DURANGO CHICKEN

I have been cooking this chicken dish for years and have yet to tire of it. It's always juicy and tender...and oh, SO easy to make! Perfect for ANY night of the week! It pairs well with just about any side dish (rice, potatoes, pasta, etc.) and your favorite vegetable (salads, broccoli, asparagus, squash, etc.). Enjoy!

Yield 4 Chicken Breasts

Number Of Ingredients 7

4 Chicken Breasts (Trimmed, rinsed and dried)
2 Lemons (Juice of 2 Lemons)
1/2 Cup Butter (Melted)
1 Tablespoon Paprika
1 Tablespoon Oregano
1 teaspoon Garlic Salt
1/4 teaspoon Ground Pepper

Steps:

  • Gather all ingredients.
  • Trim, rinse and dry chicken breasts. Place them in a large ziploc baggie and set aside while you prepare the marinade.
  • In a medium-sized bowl, combine the Melted Butter, Lemon Juice and Spices. Mix well.
  • Pour the marinade into the baggie with the chicken and seal well. Gently turn bag over several times to completely coat the chicken breasts with the marinade. Place the baggie in a large baking dish (the one you will be using to bake the chicken) and refrigerate for at least 2 hours (or overnight/the morning of, if you're making it ahead of time).
  • Preheat oven to 325 degrees.
  • While the oven is preheating, pull the marinated chicken out of the refrigerator and dump the entire contents into the large baking dish ~ Note: the butter in the marinade will have solidified...I just place these "chunks" of solidified butter onto the chicken breasts, so they will melt into the chicken while baking.
  • Bake for 40-45 minutes, uncovered.

12 chicken pieces (thighs and legs)
2 tablespoons cooking oil
2 garlic cloves, finely chopped
1 medium onion, chopped
1/2 lb ham, in thin strips
1 cup chorizo sausage, in slices
3 chopped tomatoes
2 tablespoons sugar
2 cups cooking sherry
2 cloves
1 cinnamon stick
1/4 teaspoon grated nutmeg
1/4 teaspoon black pepper
1/2 cup raisins
1/2 cup sliced almonds
2 tablespoons cooking oil

Steps:

  • Fry the chicken pieces in hot oil,until browned. Set them aside.
  • In the same oil sauté garlic and onion. Once they are shirred and translucent, add the ham and chorizo and simmer until chorizo is cooked.
  • Add tomato, sugar, cloves, cinnamon, nutmeg and pepper and cook until liquid reduces somewhat.
  • Add chicken, raisins and almonds.
  • Douse with the sherry, reduce burner heat and simmer until chicken is well cooked.

4 boneless skinless chicken breasts
1 1/2 cups plain breadcrumbs
1 teaspoon seasoning salt
1/4 teaspoon ground black pepper
1 cup milk
1/3 cup tartar sauce (either store bought or recipe of your choice)
4 pieces thinly sliced deli ham
4 slices swiss cheese
1/8 cup vegetable oil (for frying)

Steps:

  • Pound chicken breasts until they are 1/2" thick.
  • Mix spices with plain breadcrumbs; set aside.
  • Dust chicken with breadcrumbs, dip in milk, then dip chicken breast back in seasoned bread crumbs.
  • Heat oil in frying pan.
  • Place chicken in heated fry pan.
  • Fry breast on medium heat until golden brown.
  • Remove chicken breasts and place on heatproof serving tray.
  • Spread each breast with 1 1/2 Tablespoon of tartar sauce.
  • Place ham on chicken followed by a slice of Swiss cheese.
  • Place chicken in oven or microwave just long enough to heat and melt cheese.
  • Serve with you favorite salad or side vegetable.

Not for butter phobes! This is one of the best tasting and easiest dishes you'll ever make. I got the recipe from my friend Cindy but she doesn't know where she got it. I have yet to meet a person who doesn't love this. Serve with a big loaf of crusty bread and/or mashed pots.

2 lemons, juice of
1 teaspoon garlic salt
1 tablespoon paprika

  • Place chicken in a baking dish skin up.
  • Pour sauce over chicken and marinate for 3-4 hours.
