INDIAN CORN STEW



Indian Corn Stew image

Another recipe from one of my vast collection of cookbooks. This tastes like "cooked all day" but actually it doesn't take all that long. Great with a salad and big chunk of cornbread!

1 medium onion, chopped
1 medium bell pepper, chopped
2 tablespoons butter
1 lb ground beef
2 1/2 cups whole kernel corn (can be frozen, canned or fresh)
1 (10 ounce) can tomato soup
2 teaspoons sugar
1 1/2 teaspoons salt, to taste
1 tablespoon Worcestershire sauce
fresh cracked pepper

Steps:

  • Place butter in large sauce pan and begin to melt.
  • Add onions and peppers and cooking until tender.
  • Add ground beef and cook until browned.
  • Add corn,tomato soup, sugar, salt, pepper and Worcestershire sauce.
  • Cover and simmer 45 minutes.
  • Note: any of your favorite seasonings can be added to this at the same time you add the salt and pepper.

Expand your culinary repertoire to include a vegetarian stew and a spicy Indian dish in one fell swoop with this tasty fall fare.

2 tablespoons butter
2 cups chopped (1/2 inch) onions
1/2 teaspoon salt
2 teaspoons garam masala
2 tablespoons curry powder
2 teaspoons grated gingerroot
2 cloves garlic, chopped
1 cup chopped (1/2 inch) peeled carrots
1 cup chopped (1/2 inch) peeled potatoes
1 cup vegetable broth
1 can (28 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (19 oz) Progresso™ chick peas, drained, rinsed
1 cup canned light coconut milk
3 cups cooked basmati rice
2 tablespoons chopped fresh cilantro, if desired
2 tablespoons sliced scallions, if desired
6 tablespoons yogurt, if desired

Steps:

  • In 5-quart Dutch oven, melt butter over medium-high heat. Add onions; cook about 3 minutes or until softened. Add salt, garam masala and curry powder; cook 3 to 5 minutes or until fragrant and brown. Add gingerroot and garlic; cook 1 minute. Add carrots and potatoes; cook 2 minutes. Add broth; simmer about 5 minutes or until potatoes and carrots are softened. Add tomatoes, chick peas and coconut milk; stir to combine.
  • Heat to boiling; reduce heat to medium-low. Simmer 30 to 45 minutes or until carrots and potatoes are tender and liquid is slightly reduced. Remove from heat; cool slightly.
  • Serve over rice, and top with remaining ingredients.

  • Heat 1-1/2 teaspoons oil in stockpot over medium heat until hot. Brown 1/2 of beef; remove from stockpot. Repeat with additional 1-1/2 teaspoons oil and remaining beef. Remove beef from stockpot. Season with salt and pepper.
  • Heat remaining 1 tablespoon oil in same stockpot over medium heat until hot. Add onions, ginger and garlic; cook and stir 3 to 5 minutes until onions are tender. Add tomato sauce and garam masala; cook and stir 1 to 2 minutes or until browned bits attached to stockpot are dissolved. Return beef to stockpot; bring to a boil. Reduce heat; cover tightly and simmer 1-3/4 to 2 hours or until beef is fork-tender.
  • Add peas and half-and-half; continue simmering, uncovered, 1 to 2 minutes or until heated through.

  • Heat vegetable oil in a large Dutch oven over medium heat. Season chicken with salt and pepper and place skin side down in to the pan. Cook until golden brown without turning, about 8–10 minutes. Transfer chicken to a plate.
  • To the same pot, add onion, garlic, and ginger to pot and cook, stirring occasionally, until onion is very soft and golden brown, about 8–10 minutes. Add tomato paste, garam masala, cumin, turmeric, coriander, cayenne and cook, stirring often, until tomato paste is beginning to darken, about 4 minutes.
  • Add chicken pieces, chicken broth, tomato purée, and cream to pot. Season with salt and pepper and bring to a boil. Reduce heat and simmer, partially covered, until chicken is almost falling off the bone and liquid is slightly thickened, about 1 1/2 hours. If using bone-in chicken, remove chicken to a plate and carefully remove chicken from the bone and discard skin and bones. Cut or pull chicken into bite-sized pieces. Return chicken pieces to the pot.
  • Add potatoes to the pot and cook, partially covered, until potatoes are fork-tender and sauce is thickened, 30-45 minutes. *Check and stir every so often to ensure the sauce hasn't thickened to much and potatoes aren't sticking to the bottom of the pot. If sauce is too thick, thin with a bit more chicken stock.
