DUCK AND YELLOW RICE
This impressive dinner-party dish from Laos will wow your guests; they won't believe how easy it is! Serve a green salad on the side for a unique and flavorful family meal instead. Chicken substitutes well for the duck.

- In a large bowl, soak rice in cold water while preparing the rest of the recipe.
- In a small bowl, using the back of a spoon, smash into a paste, the garlic, pepper, salt, curry, and turmeric. Drizzle in the soy sauce as you continue to smash. Set spice aside.
- Cut the duck into a dozen pieces, removing the fat and thick skin.
- Drain soaking rice, and set aside. Heat 2 tablespoons vegetable in a wide pot over medium-high heat, stir in the spice paste, and cook for 30 seconds. Stir in duck pieces; cook about 10 minutes, stirring frequently until lightly browned. Pour in 2 cups water, bring to a boil, and simmer 10 minutes. Pour in remaining water and vegetable oil; return contents to boil. Add rice to pot. Water should cover the rice by 1/2 inch. Return to a boil and cook, covered tightly, 15 to 20 minutes, until rice is tender.
- Remove pot from heat. Let stand, covered, 5 to 10 minutes. Turn out onto serving platter, and garnish with green onions.
- SUBSTITUTION:.
- If using chicken, cut 2 pounds of meat into 1-inch chunks. The above spices even work with beef, just about 2 tablespoons of minced ginger to the paste.

HEARTY DUCK AND WILD RICE SOUP

- Cut the duck into serving pieces. Crack the backbone in half lengthwise. Cut away and discard any peripheral fat from the duck pieces. Sprinkle the pieces with salt and pepper.
- Heat a heavy kettle and add the duck pieces skin side down. Add as many pieces in one layer as the kettle will hold. Cook these pieces until they are nicely browned, about four or five minutes. Continue until all the pieces are browned. As the pieces are cooked, strain off and discard the fat.
- Return all the pieces to the kettle and add the onion, coarsely chopped carrot and garlic and cook three minutes, stirring constantly.
- Add the broth and bring to the boil. Simmer about one hour or until the liquid is reduced to about six cups. Skim off any scum and fat from the top as it accumulates.
- Remove and reserve the meaty duck pieces, such as legs, breast, thighs and so on. Discard the bony parts, such as the backbone.
- Strain the six cups of duck soup into a saucepan and bring to the simmer.
- Remove the meat from the reserved duck pieces and cut it into small dice. There should be about two cups of meat.
- Cut the mushrooms into small squares. There should be about two cups.
- Put the mushrooms, diced meat, wild rice, leeks and carrots into a kettle and pour the hot soup over them. Let simmer about two minutes. Serve piping hot.
DUCK FRIED RICE
Many of the earthy beers, those that are intensely flavored but not tilting to sweetness, would be happy matches for this fried rice dish, to serve alongside grilled meat or poultry, or even spiced fish blackened in a skillet or under the broiler. The texture of the rice will be best if it is cooked in advance and given a chance to cool thoroughly before reheating it with the other ingredients.

- Place rice in a saucepan and add 3 1/4 cups cold water. Bring to a boil. Reduce heat to very low, cover tightly and continue cooking 12 to 15 minutes, until water has evaporated and surface of rice is pitted with little holes. Remove from heat and set aside, covered and undisturbed, 15 minutes more. Transfer rice to a bowl, fluff with chopsticks, refrigerate at least 30 minutes.
- Shred duck meat, mix with soy sauce, add pepper to taste and set aside.
- When rice has cooled, heat 1 tablespoon oil in a large wok or skillet. Add bacon and fry just until golden, not browned. Remove. Add onion and sauté on medium until golden. Stir in garam masala. Add remaining oil, stir in eggs and quickly scramble them. Fold in duck meat with soy sauce, cooked bacon and rice. Cook on medium heat until rice is heated through and ingredients are well blended. Season with salt.
- Fold in half the scallions, transfer rice to a serving dish and scatter remaining scallions on top. Serve.

- Preheat your oven to 450 degrees. While you’re waiting, bring a cast iron skillet or oven-safe pan to medium-high heat on the stove top. Add two small squares of duck fat or a teaspoon of oil to the pan. Add the duck breast cubes and lightly sear the meat.
- Stir in the butter and mushrooms. Season with the salt, garlic powder, and black pepper. Cook for 3 minutes or until the mushrooms absorb the oil. Mix in the wild rice and sprinkle in the flour.
- Allow the ingredients to brown for a couple minutes with the flour. Then whisk in the stock and heavy whipping cream and allow to simmer for 5 to 10 minutes as the sauce thickens.
- Once the sauce thickens, remove the pan from heat and sprinkle the cheese on top, followed by the Panko and fresh thyme leaves. Place in the oven and allow the cheese and Panko to brown for approximately 10 minutes. Remove and serve.

- Get a wok or large frying pan very hot over a strong burner. Add the duck fat or peanut oil, and the moment it begins to smoke, add the garlic, chiles and the white part of the scallions. Stir fry about 30 seconds.
- Add the duck meat, rice, carrots and peas and stir fry 2 minutes. Push everything to one side of the wok and pour in the beaten egg. Swirl it with a chopstick or somesuch until it sets, then stir fry it into the rest of the rice. This helps keep it in largish, recognizable pieces.
- Let the stir fry sit for 1 minute without touching it. You want to develop some browning and crispiness on the bottom. After the minute has elapsed, pour the soy sauce in around the edges of the rice, then mix well. Turn off the heat and drizzle the sesame oil over it.
