6 tablespoons unsalted butter
2 teaspoons granulated sugar
1/4 teaspoon kosher salt
1 cup all-purpose flour
4 large eggs plus 1 egg yolk
1 cup heavy cream
2 tablespoons confectioners' sugar
4 ounces semisweet chocolate, roughly chopped
3 bananas, sliced
2/3 cup dulce de leche, plus more for topping

Steps:

  • Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper. Fit a large pastry bag with a 1/2 -inch round tip.
  • Combine the butter, granulated sugar, salt and 1 cup water in a medium saucepan and bring to a boil. Remove from the heat; sift the flour into the saucepan and stir with a wooden spoon to make a paste. Return to medium heat and stir until the dough pulls away from the side of the pan and is slightly shiny, about 2 minutes. Transfer to a bowl and beat with a wooden spoon until slightly cooled, 2 to 3 minutes. Add the whole eggs, one at a time, beating until smooth before adding the next.
  • Transfer the dough to the pastry bag. Pipe 1-inch mounds of dough 1 inch apart on the prepared baking sheets. Smooth the tops with a damp fingertip. Beat the egg yolk with 1 tablespoon water; brush on the dough mounds. Bake 15 minutes, then reduce the oven temperature to 350 degrees F and continue baking until the puffs are golden brown and crisp, about 25 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, beat the heavy cream and the confectioners' sugar in a large bowl with a mixer until soft peaks form; refrigerate until ready to assemble. Place the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring, until melted.
  • Cut the puffs in half crosswise with a serrated knife; sandwich with the sliced bananas, dulce de leche and whipped cream. Drizzle the puffs with the melted chocolate and more dulce de leche.

This is a great dessert. You may substitute commercial caramel ice cream topping for the dulce de leche for a quicker preparation, but the homemade dulce de leche is worth the work and time.

1 (14 ounce) can sweetened condensed milk
1 cup graham cracker crumbs
½ cup butter, melted
4 bananas
1 ½ cups whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • To make dulce de leche, place the unopened can of sweetened condensed milk in a saucepan, and add enough water to cover half-way up the can. Place the saucepan over medium-high heat and bring to a boil. Cook for 3 hours, adding more water as necessary. Remove from heat and cool.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the graham cracker crumbs with the butter in a mixing bowl until evenly blended. Press the crumb mixture evenly into a 9 inch pie plate.
  • Bake pie crust in preheated oven until lightly browned, 10-15 minutes. Remove from oven, and cool on a wire rack.
  • Open the can of dulce de leche, and pour half, or about 3/4 cup, over the pie crust. Slice the bananas and arrange half in a layer over the dulce de leche filling. Pour the remaining dulce de leche over the bananas. Top with remaining banana slices.
  • Pour the whipping cream into a mixing bowl, and beat until soft peaks form. Add the sugar and vanilla extract; continue beating until stiff peaks form. Spoon the whipped cream over the bananas. Chill at least 1 hour before serving.

1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
1 ½ cups ripe banana
¼ cup butter, room temperature
¾ cup sugar
2 eggs
⅓ cup plain greek yogurt
3 tablespoons dulce de leche

Steps:

  • Preheat the oven to 350º F (175ºC).
  • Mix flour, baking soda, cinnamon, and salt in a bowl and mix well.
  • In a separate bowl, mash the bananas.
  • Add in butter and sugar, mix until smooth.
  • Add in eggs and yogurt, mix until well-combined.
  • Add the dry ingredients to the wet ingredients, mix until smooth.
  • Pour the batter into a buttered/oil-sprayed loaf pan.
  • Drop dulce de leche on top of the batter, then swirl gently into the batter with the tip of the spoon or fork.
  • Bake it for an hour and cool completely.
  • Slice and enjoy!

3 bananas
½ cup dulce de leche
2 cups flour
4 eggs, beaten
2 cups breadcrumb
oil, for frying
cinnamon sugar, for coating
ice cream, optional

Steps:

  • Cut the ends off the bananas, peel them, and slice them into thirds.
  • Using a vegetable peeler, hollow out the inside of each banana piece, making sure not to cut through the bottom.
  • Fill the banana pieces with dulce de leche.
  • Freeze for at least 2 hours.
  • Heat oil in a pot over high heat.
  • Place the flour, eggs, and breadcrumbs in separate bowls.
  • Roll the frozen bananas in the flour, then the eggs, then the breadcrumbs.
  • Fry the bananas until golden brown.
  • Roll the fried bananas in cinnamon sugar.
  • Serve with ice cream!

1 can (14 ounces) sweetened condensed milk
1-1/3 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold lard
3 to 4 tablespoons cold water
FILLING:
1/2 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
1 cup whole milk
1/3 cup half-and-half cream
3 large egg yolks
1/4 teaspoon vanilla extract
2 medium bananas, sliced
2 cups heavy whipping cream, whipped

Steps:

  • For dulce de leche, pour sweetened condensed milk into a 9-in. deep-dish pie plate; cover with foil. Place pie plate in a large shallow pan; add 1 in. of hot water to larger pan. Bake at 425° for 1-1/2 hours or until caramel-colored. Whisk dulce de leche to blend; transfer to a bowl. Cool for 1 hour; cover and refrigerate until chilled., In a small bowl, mix flour and salt; cut in lard until crumbly. Gradually add water, tossing with a fork, until dough holds together when pressed. Form dough into a disk; wrap in plastic. Refrigerate for 1 hour or until easy to handle., For filling, in a small heavy saucepan, combine the sugar, flour and salt. Whisk in milk and cream until smooth. Cook and stir over medium heat until thickened and bubbly; cook 2 minutes longer. Remove from the heat. In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. , Immediately transfer to a clean bowl; stir in vanilla. Cool for 30 minutes. Press waxed paper onto surface of filling; refrigerate until chilled., Roll out dough on a lightly floured surface to 1/8-in.-thick circle. Transfer to a 9-in. pie plate, trimming to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 12-15 minutes or until lightly browned. Remove foil and weights; bake 3-5 minutes longer or until crust is golden brown. Cool on a wire rack., To serve, spoon dulce de leche into crust. Layer with bananas and filling; top with whipped cream.

  • Place rack in the middle of the oven and preheat to 350 degrees Fahrenheit. Grease a 9”x5” nonstick loaf pan with butter.
  • In the bowl of a standing mixer, set with the paddle attachment, beat the butter at medium speed until light and fluffy, about 3 to 4 minutes. Add the brown sugar and granulated sugar and continue beating until smooth. Add the eggs and vanilla and continue beating for a couple minutes.

  • Remove a third of the batter and set aside in a separate bowl. Add the mashed bananas to the remaining batter in the mixer bowl and continue beating until the batter is fluffy and mixed. Pour the banana batter into the prepared pan.
