DULCE ARGENTINO (AKA REALLY YUMMY CARAMEL ROLL CAKE)
Passed on to me from my best friend's dad who is Cuban. An authentic dessert that's light but decadent.

Steps:
- Beat egg whites until fluffy.
- Add sugar, flour and egg yolks, beat 3-4 minutes.
- Add vanilla and mix.
- Pour batter onto greased cookie sheet.
- Bake in oven 7-10 minutes at 350°F.
- Remove from oven and turn out onto damp cheese cloth and roll up.
- Wait to cool, then unroll.
- Pour 1 can Carnation Sweetened Condensed Milk into double-boiler pan; cover.
- Place over boiling water, cook over water, stirring occasionally, for 60 to 75 minutes, or until thick and light caramel.
- Remove from heat, beat until smooth with dash of vermouth (make sure consistency is thick).
- Let caramel (dulce de leche) cool COMPLETELY, place in refrigerator to cool.
- Spread dulce de leche on unrolled cake, then roll again.

Steps:
- Preheat oven to 350°F.
- Grease a 15 ½" x 10 ½" jelly-roll pan and line with parchment paper.
- Beat egg whites in a large bowl until soft peaks form. Gradually beat in ¼ cup sugar and continue beating until stiff peaks form. In a separate bowl, beat egg yolks, vanilla and remaining 1/4 cup sugar. Continue beating until thick, about 6 minutes. Mix in flour just until blended. Gently fold egg yolk mixture into beaten egg whites. Spread the batter in the prepared pan. Bake for about 12 minutes or until cake top springs back when lightly touched.
- To remove cake from pan and cool, sift confectioner's sugar over a clean kitchen towel. Loosen the edges of the cake from the sides of the pan with a small knife. Inver cake onto the prepared towel and carefully peel off the parchment paper. Starting from one short edge, roll up the cke and the towel together, like a jelly roll. Cool completely on a wire rack. After cooling, unroll cake and spread with pastry cream, jams, lemon curd or whichever filling suits your fancy. Roll up from the short side, without the towel this time and transfer, seam side down, to a serving platter. Sprinkle with confectioner's sugar or frost.

STRAWBERRY ROLL CAKE
This is a light and tasty dessert that can be prepared, served and enjoyed any time during the year. It is also delicious when made with other seasonal fruits besides strawberries...such as blueberries, raspberries, blackberries, pineapple, kiwi, etc...and you can even add cocoa powder to make it a "chocolate" roll cake. A flavor for every mood! Enjoy!

Steps:
- Preheat oven to 375 degrees and line a rimmed cookie sheet with wax paper.
- In a small bowl, sift together the flour, baking powder and salt.
- In a separate larger bowl, beat eggs until thick.
- Gradually beat in sugar.
- Blend in water and vanilla.
- Gradually add sifted dry ingredients and beat just until smooth.
- Pour batter onto wax lined rimmed cookie sheet and spread evenly with spatula.
- Bake 12-15 minutes in oven at 375 degrees.
- While cake is hot and fresh from the oven, roll in a powdered sugar covered towel and place in refrigerator until cooled completely (about an hour).
- When cake is completely cooled, remove from refrigerator and unroll. Spread whipped topping on cake and sprinkle with chopped strawberries. Re-roll.
- Garnish with additional strawberries, whipped topping and/or powdered sugar! Enjoy!
- **For a chocolate cake, add ¼ cup cocoa at step 2.
