- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.
- Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)
- Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
- Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
- Bake in the preheated oven for 20 minutes, or until golden brown.

TRADITIONAL SHEPHERD'S PIE
The familiar pairing of creamy mashed potatoes and succulent lamb takes an unexpected hint of sweet sharpness from its supporting cast of stewed root vegetables.

- Preheat oven to 300 degrees. Heat oil in a large Dutch oven over medium-high heat. Season lamb generously with salt and pepper. Working in batches, cook until golden brown, 4 to 5 minutes per side. Transfer to a plate. Reduce heat to medium. Add onion and garlic to pot, and cook until softened, about 4 minutes. Stir in tomato paste and cook for 2 minutes. Stir in wine, bring to a boil, and cook for 1 minute.
- Add browned lamb, stock, bay leaf, and thyme to pot. Bring to a simmer; cover, and transfer to oven. Cook for 2 hours. Add parsnips, celery root, and cipollini, and cook until vegetables and meat are tender, about 1 hour.
- Meanwhile, bring potatoes to a boil in a pot of salted water. Reduce heat, and simmer until tender, about 30 minutes. Drain, and let cool slightly. Press hot potatoes through a ricer into pot. Add cream, butter, and 2 teaspoons salt. Cook over medium heat, stirring often, until warmed through. (Alternatively, whip potatoes with a mixer until smooth.) Press a piece of plastic wrap directly on surface.
- Using a slotted spoon, transfer lamb to a dish, reserving sauce. Remove meat from bones, shredding it into bite-size pieces. Skim fat from sauce. Discard bay leaf and thyme. Return meat to sauce in pot, and add peas. Season with salt and pepper.
- Preheat broiler. Spoon lamb into a 6-cup baking dish adding just enough sauce to moisten; reserve remaining sauce. Spread potatoes over lamb. Alternatively, spoon potatoes into a pastry bag fitted with a 3/4-inch plain round tip, and pipe on top of lamb, covering surface. Broil until golden brown, about 5 minutes. Serve immediately with reserved sauce.
IRISH SHEPHERD'S PIE
This makes a lovely alternative to the much more common corned beef and cabbage that you may have been planning for St. Patrick's Day dinner.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place olive oil and butter in Dutch oven over medium heat. Stir in onion and ground lamb; brown the meat, breaking it up into small crumbles as it cooks, about 10 minutes.
- Stir in flour until incorporated, then mix in salt, black pepper, rosemary, paprika, cinnamon, ketchup, and garlic; cook and stir until garlic is fragrant, 2 to 3 minutes.
- Stir in water and scrape up any brown bits from the bottom of the Dutch oven. Reduce heat to medium-low and bring mixture to a simmer; cook and stir until thick, about 5-6 minutes.
- Remove lamb mixture from heat and stir in peas and carrots until combined.
- Spread lamb mixture into the bottom of a 9x13-inch baking dish and set aside.
- Place potatoes into a large pan of salted water. Bring to a boil, reduce heat to medium, and cook until tender, about 15 minutes. Drain well and return potatoes to pan.
- Mash butter, cayenne pepper, cream cheese, and Irish cheese into the potatoes. Mash until combined and potatoes are smooth. Season to taste with salt and black pepper.
- Whisk together egg yolk and milk in a small bowl; stir into the mashed potato mixture.
- Top the lamb mixture in the baking dish with the mashed potatoes and spread evenly to cover.
- Bake in the preheated oven until the top is golden brown and sauce is bubbling up around the edges, 25 to 30 minutes.

- Start by peeling your potatoes and dicing them into 2-inch cubes. Add to a pot or enameled dutch oven, and fill with water until potatoes are just covered. Over medium heat, bring to a boil for about 20 minutes. You may need to turn the heat down as the potatoes begin to cook to prevent the water from boiling over. I have my cover loosely on the dutch oven to allow some heat to escape and to watch the boiling of the potatoes. The potatoes are done when they are fork-tender and no longer crunchy. Drain the potatoes and place back into your cooking pot.
- While the potatoes are cooking, add your ground beef to a dutch oven and begin to brown over medium heat. This should take about 10 minutes. Add the Lipton French Onion Mix to the beef as it begins to cook as well as the minced garlic. Ladle out grease from the ground beef as needed.
- Once the beef is done cooking, add a layer of vegetables. For this recipe, I used 2 cans of drained sweet corn.
- To the drained potatoes add the butter, cream cheese, milk, salt, and pepper. Mashed or whip the potatoes until your desired consistency.
