. Garlic, chili powder, cumin and more season the pepper's ground beef so well, you won't even miss the salt.

- In a large nonstick skillet, cook the beef, red pepper and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in 1/2 cup tomatoes, chili powder, cornstarch, cumin, oregano and cayenne. Gradually stir in water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Cut green peppers in half lengthwise; remove seeds. In a large kettle, cook peppers in boiling water for 3-5 minutes. Drain and rinse in cold water. Spoon about 1/3 cup beef mixture into each pepper half. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Cover and bake at 350° for 25-30 minutes or until peppers are crisp-tender and filling is heated through. , Top with the remaining tomatoes. Garnish with sour cream, cheese, green onions and grape tomatoes if desired.

Steps:
- In a bowl, bring cream cheese to room temperature to soften.
- Add minced jalapeños, cilantro, garlic, green onions chopped, spinach, milk, sour cream, and pinch of salt.
- Mix well.
- Warm over *low heat* while cooking pasta.
- DO NOT BOIL or BURN!
- Cook pasta al dente; drain and let it cool a bit.
- Add to cream cheese sauce and mix well.
- Serve sprinkle with more cilantro, if desired.

- Combine all ingredients and chill for at least 30 minutes. Serve with tortilla chips or pita chips.
- Southwest Chili Pepper Vinegar recipe: 2 cups white wine vinegar; 1 large piece fresh basil; 4 sprigs oregano; 1/2 tablespoon mixed peppercorns; 2 cloves garlic (peeled): 8 dried, red chili peppers. Put all ingredients in a bottle, heat vinegar in microwave until hot, then pour into bottle. Allow 2 weeks for flavors to infuse.

EAST MEETS SOUTH OF THE BORDER FAJITAS
This is my sandwich entry for this week's Family/Friends Sammie. My family has always enjoyed Chinese and Mexican cuisine, so I decided to fuse the two together for this sandwich. A little bit Beef & Green Bean Stir-Fry (my favorite) with a little bit of Beef Fajitas (my husband's favorite). Hence, East Meets South of the Border...

Steps:
- 1. In bowl, whisk together marinade ingredients. Reserve and refrigerate 1/2 of mixture for later use. Pour other 1/2 of marinade into a large zip-lock bag, add the steak, and seal. Place in a baking dish and refrigerate for at least 4 and up to 8 hours, turning occasionally.
- 2. After meat is finished marinating, remove meat. Discard the marinade.
- 3. Heat 1 teaspoon fat in a large nonstick skillet over medium-high heat. Add beef to pan, and sauté for 4 minutes or until browned. Remove from pan.
- 4. Wipe pan dry with paper towel. Add remaining 1 teaspoon fat to pan; heat over medium-high heat. Add beans to pan. Cover and cook 3 minutes. Uncover and cook 3 minutes, stirring frequently. Return beef to pan. Stir in reserved marinade; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat.
- 5. Preheat the oven to 325 degrees F. Wrap the tortillas in foil and place in the oven for 15 minutes to warm and soften. Remove from the oven and keep warm in the aluminum foil.
- 6. Divide beef and bean mixture among warmed tortillas and enjoy.
