DUFF'S BEST BREAD ON EARTH BREAD

2 cups all-purpose flour, plus more for dusting
1 cup bread flour
1 tablespoon sugar
Two ¼-ounce envelopes instant dry yeast
1 tablespoon kosher salt
1 1/4 cups warm water (no more than 110 degrees F)
Olive oil, for greasing

Steps:

  • Combine the all-purpose flour, bread flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the dough hook attachment. Add the water to the center of the bowl and mix on low speed to combine. Raise the speed to medium and knead until the dough pulls away from the bowl in a smooth, clean mass, about 10 minutes.
  • ​Lightly flour your workspace, turn the dough out of the bowl and lightly knead for about a minute, then shape into a ball. Lightly oil the inside of a large bowl, add the dough and rub oil over the top. Cover the bowl tightly with plastic wrap, then put in a warm spot, such as the top of the fridge, until it's more than doubled in size, about 45 minutes.
  • ​When the dough is almost ready, preheat the oven to 450 degrees F with a rack in the middle position. Stack two matching baking sheets and place in the oven. Or, if you have a baking stone, use that instead.
  • Turn the dough out of the bowl, punch it down and flatten it until it's about 2 1/2 inches thick. Shape the dough into a boule (round loaf). Lightly flour the top, cover lightly with plastic wrap and let rise for another 25 minutes.
  • ​Remove the plastic wrap and score the top of the loaf. Open the oven door all the way and use a baking peel or the floured underside of a baking sheet to slide the loaf onto the hot stacked baking sheets or baking stone, working gently but quickly so as not to deflate the dough. Bake for about 10 minutes, then open the oven door and carefully throw a few handfuls of water at the bottom of the oven to create steam. Close the door quickly and continue to bake until well browned, 12 to 15 minutes more.
  • Reduce the heat to 325 degrees F and bake until the loaf is deep golden brown and sounds hollow when you tap it, 15 to 20 minutes more. Transfer the loaf to a wire rack and let cool completely, at least 1 hour. That lets the crumb set. Listen to the loaf crackle as it cools-that's a good sound. Serve at room temperature.

2 cups whole wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1 cup finely grated zucchini
1/2 cup finely grated carrot
1/2 cup mashed ripe banana
1/2 cup chopped pecans or 1/2 cup walnuts

Steps:

  • Combine the sugar, oil, eggs, and vanilla in a large bowl.
  • Sift the whole wheat flour, all-purpose flour, baking soda, salt, pumpkin pie spice, baking powder, and cinnamon in a medium bowl and mix well.
  • Add flour mixture to oil mixture, stirring until blended. Stir in the zucchini, carrots, banana, and nuts.
  • Pour batter into 2 greased and floured 5x9 loaf pans. Bake at 375 degrees for 55-60 minutes. Invert onto a wire rack to cool.

  • To mix the dough: Mix all of the ingredients together, using the smaller amount of flour. Mix thoroughly until the dough pulls away from the sides of the bowl, adding more of the flour if necessary. Turn the dough out onto a floured surface to knead. (This may be a little messy, but don't give up!), To knead the dough by hand: Fold the far edge of the dough back over on itself towards you. Press into the dough with the heels of your hands and push away. After each push, rotate the dough 90°. Repeat this process in a rhythmic, rocking motion for 5 minutes, sprinkling only enough flour on your kneading surface to prevent sticking. Let the dough rest while you scrape out and grease the mixing bowl. Knead the dough again for 2 to 3 minutes., To knead the dough using a stand mixer: Mix all of the ingredients together using your mixer's dough hook. You'll want to reduce the amount of water to 1 3/4 cups, since you won't be using any extra flour on a kneading surface, as you do when kneading
  • Place the dough in a lightly greased bowl large enough for it to at least double in size. Cover with plastic wrap and place in a warm, draft-free place (your turned-off oven works well) until the dough doubles, about 1 to 2 hours., To shape the dough: Gently deflate the dough. Cut it in half and shape into two oval Italian- or longer, thinner French-style loaves. Place the loaves on a baking sheet lined with parchment (if you have it) and generously sprinkled with cornmeal or semolina. The cornmeal or semolina are optional, but give the bottom crust lovely crunch. , Let the loaves rise, gently covered in greased plastic wrap, for 45 minutes, until they're noticeably puffy. Toward the end of the rising time, preheat the oven to 425°F.
  • To bake the bread: Brush or spray the loaves generously with lukewarm water; this step, which helps keep the top crust pliant while baking, will enhance the bread's rise. Lightly slash the tops of the loaves three or more times diagonally. Place the pan on the middle rack of the oven., Bake the bread for 35 to 40 minutes, until the crust is golden brown and sounds hollow to the touch. The interior temperature of the bread should register at least 200°F on a digital thermometer., Remove the loaves from the oven, take them off the pan, and return them to the oven, placing them right on the rack. Turn the oven off and crack the door open several inches. Let the loaves cool in the cooling oven; this will make them extra-crusty., Store completely cool bread in a paper bag at room temperature for a couple of days. For longer storage, wrap well and freeze.
