DRUNKEN GOAT CHEESE CRAB DIP

- Preheat the oven to 350 degrees F.
- Melt the butter over medium-high heat in a large skillet. Once foaming, add the shallots and cook until softened, 3 to 4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the half-and-half and bring to a simmer. Whisk in the cream cheese in increments. Once incorporated and smooth, add all but 1/4 cup of the goat cheese in handfuls and whisk until melted. Remove from the heat and stir in the crabmeat and 2 tablespoons of the chopped parsley. Pour into a 1 1/2-quart casserole dish.
- Mix together the panko, remaining 1/4 cup grated cheese, remaining 2 tablespoons parsley and the paprika in a small bowl. Sprinkle the top of the dip with the mixture. Bake until bubbly and hot, 20 minutes. Serve with whole wheat pita chips.

Steps:
- Combine wine, brown sugar, orange, and cinnamon stick in saucepan; bring to a boil.
- Reduce heat to medium low, and simmer 20 to 25 minutes, or until liquid has reduced to about 3/4 cup.
- Strain sauce into small bowl, discard orange slices and cinnamon, and return to pan.
- Whisk in pectin, and simmer 1 minute, or until thickened. Cool.
- Place cheese on plate. Pour sauce over top, sprinkle with pistachios, and serve with crackers or slices of French bread.

Steps:
- Heat a 12-inch cast iron skillet over medium heat.
- Spread each bread slice with Roasted Shallot Mayo. Add layers of grated goat cheese, a small handful arugula, and finish with more grated cheese, then top with bread. Repeat for the second sandwich.
- Add the sandwiches to the hot skillet and cook until golden brown and crisp and the cheese is melted, 4 to 5 minutes per side. Cut the sandwich in 1/2 before serving.
- Preheat the oven to 350 degrees F.
- Place the shallot and garlic on a square of aluminum foil. Drizzle lightly with olive oil and sprinkle with salt and pepper. Fold up and seal the foil. Place in the oven and roast for 1 hour. Remove and let cool.
- Add the shallot and garlic to a bowl. Add the mayonnaise and mix together until smooth.
