DUCK MOUSSE TOAST

2 crowns broccoli
4 cloves garlic, minced
1/2 shallot, minced
1 tablespoon red wine vinegar
Lemon juice
2 teaspoons olive oil
1 teaspoon salt
1/4 cup whole milk
Toast Points:
1 loaf white bread
Olive oil
Salt
1 1/2 cups duck mousse
1/4 cup heavy cream
2 tablespoons diced pimientos
1 tablespoon lemon juice
Salt and pepper
1/2 cup packed micro-parsley
2 cloves garlic, minced
Zest of 2 lemons
Juice of 1 lemon
Salt

Steps:

  • For the charred broccoli puree: Coarsely chop the broccoli and toss in a bowl with the garlic, shallot, vinegar, 1/2 tablespoon lemon juice, olive oil and salt.
  • Transfer the broccoli to a skillet and broil on high for 6 to 8 minutes, turning occasionally, until charred.
  • Add the broccoli to a food processor along with the milk, a few tablespoons lemon juice and salt and pepper. Process until smooth.
  • For the toast points: Cut the bread into thin slices. Drizzle lightly with olive oil and sprinkle with salt. Broil on high for 2 to 3 minutes per side. Halve the slices diagonally.
  • For the duck mousse: Stir together the duck mousse, cream, pimientos and lemon juice with a fork until smooth. Add salt and pepper to taste.
  • For the micro-parsley gremolata: Chop the micro-parsley very fine and add to a bowl with the garlic and lemon zest. Add lemon juice and salt to taste.
  • To serve: Plate 2 to 3 tablespoons of broccoli puree. Top with a toast point. Spoon 2 to 3 tablespoons of the mousse onto the toast. Finish with gremolata, salt and an olive oil drizzle.

1 large fattened duck or goose liver
1/2 c dry, imported sherry
1 pinch ground cloves
10 juniper berries crushed
2 shallots, minced
1 tsp sea salt
1/2 Tbsp ground white pepper
1/2 c heavy cream, whipped to hold soft peaks

Steps:

  • 1. Trim connective tissue and blood lines. Dice and place in zipper bag with sherry, cloves, and juniper berries. Let sit in fridge 24 hours.
  • 2. Remove juniper and discard. Drain foie gras. Discard sherry.
  • 3. Preheat large sauté pan to high. Sear foie gras 45 seconds and flip. Add shallots, salt, and pepper. Sear 30 seconds and flip. Repeat. Spill contents of pans on baking sheet. Cool 5 minutes.
  • 4. Pulse foie gras in food processor 20 seconds. Add whipped cream. Pulse. Scrape contents into bowl and refrigerate overnight, wrapping after 6 hours.
  • 5. Serve with toast or sliced baguette. Serves 6-8 as an hors d'oeuvre.

DUCK LIVER "TRUFFLES"

12 ounces good quality purchased duck liver mousse or fine textured pate
1 tablespoon Ruby port
1 teaspoon freshly ground black pepper
3 cups miniature croutons, recipe follows
3 cups bread (1 day old, preferably thin sliced white bread, with the crust removed)
3 tablespoons butter, melted
1 teaspoon dried thyme leaves
1/2 teaspoon salt

Steps:

  • Place mousse in a bowl and drizzle port over the mousse. Mash with a fork until the mixture is workable and the port is incorporated. Work in the black pepper. Do not overwork. Refrigerate for 1/2 hour or until firm.
  • Remove from refrigerator and divide evenly into 24 uniform "truffles." Using your hands, quickly roll the mousse into balls. When finished roll the truffles in the miniature croutons Transfer to a storage container and refrigerate until ready to serve.
  • Preheat oven to 325 degrees F.
  • Cut the bread into the tiniest possible cubes (1/16-inch or smaller). Place all ingredients in a bowl and toss. Transfer to a baking sheet and bake until uniformly golden. Cool and set aside to use as directed.

  • Cut the duck breasts into 1⁄2" cubes. Transfer duck, 1 finely chopped clove garlic, orange liqueur, 1 tbsp. of the olive oil, and 3 torn bay leaves to a small bowl; stir to coat the duck pieces.
  • Meanwhile, in the bowl of a food processor, finely chop the remaining garlic. Scrape the sides of the bowl with rubber spatula. Add chicken livers and pulse until puréed.
  • When you're ready to assemble the pâté, remove bay leaves from duck mixture; discard. Using a spoon, fold duck mixture and any juices from marinade into the forcemeat along with the pistachios and peppercorns; set aside in the refrigerator.
  • Meanwhile, line the bottom of a 1 1⁄2-qt. rectangular terrine mold with 4 evenly spaced thyme sprigs and 3 bay leaves. Place bacon crosswise along the bottom and up the sides of the mold, covering the herbs.
  • Spoon the meat–duck mixture into the terrine mold and gently smooth the top with the back of a spoon. Lay 4 strips bacon lengthwise across the top of the pâté.
  • Heat oven to 325°. Transfer terrine mold to a 9" x 13" baking dish. Transfer dish to middle rack of the oven. Pour in enough boiling water that it reaches 1⁄2" up the sides of the terrine.

  • Sweat the shallot in a pan over medium-low heat with 1 tablespoon of the butter. You want it soft, but not browned. Add the livers and cook, stirring often, just until browned on the outside, maybe 3 minutes.
  • Sprinkle salt and the flour over everything and toss to combine. It'll get a bit gunky, but that's OK. Cook this gently over medium-low heat for about 3 to 4 minutes, just to cook out the raw flour taste. Add the brandy or Marsala and use a wooden spoon to scrape up any browned bits.
  • Move all this into a blender, along with the white pepper. Let this cool for a minute or three, then pour in the heavy cream and start to puree the pate. Once it's going, drop the rest of the stick of butter in one tablespoon at a time, waiting for it to incorporate before adding the next one.
  • Pack the pate into jars or ramekins immediately, while the pate is still hot. You will want to chill it thoroughly before serving.
