SPICY SHRIMP AND RED BEAN SOUP
Shrimp, red beans (or kidney), tomatoes with chiles, and cream of mushroom soup make this soup an easy-to-make crowd pleaser that looks and tastes like soup from a fine restaurant. Serve with Garlic Toast to make it a complete meal. I created this completely by accident and it turned out great!

Steps:
- Quick-soak beans by putting them in cold water to cover by 2 inches in a large pot. Bring to a boil, then boil 1 minute. Remove from heat and cover, then soak 1 hour. Drain, discarding liquid.
- Remove skin and bones from duck legs, reserving both, then coarsely shred meat.
- Heat oil in a large heavy pot over medium heat until it shimmers, then cook reserved bones, onions, carrots, celery, garlic, bay leaves, thyme, and cloves, stirring occasionally, until vegetables are softened, about 8 minutes.
- Add drained beans, broth, water, and tomatoes and simmer, partially covered, stirring and skimming froth occasionally, until beans are tender, about 50 minutes.
- Meanwhile, thinly slice reserved skin, then lightly season with salt and pepper. Cook in a dry medium nonstick skillet over low heat, stirring to separate, until fat is rendered and skin is crisp, 6 to 8 minutes.
- Discard bay leaves, bones, and thyme from soup. Transfer 2 cups solids and 1 cup liquid from soup to a blender and blend until smooth (use caution when blending hot liquids), then return to soup. Stir in 2 teaspoons salt and 1/2 teaspoon pepper and keep warm, covered.
- Heat Armagnac in a small saucepan over low heat just until warm, then carefully ignite with a kitchen match (use caution; flames will shoot up). When flames subside, stir Armagnac into soup along with meat, parsley, and salt and pepper to taste. Serve sprinkled with crisp skin.

Steps:
- Cut leeks in half lengthwise, then into 1/4-inch-thick slices. Place in small bowl, and cover with cold water. Let stand for 5 minutes to rid the leeks of dirt and sand. Lift out of the water, and drain.
- In a small stockpot, heat the olive oil and butter over medium-low heat. To the stockpot, add the garlic, leeks, 1/2 teaspoon salt, and 1/8 teaspoon pepper, and saute until the leeks are translucent, about 10 minutes. Add the chicken stock and potatoes, raise the heat to high, and bring to a boil. Reduce the heat to medium, and simmer until the potatoes are fork tender, 12 to 15 minutes. Remove from the heat, transfer soup to a food processor, and puree.
- Meanwhile, place the shrimp on a clean work surface and, using a sharp knife, slice each in half lengthwise down the middle of the back, leaving tail on. Remove and discard veins; set shrimp aside.
- Transfer the soup back to the stockpot and place over medium heat. Add the skim milk and beans, and bring to a simmer. Raise heat to medium high, add the shrimp, and cook until shrimp are just opaque, about 2 minutes.
- Divide the soup among six bowls. Garnish each of the bowls with the diced red peppers and snipped chives, and serve immediately.

Steps:
- In a soup pot, melt the butter over medium heat until melted and frothy. Add the shrimp shells and mash them with a spoon for 2-3 minutes until fragrant. Season with salt, pepper, and crushed red pepper. Pour in the water. Once the water begins to barely boil, reduce heat and simmer, uncovered, for 25 to 30 minutes. Strain through a fine mesh sieve into a bowl and discard the shrimp shells. Carefully wipe out the soup pot and return to the stove.
- Cover the tomatoes with water in a medium pot. Bring to a boil. Once the skins begin to split, transfer them to an ice bath. Once the tomatoes are cool enough to handle, peel and discard the skins. Transfer to a bowl and crush them with your hands.
- Heat the neutral cooking oil in the soup pot over medium heat until hot. Add the shallot and cook for 2-3 minutes until beginning to turn golden brown and soften. Add the garlic and cook for 45 seconds until fragrant. Add the tomatoes, beans, and reserved shrimp stock (you might need to discard like half a cup, of the stock depending on how full the pot is). Bring to a low boil and season with the paprika, smoked paprika, the Amarillo paste, and more crushed red pepper if you want it a bit spicier. Taste and add a bit more salt and pepper, if needed. Cook over a low boil 10-15 minutes to allow the flavors to meld.
- During the last 10 minutes of the broth cooking, prep the shrimp. Take out half of the peeled shrimp and cut them into thirds.
- Add all the shrimp to the pot along with the cream and parsley. Cook for 5-7 minutes or until the shrimp are opaque but not overcooked.
- Ladle the shrimp soup into bowls and garnish with a drizzle of extra virgin olive oil and more finely chopped parsley, if desired. Enjoy!

LEMONY SHRIMP AND BEAN STEW
With minimal prep and a quick cook time, this shrimp stew feels elegant for such an easy weeknight meal. You can also take the dish in a number of directions: Substitute the shrimp with an equal amount of flaky white fish or even seared scallops, or stretch the dish into a meal for six by stirring in some butter and serving over cooked spaghetti or rigatoni. A good glug of your best olive oil would also be a welcome.

SMOKED SAUSAGE, DUCK AND WHITE BEAN SOUP
Steps:
- In a large saucepan, over medium heat, add the olive oil. Season the duck pieces with salt and pepper. When the oil is hot, sear the duck, fat side down for about 4 to 6 minutes. Turn over the duck and continue to sear for 4 minutes. Remove the duck from the pan and set aside. Add the onions and celery to the pan. Season the vegetables with salt and cayenne. Saute the vegetables until wilted, about 4 minutes. Add the sausage and continue to saute for 4 minutes. Stir in the beans, bay leaves, and garlic. Add the duck stock, water and fresh thyme. Place the duck pieces back into the pan. Bring the liquid to a boil and skim off any cloudy scum that has risen to the service. Reduce the heat to a simmer and cook, uncovered for 3 hours, stirring occasionally or until the meat and beans are tender. Re-season if necessary and stir in the green onions and parsley.
- Break and crack the carcass. In a large stockpot, heat the vegetable oil. Season the bones with salt and pepper. Add the bones to the pot and brown for about 10 minutes, stirring often. Add the onions, carrots, celery, garlic, and bay leaves. Season the mixture with salt. Cook until the vegetables are soft, about 5 minutes, stirring often. Add the wine and tomato paste and stir to mix. Cook for 5 minutes, stirring occasionally. Add the water. Put the thyme, parsley sprigs, and peppercorns in a piece of cheesecloth, tie it together with kitchen twine, and add it to the mixture. Bring the mixture to a boil. Skim off any cloudy scum that rises to the surface. Reduce the heat to medium and simmer, uncovered, for 3 hours. Strain through a fine-mesh strainer and cool. Refrigerate overnight and remove any congealed fat from the surface. The stock can be stored in the freezer for 1 month.
