1/3 cup fresh lime juice (from 4 limes)
1 1/2 teaspoons finely grated peeled fresh ginger
1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1 pound mixed carrots, such as Nantes and purple
1 fennel bulb, trimmed and cored
1 watermelon radish (3 ounces) or regular radishes, peeled
1/2 rutabaga, peeled
1 bunch baby Tokyo or regular turnips, peeled if needed
1 jalapeno chile, halved, seeded, and thinly sliced
1/2 cup finely chopped fresh cilantro, plus more for garnish
5 fresh mint leaves, finely chopped, plus more for garnish
Coarse salt
3/4 cup prepared or picked fresh Dungeness crabmeat (from 1 to 2 Dungeness crabs, about 1 1/2 pounds each) or lump crabmeat

Steps:

  • Make the dressing: Whisk together lime juice and ginger in a small bowl. Gradually whisk in oil. Season with salt and pepper.
  • Make the salad: Slice or shave carrots, fennel, radish, rutabaga, and turnips, preferably on a mandoline, into very thin rounds over a large bowl; toss. Add vinaigrette, jalapeno, cilantro, and mint, and toss to combine. Season with salt. Gently fold in crab. Garnish with cilantro and mint.

Mexico is blessed with one of the largest coastlines in the world, touching two oceans and two seas. Consequently, it has a very rich and diverse seafood culture. One of the centers for great seafood eating, including crab, is the Atlantic port Veracruz. Seafood vendors populate the market, their counters painted in the hottest tropical colors and the marinated catch of the day displayed in huge sundae glasses. Order mariscos of just one type or mix and match-the vendors compete with one another to make bigger cocktails in their own special way. When shopping for fennel, look for ones with tops intact; they add extra freshness to a recipe and a more complete fennel taste. If you cannot find fennel with tops, garnish with one teaspoon chopped fresh tarragon. For extra splash at a more formal party, slices of black truffles (if you want to splurge) or a few drops of truffle oil add elegance.

8 ounces fresh Dungeness lump crabmeat (avoid frozen), picked over for shells
2 tablespoons lemon-infused olive oil (page 162)
1/2 cup diced fresh fennel (reserve the feathery tops for garnish)
1 Roma tomato (about 4 ounces), cut into 1/4-inch dice
1 large avocado, peeled, pitted, and cut into 1/4-inch dice
1 large serrano chile, chopped with seeds
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh cilantro leaves
Pinch of fine sea salt
12 (5 1/2-inch) soft yellow corn tortillas (page 13), for serving
Garnish: Chopped fennel tops or pickled jalapeño chile rings

Steps:

  • In a large bowl, mix together all of the ingredients except tortillas and garnish and chill in the refrigerator. Serve within 3 to 4 hours.
  • To serve, lay the tortillas side by side, open face and overlapping on a platter. Divide the filling equally between the tortillas and top with salsa and garnish. Grab, fold, and eat right away. Or build your own taco: lay a tortilla, open face, in one hand. Spoon on some filling, top with salsa and garnish, fold, and eat right away.

For salad
2 fennel bupounds (anise), stalks discarded
1 pound fresh Dungeness crabmeat, picked over
1/2 pound baby spinach leaves
For dressing
2 tablespoons Champagne vinegar
2 tablespoons fresh lime juice
1 large egg yolk
1/2 tablespoon mild honey
1/2 teaspoon white pepper
1/2 tablespoon grated lime zest
1/2 cup vegetable oil
1/2 teaspoon sesame oil (not Asian; optional)
Equipment: an adjustable-blade slicer

Steps:

  • Halve fennel lengthwise (or quarter if large) and discard core, then shave fennel lengthwise as thinly as possible using slicer. Soak sliced fennel in a bowl of ice and cold water until it is crisp, about 1 1/2 to 2 hours.
  • Blend all dressing ingredients, except oils, with 1/2 teaspoon salt in a blender at high speed until combined. With blender still on high, add oils in a slow stream thourough top hole, blending until emulsified. Season with salt and white pepper.
  • Drain fennel and pat dry, then toss with crabmeat and dressing. Divide spinach among 4 plates and top with crab salad.

CRAB CAKES CHIARELLO WITH SHAVED FENNEL SALAD

2 cups small diced white bread
2 cups prepared mayonnaise
4 egg yolks
4 tablespoons chopped parsley leaves
2 tablespoons minced chives
4 teaspoons Dijon mustard
Dash hot red pepper sauce
1 lemon, juiced
Gray salt
Freshly ground black pepper
2 pounds jumbo lump blue crabmeat
8 tablespoons butter (1 stick)
1 tablespoon crab boil seasoning (recommended: Old Bay)
4 bulbs fennel
2 teaspoons lemon juice
2 tablespoons extra-virgin olive oil

Steps:

  • In a large nonreactive mixing bowl combine the bread, mayonnaise, egg yolks, 2 tablespoons of the parsley, chive, mustard, hot red pepper sauce, lemon juice, salt and pepper. Let rest for about 15 minutes to soften the bread. With a spatula gently fold in the crabmeat so as not to break up the meat.
  • Preheat the oven to 425 degrees F.
  • Using your hands form the cakes about 6 ounces each. Do not form them too tightly or they will not bake properly.
  • Brush a baking tray with butter or spray with a nonstick cooking spray. Place the crab cakes, evenly spaced on the tray. Melt the butter and combine with the crab boil seasoning. Brush the tops of the cakes with half the spiced butter and bake on the top shelf of oven for about 12 minutes or until an internal temperature of 165 degrees F.
  • Using a mandolin slice the fennel very thin. Combine with the lemon juice, olive oil, remaining 2 tablespoons of parsley, salt, and pepper. Spread the fennel salad on a large platter and place the crab cakes on top. Serve with the second half of the spiced butter on the side for dipping.

For Salad:
1 lb. cooked Dungeness crabmeat
1 Granny Smith apple cut into small cubes (1/4" thick)
Lemon Dijon Tarragon Mayonnaise (recipe follows)
4 loose cups chiffonade baby greens
1 fennel bulb shaved paper thin with a knife or mandoline
For Mayonnaise:
2 egg yolks
2 heaping tablespoons smooth Dijon mustard
2 tablespoons fresh lemon juice
2 cups olive oil
chopped fresh tarragon
salt and ground white pepper

Steps:

  • To prepare mayonnaise: place egg yolks, dijon mustard, and 1 TBSP fresh lemon juice in a stand mixer. Beat until combined and slowly add 1 cup of olive oil drop by drop until mayonnaise is thick and emulsified. Add 1 more TBSP of lemon juice and 1 more cup of oil slowly. Stir in chopped tarragon, salt, and white pepper to taste. To prepare salad: combine crabmeat, apples, and mayonnaise to taste in a large bowl. Cover four small serving plates each with 1 cup of chiffonade greens. Place a pastry ring or a tuna can with top and bottom cut out in the center of each plate and spoon salad mixture into ring. Gently press to form cake shape and remove ring. Top each salad with a small handful of shaved fennel and serve. Note: For a different presentation lose the pastry ring and chiffonade and just mound the salad mixture on a small bed of mixed green. Fennel fronds and lemon slices make attractive garnishes.

Celery, Fennel, and Apples Salad With Dungeness Crab image

6 -8 ounces dungeness crabmeat
2 -3 stalks celery
1/2 small fennel bulb
2 tablespoons red onions, diced small
1/4 teaspoon thai yellow curry paste (see Note)
mild extra virgin olive oil
1 1/2 tablespoons prepared mayonnaise
5 -6 teaspoons meyer lemon juice
kosher salt
pepper, to taste
1 small firm sweet apple (like Braeburn, Jonagold or Fuji)
1 1/2 cups packed romaine lettuce, cut into chiffonade
1 lemon, zest of
2 -3 tablespoons tender mixed herbs (flat-leaf parsley, chive, chervil)
6 slices meyer lemons (half-moons)

Steps:

  • Pick through crab and remove any shell; if needed, rinse crab and squeeze dry. Refrigerate crab until ready to plate.
  • Lightly peel the outside of the celery stalks to remove stringy portion. Cut the celery into paper-thin slices (a mandoline is best for this). You should have 1 cup. Trim fronds from fennel bulb, cut bulb in half lengthwise and cut out most of the solid core, leaving enough in place near the root end to hold fennel together. Shave fennel very thinly, too, so it is almost feathery, enough to make about 1 cup.
  • Taste diced red onion; if very pungent, soak in cold water for about 15 minutes. Drain well, blot off excess moisture and combine with the celery and fennel. Cover with a damp towel and refrigerate until ready to use.
  • Warm curry paste and 1/2 teaspoon olive oil in a small nonstick skillet over medium-low heat until curry paste looks grainy and becomes aromatic, about 15 seconds. In a small bowl, combine curry mixture, mayonnaise, 4 teaspoons Meyer lemon juice and a couple grinds of pepper; season with salt to taste.
  • When ready to serve, cut apple into small dice and add to celery and fennel. Toss just enough curried dressing with the celery-fennel-apple salad to lightly coat.
  • Whisk remaining 1-2 teaspoons Meyer lemon juice with 1-2 teaspoons olive oil, season to taste with salt and pepper. When ready to serve, dress lettuce with just enough vinaigrette to lightly coat.
  • Divide ingredients among 6 standard-size martini glasses, layering the lettuce, celery-fennel-apple salad and crab. Garnish crab with sprinkle of lemon zest and a fluff of mixed herbs. Serve with a lemon half-moon.
